Halvsies for two meals

Sometimes life gets so hectic that there’s only time to eat half of your meals! Wednesday was like that for me. I ended up grabbing both breakfast and lunch out from the same local cafe next to my office. I had half a breakfast burrito that was stuffed with roasted potatoes, eggs, and chilis. Lunch was a veggie sandwich that is in the picture above. Half the Sammy was consumed Wed. and the other half on Thursday.

Thursday I had more time to enjoy lunch. The first half was actually eaten while I was running around the office trying to get things done! With the extra time I finally got to dig into the greens which had a wonderful fresh and bright basil vinaigrette on it.

Calzone for dinner!!! Mine was stuffed with a ton of spinach, onions, and fresh mozzarella! I ate the whole thing so no leftovers here for a second meal!

One of the most delicious dinners! The crust was pizza dough that was not the beat for me but I like to think the pound of baby spinach inside helps up the nutrient content. :)

Weekend Dinners

I made a pit stop at Whole Foods to get some chicken soup! It blows my mind to think about how busy a WF can be on a FRIDAY night! The whole store was buzzing as if there was a huge party there later. Weird.

The soup was super thick so I had to water it down with a bit of broth. There was a ton of chicken in the soup and I ate everything but  a bit of the chicken. Yum.

Saturday, I attempted a half day of skiing but ended up only making it a few hours before almost falling asleep on the lifts. Oh well, I tried. We left really early Sunday morning to head home. Kev made the next two dinners. Tacos and steak!

These were stuffed with seasoned beef, avocado, lettuce, tomato, tomato sauce, and cheddar cheese! I had two. :)

I got flowers!!! Thanks Kev! Definitely brightened up my day. This was the WRONG day to forget a scarf and gloves. My car was covered in ice this morning and it was snowing! AND I got to come home to have this for dinner! Spinach- one of my fave veggies. This was made with lots and lots of garlic and golden raisins. So so so good!

Steaks marinated and then grilled…wild rice…spinach. Perfect dinner. Made it through all the spinach and rice and saved half the steak for later. :)

 

Cousin Brunch

Good Morning everyone! Well, really good afternoon. Happy New Year!

This post is way late, but very much  needed. A few days ago we hosted a brunch for my cousins. It’s rare that we are all in town at the same time so it’s nice to get together for at least a little bit. Everyone contributes somethings so it’s not too much work. My dad set the table for us while I made my morning cup of coffee.

This mug is from England. :) We have family friends who live over in the UK and many years ago, they sent this mug to us amongst a few others. My mom loves them for tea.

Anyways… I was assigned to make quiche for the cousins. I made 2 different pies. The first was sauteed onions, broccoli, cheddar cheese, and ham.

The second was sauteed scallions, spinach, and swiss.

After the veggies were cooked for a few minutes, they are added to the bottoms of pre-made pie crusts. (I had to take a little help here…)

Next,COVER with cheese!

Pour in eggs that are thoroughly whisked together with milk, salt, and pepper.

We convection baked our quiches at 350 degrees for about 40 minutes.

YUM.

(My iPad will not let me upload any other photos for some reason and my mom’s computer will not let me upload any pictures! I must be doing something wrong because these are all Apple/Mac products and all new within the past few months. I need to learn how to use these machines a bit better. For some reason WordPress will not stay open on my iPad either.Hopefully more soon.)

Dinner for Two

This week I traveled down to Colorado Springs for work. I accidentally ended up with Kevin’s camera so as soon as I get the pictures off his camera I’ll be able to share the last few days.

I will actually be traveling again, starting tomorrow, however this time it will be close by.  As soon as we finish our meeting tomorrow, I’m off to the mountains again! The only thing fresh I had left was a HUGE bag of broccoli, so on my way home from work I stopped at Whole Foods to pick up a salad to have as well.

