Roasted Tilapia, Potatoes, and Lemons- Real Simple #1

There are 3.5 hours of flying between the cities of Baltimore, Maryland and Denver, Colorado. During that time yesterday, I read 2 magazines cover to cover, had lunch, a snack, and tormented those around me with my never ending fidgeting. One of the magazines I read was Real Simple. I love love love this magazine. One of the articles is about planning meals for 4 weeks and gives you the recipes, pictures, and shopping lists for each week. Kev and I decided on 3 meals from week 1 that we would like to try and amended the shopping list for our 3 choices.
Night #1- Roasted Tilapia, Potatoes, and Lemons (Taken right from the magazine)
Ingredients:
- 1 lb baby potatoes
- 1 lemon thinly sliced
- 8 sprigs of fresh thyme
- Olive oil
- Salt and Pepper
- 1/2 cup pitted kalamata olives (I forgot to put these in!!!)
- 2 6 oz skinless tilapia fillets
- 1/2 tsp paprika
Directions:
- Heat oven to 400° F. On a large rimmed baking sheet, toss the potatoes, lemon, thyme, 2 tablespoons of the oil, and ¼ teaspoon each salt and pepper; arrange in a single layer. Roast, tossing once, until the potatoes begin to soften, about 20 minutes.
- Toss the olives with the potato mixture; nestle the fish in the potato mixture. Drizzle the fish with the remaining teaspoon of olive oil and season with the paprika and ¼ teaspoon each salt and pepper. Continue to roast until the potatoes are golden brown and crisp and the fish is opaque throughout, 12 to 15 minutes more.

Curried chicken salad! I bought Kev a small bottle of curry powder for his house so he (I) could make curried chicken salad with our leftovers! YUM! The spiciness from the curry went extremely well with the sweetness of the grapes.
I finally made tabouleh without any help! I used Bob’s Red Mill quick cooking cracked bulgar wheat. It’s a super easy grain to cook. It can either be soaked or cooked quickly for 15-20 min. To the bulgar, I added the juice from one lemon, fresh parsley that I grew!!!, a few tomatoes, 1/3 of a red onion, half an English cucumber, and a small amount of olive oil. The recipe called for mint, but I left that out.
To go along with this AMAZING grain, we had tilapia. Kev took me through a legs weight lifting workout at the gym earlier in the day and this was the perfect dinner to have after.
Saturday, we hit the farmer’s market for a few things- onions, fresh tortilla chips, cilantro that was picked one hour prior, and cherries. We were grilling and planned to make fresh salsa to go with our fresh tortillas.
Saturday’s Menu:
- Chicken Basil Sausage, Sweet Chicken Sausage, Hot Italian Sausage
- Baby Back BBQ Ribs (grilled for several hours on low and basted every 20 min by Kev)
- Corn on the Cob
- Fresh Salsa (tomatoes, onion, cilantro, lime, olive oil, salt and pepper)
- Watermelon and Cantaloupe
- Cherries
The rest of the day was spent playing yard games (CAPS, two types of horseshoes, and Baggo).
Who doesn’t love waking up to French Toast?!!?
Sunday’s Agenda: MORE GAMES
Sunday’s Menu:
- Turkey Burgers (ground turkey, egg, bread crumbs, Worcestershire sauce, hot sauce, garlic, onion)
- Beef Burgers (ground beef, ketchup, Worcestershire sauce, hot sauce, onion)
- Hot Dogs (not quite sure…)
- Pasta Salad (made by someone else)
- Strawberries and Blueberries for Angel Food Cake!
I had off yesterday for the 4th of July holiday. We had tons of leftovers and then went off roading! As soon as I get the pics from Kev, they will be shared. Preview- dirt roads, huge rocks, and massive puddles of mud!!) I’m out of town again for work and will be back tomorrow night! Hopefully we will be having taco salads, sharing off roading pics, and bottling our beer!!
Angel Wings!

Here is my beautiful geode! It has angel wings!
Dinner last night was: coconut crusted tilapia; salad with ‘ants’ (blackberries), almonds, and feta cheese; wild rice; and corn on the cob. This was at Kevin’s house so there was the vegetable, the starch, and the meat. Always a ‘complete’ meal.
Lunch was a soup, nectarine, grapefruit, and a kiwi. Add a bowl of granola with milk for breakfast to my lunch and a mini coconut cream Lara Bar. Those things are sooo high in calories for such a tiny bar! 12o cals for a bar about 1.5 inches. It was good though…prob my favorite flavor so far. Oh, and there was a Breggo tasting at Curious, so we stopped by and I grabbed one of those as well. UGH, once again, no self control.
Din Din tonight: roasted yams; salad with hearts of palm, roasted red peppers, olives, avocado, and tomato; and pasta with vodka sauce. Oh, and I pigged out on cheese and crackers before… The cheddar is soooo good, I couldn’t help myself!
I was only able to digest for an hour or two before soccer and having such a huge meal was not the best of ideas. I ran my butt off and it HURT!!! A good workout though!

Something Fishy

We stopped at the Fort Collins Brewery (FCB) after work today! I decided to bring back a few things to celebrate Kevin finishing a midterm today. While at FCB, I sampled a few GREAT brews. My favorites were the Retro Red and the MaiBock. In honor of stout month at Southern Sun and Mountain Sun, I picked up a DOUBLE CHOCOLATE STOUT! You can never go wrong with chocolate!
Spin Class #2 was AMAZING today! Today, my bike stats thingy (technical term here) worked on this bike and it let me knows my RPMs, MPH, and Watts. We focused on watts- measured how hard we worked on a scale of 1-4 based on watts. My legs are already feeling a little stiff from the 3-10 minute level 3 spurts. 10 minutes doesn’t sound like a very long time, but man, when the resistance is cranked up, every second feels like an eternity! To relax after, I hit up the eucalyptus steam room again. Warms you to the core.
Agenda for the night: Dinner and Olympics!
Dinner menu: broiled tilapia, rice, and Shepherds salad
Shepherds Salad is chopped tomato, cucumber, red onion, and feta cheese. We added balsamic vinegar and oil to dress it up a bit.

Grammy Family Dinner

Dinner tonight, take 3! My housemates and I decided to have dinner, family style tonight. The process taught us several things. 1st lesson- never leave salmon on the counter unattended with a hungry puppy! This was attempt number one for dinner. 2nd lesson- never microwave meat to defrost. Enough said.
Attempt number three was a success! Baked tilapia with lemon pepper, angel hair pasta with sautéed garlic, fresh red chilies, and Parmesan, and a salad w/ homemade balsamic dressing.
