Crazy Times

Ok, so the flood has finally stopped! A few days ago I was so excited to have rain to fall asleep to. I’ve changed my mind.
After hours of sweeping out water, trying to dry things out (fans going nonstop for 30 hours- not looking forward to the energy bill next month), and cleaning up, I am exhausted!
Here’s a peak into the disaster area:
As soon as the water started to go down in the sump pump, I headed out on a hike! We stopped at Rush and grabbed a acai smoothie and another bowl. SO GOOD! The bowls are the equivalent of a meal. The thick smoothies are topped with hemp granola and a bit of honey. The only thing in the smoothies are fruit juices and fruit. You can buy some with other things like soy or dairy, but I wanted one with mostly fruit. I love that everything they use is all natural or organic. I was absolutely starved and these hit the spot and gave me enough energy to hike up Mt. Sanitas.

Today I had an outdoor soccer game at 11 (went on an empty stomach). By the time I got home, I was so hungry, anything would have tasted amazing. I decided on a pizza! A week or so ago I bought an herb crust from the store and it def needed to be used.
Step 1- Add pizza sauce to the crust (I just used a marinara sauce I had on hand)
Step 2- layer on chopped spinach (this is from the local farmer’s market and is the best spinach ever!)
Step 3- Add slices of fresh mozzarella and thinly sliced yellow bell peppers
Step 4- Top with a sprinkling of garlic and Italian herbs (oregano and basil type herbs)
Step 5- Bake at 425 for about 10 min until ooey and gooey
Step 6- Pray that this stays down in soccer game #2 that starts at 3! :)
I had this with a cup of tea that my dad sent me in a care package a few months ago.
CHECK OUT THE PLANTS! THEY ARE GETTING SOOO BIG!
The only ones that haven’t grown yet are the peppers. Maybe those are harder to grow or take longer to start coming up. Ah well. I love that these are getting bigger every day! It’s fun to come home and check in on them.
Ok, time to get ready for the second game! Thankfully this one is indoor and is only 45 min total.
Crazy Weather!

Wow! Today turned from sunshine to rain to snow! It’s absolutely amazing how quickly the weather changes here in Colorado–very different from the east coast.
Good news! I made it another day without coffee. I had ginger peach green tea right after breakfast and didn’t turn back! To be honest, I did day dream about coffee or a cafe au lait….old habits die hard.
To help with my congestion, I sat in my gym’s eucalyptus steam room for a bit. It feels soooo nice! It warms you completely and the eucalyptus really helped. I can’t say enough good things about this room!
The man pie and potatoes are on their last leg and i I really needed to finish them off. To balance the heavy food, I made a quick salad with the rest of the spinach. I cut up 1 carrot, 1/3 cup sugar snap peas (I love these because they are sooo sweet and crunchy! Lots of vitamin C, vitamin A, iron, and fiber…mmmm), feta cheese, and an inch or two of cucumber. It was topped with black pepper, balsamic and olive oil.
I’m pretty much snowed in right now. Time to get cozy.
Pink Bubbles

After a brief bit of sunshine yesterday, the weather had turned cold and snowy/rainy. So, when I woke up this morning, we had a fine dusting of snow! To warm up, I made my usual bowl of oatmeal. (I had planned to use my almond butter finally, but someone forgot to put it in the refrigerator after opening it! I had to throw the jar away because I’m not sure when it was opened.
Regardless, it was still delicious.
My oatmeal this morning was:
- 1/3 cup regular oats
- 2/3 cup water
- 1/3 chopped apple
- 1 Tsp brown sugar
- A few Sprinkles of Savory’s Saigon Cinnamon
- 1 tsp Bob’s Red Mill Golden Flax
- 1.5 tsp Justin’s Peanut Butter
In the cup:
- Celestial Seasoning’s Honey Lemon Ginseng Green Tea
As soon as I got to the office, we made a big pot of fresh coffee. Here is my cup next to my cup of Immuni-C. I have a tickle in my throat and thought this might help. Check out those CRAZY BUBBLES!!! My mom always told me, “drink extra fluids” when I didn’t feel well. So…I had these two cups and then a bottle of water on top. The little guy’s name is Ralphie, but I call him CP. He’s a member of CU and Kev gave him to me when he started school. He sits in front of my monitor to keep me company.
Thankfully I had packed my lunch last night, again, there was barely enough time this morning to get everything done! This whole “spring forward” thing has throw me off! Ha! I had leftover pasta bake on top of the spinach, 1 sliced red bell pepper, yogurt (blueberries added at the office), and balsamic almonds! These babies came from Target and are SO good!
The sun finally came out this afternoon and my coworker and I decided to get some sunshine and walk to DazBog. I got a medium ‘English Breakfast’ tea and added a bit of honey. Totally hit the spot and helped my throat.