  • Mixed greens + extra baby spinach
  • Shredded beets
  • Shredded carrots
  • Yellow pepper strips
  • Cold peas
  • Sliced almonds
  • Sunflower seeds
  • Craisins
  • Feta cheese
  • Balsamic vinaigrette made by yours truly

  • 1/2 lb pasta
  • 3 cups chopped broccoli
  • 2 cloves garlic, minced
  • 1 lb chicken tenderloins cut into small bites
  • 1/4 cup white wine
  • Olive oil, salt, pepper
  • Asiago cheese
  1. Cook pasta till almost finished.
  2. While the pasta is cooking, season chicken with salt and pepper (and any other fun spices)
  3. As soon as the chicken is done cooking, pull it out of the sautee pan.
  4. Add 1 T olive oil to the bottom and add chopped garlic.
  5. Deglaze pan with wine.
  6. Add back the chicken to heat through.
  7. 1 minute before pasta is done, add in broccoli to quickly cook.
  8. Combine chicken in sauce, pasta, and broccoli.
  9. Grate cheese on top right before serving. :)

 

 

Christmas-fied My Room!

Today’s flight was a LONG 4 hours! The first hour was all bumps and turbulence! Even one of the flight attendants made a face looking concerned. Not my idea of a good time. This morning I downloaded The Sound of Music which is just under 3 hours long. It was the PERFECT length of time for the flight.

If my hands weren’t shaking I would have been able to take a picture of my snack- a bag of Goldfish and some clementines.

On the way home, (glad to be on the ground!!), we stopped at Costco and Safeway for food for the week. We found a great looking salmon and decided to have that for dinner tonight. I love spinach with my salmon so we always have that. Kevin requested some sort of grain so we combined the spinach with the orzo.

Sauteed garlic in some olive oil and added several huge handfuls of baby spinach. Cooked it down for about 2 more min. After the orzo was done cooking, we added the spinach. Seasonings included red pepper flakes, parsley, salt, and pepper.

The salmon was broiled with a lemon pepper sauce that Kev found and extra fresh lemon. It was sooo good. So much better than the last time we had salmon. Lemon is a must for me with fish.

And our plates, broiled salmon with spinach orzo. A dinner loaded with lots of heart healthy fats! <3

Time to finish my apple cinnamon CS tea and sit with my Christmas Penguin. :) I put my red and white snowflake sheets on the bed and pulled out the few, but very important holiday decorations! This was done while listening to Christmas carols of course!

Red Currant Glazed Chicken- Real Simple #6!

We made our friends our taste testers for another dinner. On the menu: Red Currant Glazed Chicken with Sauteed Spinach. This was probably the easiest dinner we’ve made in a long time. I love baked/roasted chicken so this was a good dinner for me. It would have been nice to have twice as much spinach, but the big huge box we bought seemed like it would have made more! Even after the dozens of times I’ve made spinach, I’m always surprised!

Taken from Real Simple Magazine- Dinner #6!

Ingredients

  • 1/2 cup red currant jelly
  • 1⁄4 to 1⁄2 teaspoon crushed red pepper
  • 2 1/2 pounds bone-in, skin-on chicken pieces
  • 2 tablespoons olive oil
  • kosher salt and black pepper
  • 2 cloves garlic, thinly sliced
  • 1/4 cup golden raisins
  • 1 10-ounce package fresh spinach, thick stems removed

Directions

  1. Heat oven to 425° F. In a small bowl, whisk together the jelly and red pepper.
  2. Place the chicken on a rimmed baking sheet. Rub with 1 tablespoon of the oil and season with ½ teaspoon salt and ¼ teaspoon black pepper.
  3. Roast until cooked through, 25 to 30 minutes, basting with the jelly mixture twice during the last 10 minutes of cooking.
  4. Meanwhile, heat the remaining tablespoon of oil in a large skillet over medium heat.
  5. Add the garlic and raisins and cook, stirring frequently, until the garlic is golden, 2 to 3 minutes.
  6. Add the spinach and ¼ teaspoon each salt and black pepper and cook, tossing, until spinach begins to wilt, 1 to 2 minutes. Serve with the chicken.
We also had slices of the bread we bought at the market earlier in the day. Once again, we made a dipping sauce for everyone. Everyone was happy with the dinner. Real Simple Dinner #6 = success! One of the best things about trying new meals is the different combination of ingredients, flavors, and textures you experience. I honestly do not really like raisins in many things. I honestly thought I would just pick them out of the spinach, but turns out….they are so good with the garlic spinach! The sweet chewiness of the raisins was a nice contrast to the spinach. :)

Hello from Fredericksburg, Virginia!

Before leaving I had lunch with my dad. I made us plates of sliced tomatoes from the local stand, organic baby carrots and a bowl of cottage cheese with fruit cocktail of some sort. :) for some reason there are two pictures that are the same and I’m not sure how to get rid of them! I’m on my new iPad toy and using the WordPress app and I have a lot to learn! I also do not know how to edit photos yet so Please bear with me here!

Dinner was at Firebirds, a steakhouse that had several Coloracdo named dishes! I chose the spinach salad and a loaded baked potato. I used some of each of the toppings- sour cream, cheddar, scallions, and bacon! YUM! The spinach salad came out a bit differently than I had expected. It was chopped with tomatoes, bacon, and sauteed mushrooms and tossed in balsamic vinaigrette with hard boiled egg slices on the side. A great salad! Aaannnddd it took a lot of me to say no to the bread basket, buuuuutttt somehow I managed.

The past week or so I’ve been struggling with trying to balance all of my work, team sports, maintaining my house ( my part at least), and working out….or lack there of. That’s probably one of the reasons I ended up getting sick! Too little sleep and exercise and too much of everything else!

To try and combat my lack of time management I made sure to get in a long walk around my favorite lake at home with a much needed social update with one of my best friends. Today I did lunges, squats, push ups and crunches as soon as I got to the hotel before the conference started and hit the gym for a bit of card after dinner. Hope the rest of the week goes as well.

Time to get some reading in. Night~

Kevin and I at the Rockies game!

On Wed I worked forever at work and then had an open house style meeting a my house to find a new roommate.  Finding a new roommate is a lot harder than expected!!! Nicole is just irreplaceable. I knew I would be eating late so I asked Kev to roast a whole chicken for us and we would have it around 9 ish. To go with the chicken, we steamed two bags of baby spinach and sauteed onions in olive oil.

We shared a big bowl of these berries for dessert.

The past few days have been CRAZY stressful at work. Yesterday, my work was invited to attend a culinary boot camp for the day and I was excited to go. Turns out they really don’t like my office and were very very open about that. I was addressed not by my name, but by the agency I work for. We did have a great lunch (cooked by us) that was pretty darn good. I’m still glad we were invited and I learned a few things throughout the day, so it was a valuable and worthwhile experience.

There were about 15 different items prepared yesterday. My group was in charge of making herbed chicken breasts and as well as turkey meat (ground w/ tons of spices and onions and celery).

The spread:

My plate: salad w/ roasted cauliflower, snap peas, carrots; steamed veggies (sesame oil, garlic and fresh ginger); herbed chicken breast, and mac and cheese that was made with roasted butternut squash.

Today is my flex day! I am off of work (did check emails and voicemails…just can’t help myself!) However, I had a great morning so far and hit the gym. My workout was 60 minutes on the elliptical trainer while watching Food Network! Having the TVs available while you workout is GREAT! Each machine has their own screen which is just about perfect.

Before leaving, I grabbed an iced Americano coffee to go. Right now I’m having my coffee, catching up on emails and blogs, and then heading over to Kevin’s to watch some World Cup!! Started today if you were curious. :) I also hope to get to a camera shop today and get a new toy!!