After my morning sorted itself out, I had my first outdoor game of the season. This was interesting because it combined my indoor team with my outdoor team. We were destroyed in the game. I’m not even going to write what the score was.
My indoor game was awesome. We won the game which means we came in 1st place for the session! Team Champions! Woooo!
This is the very last bit of my leftover soup which has turned very thick and a good 1/2 cup of the spinach from last night. This was so good! Next time I make the soup, I’m def adding spinach into the soup. Oh and it was sprinkled with parmesan cheese.
Off to Breckenridge!

Woooooooooooo!!!!!!!! I’m just about all packed up for a weekend in Breckenridge. We are staying in a huge house with a bunch of people for the whole weekend and wont’ be back till Monday! Skiing all day Saturday and Sunday. Maybe even a 1/2 day on Monday. Guess who has off work on Monday?!
I’ve packed up some snacks for us just in case. Kevin is in charge of the fruit.
This is seriously peanut and oat overload. Peanuts, peanut butter granola bars, and granola.
I made up a leftovers dinner…tried to use up the rest of the veggies in the fridge so they don’t go to waste.
In the pot:
- 1 red bell pepper
- 1/4 onion
- Leftover zucchini/onions
- 1 bunch spinach
- 2/3 box whole wheat pasta
To season:
- crushed red pepper
- oregano
- basil
- tons of garlic
- salt and pepper
- Parmesan cheese
- Olive Oil
Dinner was solo. I’m taking Kev a container of pasta for after his soccer game and then we are off to Breckenridge. I don’t think we’ll have internet access so the next time I post may be Monday!

Eucalyptus & Lemon

OH man, the spin class was great! What a nice change from my usual workouts. It will probably take me a few times to figure out where my RPMs, Watts, and MPH should be. The class was about 50 minutes of spinning and 10 minutes of stretching which is about my limit until I get some good biking shorts. After class I hit up the eucalyptus steam room which is fabulous! It felt so nice and refreshing.
The spin class definitely worked up a massive appetite. I was starved by the time I got home. Thankfully this dinner cooks quickly.
Menu: Lemon Pepper Salmon, Quionoa, and Wilted Spinach
The ingredients:
Quinoa is a fantastic ‘grain’ to cook with. It is soft on the inside and has a crunch from the shell of the seed. When it cooks, it almost turns inside out like popcorn does. The fantastic thing about quinoa is that is is a perfect protein source, contains all essential amino acids. Here is a close up of this super ‘grain’!
This stuff only takes about 15-20 minutes to cook too (one part quinoa: two parts liquid). Tonight the quinoa was cooked in chicken broth and a little water. Lemon juice, parsley, and cayenne pepper were added at the end to spice it up a bit.
The spinach was wilted in a huge pan with salt, pepper, garlic, and lemon juice. The salmon, yup, more lemon. Lemon juice and lemon pepper seasoning. Baked and then broiled to deliciousness.
Thinking back, this is a very protein heavy dinner! Another vegetable would have been nice to have. I ate this whole plate! Plus girl scout cookies…so hard to resist, especially when someone says there is a new flavor to try!

What a delicious way to start my day. It doesn’t get much better than waking up to a hot bowl of oats and a cup of coffee.
The mix for this was:
*1/3 cup oats
*2/3 cup water
*1/2 chopped apple
*cinnamon
*1 tsp peanut butter
Ok, I went to the grocery store AGAIN this morning. This was my third grocery store visit in the past week or so. I neeeed to stop going so often, but I just can’t help myself. Sprouts just opened a few months ago and Kevin needed to stop by for some ingredients for tonight’s dinner. So, I HAD to go. Here are the good finds from Sprouts:
Two heads of spinach, bosc pears, an avocado, a tomato, an onion, eggies, Chobani 0% Greek style yogurt, and two Bob’s Red Mill products (golden flax seeds and vegi soup mix). Not pictured–salmon and jalapeno cheddar.
Off to play soccer!

After Amante’s cafe au lait, Kevin and I went for some shop therapy. Our first stop was Savory Spice Shop where one of the staff was gracious enough to point us in the direction of BBQ rubs. We tasted our way through the shop and finally settled on our favorite (turned out it was the first one that we tried) Roman Pepper Steak Seasoning. The next stop was to Fresh produce where I found my new lunch bag. A reusable lunch bag purchase was long overdue. Our final shopping point was to the 29th Street Mall where I picked up some new dish ware from Anthropologie. Dish ware pics soon to come!
3 Course Dinner
~ Hot Crab Dip
~New York Strip Steak w/ Garlic Mashed Potatoes and Sauteed Spinach
~Chocolate Pie
Cooked perfectly to medium by Kevin. MMMMMMMmmmmm! Yes, those are the juices flowing from our steaks!
To make this small side of spinach, we used a WHOLE box of fresh baby spinach. It always amazes me how much spinach will wilt down when cooked.
My roomies made fettuccine with buffalo/beef meat balls! I had to try one. This was my first buffalo experience and I was def. a little hesitant at first. They turned out to be quite tasty!
After the movie, Cloudy with a Chance of Meatballs, we hope to have enough room for Chocolate Pie!