Busy Bee

I love love love being productive! For the past week or so I have been running around like a chicken with it’s head cut off. With all the traveling for work, crazy floods, and getting sick, not much has gotten accomplished around the house. The basement is still a wreck, but now the kitchen has been cleaned, the laundry started, soccer game #1 done, and soccer game #2 done. Here comes the best news….My dad went to Rehoboth and Dewey to check out beach houses for the summer. We are getting a fantastic house in June for a week and I can’t wait!

Dinner was literally inhaled. I stopped by Whole Foods after soccer game #2 and made a salad to go.

In the salad: mixed greens, spinach, yellow peppers, green beans, tabouleh salad, quinoa salad, feta cheese, shredded carrots, shredded beets, dried cranberries, edamame, artichoke hearts, a few kernels of corn, a few peas, and probably something else that I’m missing! DELICIOUS!

I also made veggie soup for the week. I used Bob’s Red Mill soup mix, organic carrots, 1/4 of an onion, organic free range chicken broth, tons of seasonings, and garlic! I added a bit of quinoa and extra water just to use the grains I have. :)

I had a small bowl, even after my massive salad. :)

Spin class tomorrow and then Kickball starts!

Race Update:  Two weeks till race day… my leg is only 6.6 or 6.8 miles but I’m still worried. I need to get in a good 6-7 miles this week! I did 5 yesterday, which wasn’t too bad at all, but I can’t let the team down with a slow time!

24 Hour Recap

Have you ever had purple potatoes?! I love love love potatoes and especially fun colored fingerling potatoes like I had last night for dinner. I need to learn more about these potatoes and find out what the deal is with them. The dinner menu was: salmon, spinach (from the farmers market), and fingerling potatoes.

The potatoes were coated in olive oil, salt, pepper, parsley, oregano, and basil. Check out the red ones with the fun center!

Roasted at 425 for a good 30 min or so. Half way through, I put in the salmon which had dill, a whole clove of garlic, lemon pepper seasoning, sea salt, and extra pepper!

I honestly think that this is some of the best spinach I’ve ever had- super crunchy with a mild flavor. MMM! I cooked up the spinach like I usually do, with tons of garlic, half an onion, olive oil, and a bit of chicken broth (organic low sodium is good stuff).  The broth that comes in the cartons by Pacific is fantastic because you don’t get the “can” taste in their products. It can be found at almost any grocery store. :)

By the way, I ended up playing 2 more indoor soccer games yesterday for a total of 3 hours of soccer!!  AND I scored! Wooo! For the most part, I play defense and it’s unusual that I go up far enough to score so it’s always exciting for me when I do. My legs were surprisingly OK this morning, just a bit stiff…

My breakfast- Horizon’s fat free vanilla yogurt with strawberries.

My coffee and my lunch were eaten on the road and on site today. I actually brought a few things from home, but everyone went on a ‘tour’ for lunch so I had the food there. It was quite good! (Chef salad and a bowl of chicken/rice soup). This place is doing great things! {Grass fed beef, all natural chicken, fresh produce every day, spinach in all their salads, only low fat and fat free milk, almost all their bread/grain products are whole wheat, etc} The list will be longer tomorrow after I visit with them some more. :D

It’s 10:30 PM and I just had my dinner! I had a long commute and was busy getting things done around the house after the flood. My “dinner” was a bowl of cereal! Shredded wheat type cereal with Horizon’s 1% milk.

My housemates have all recently watched Food Inc and have convinced me to watch it. I’m about half way through and disgusted with a lot of what I saw. It’s one thing to read about these things, but it’s another to actually see those things happening. The little baby chicks were absolutely adorable and I hated to see them all being hoarded through on machines! When I first moved here, I interviewed at some house that had chickens as pets. I didn’t get it and thought they were a little off their rockers. Now I can understand a little more why they loved their little chicks so much. There was one farm (so far) that seems to follow much better practices. His piggies were all eating and they were wagging their little tails. They were smart and knew how to get into the bins for food. Smart animals!

More on this to come.

I have to wake up at 4:15 tomorrow morning so I need to get some sleep. ALSO, we are going to a Rockies game tomorrow! So excited!
