Hello from Monte Vista! Traveling for work can be oh so fun. The best thing about MV so far is the wireless internet! Ours has been down for the past few weeks so it’s been tough borrowing internet from coffee shops and Kevin’s house. :) I guess another good thing is that there is nothing to do here but work…so I’m sitting here having an apple and doing work.

Going back to Sunday’s meals after we got back from camping… This English Muffin was plain like this for all of one bite. I added a few mini pepperonis and pizza sauce to make an upside down pizza! I had this with a few sips of a berry smoothie but it wasn’t cold enough so I froze him until late late afternoon.

Best find for Sunday:

He came from my “garden” an hour or so before this picture was taken. :) He tasted disgusting too. hahaha

It is so hard to get a non-yellow picture when you are surrounded by browns and low lighting! Anyways, dinner was fantastic. We grilled chicken with a sweet bbq sauce, had couscous, and a salsa dip. Once again this is the same salsa dip kind of thing. In this mix: tomatoes, onion, avocado, black beans, canned corn, cayenne, salt, pepper, and…… jicama! This stuff is GREAT! It’s light and crisp like an apple, but has more of the texture of a crunchy pear/potato? Regardless, a great addition to lighten up this salsa dip. We had this with corn tortillas. See my tomato on the plate!? He was cut in half covered in salt and I could only choke down 1/2. bleh. Hope the others are better! (Ohhh we went out for ice cream late Sunday night too! I had some Funky Monkey flavor…peanut butter ice cream with fudge brownies or something ooey and gooey like that).

So, the beer. Last week we filtered it and now we are trying to find a day when we are all around to bottle it. Kevin is out of town for the next week, then I go out of town for a night, so it will probably be next Thursday at the earliest! We have to add bottling sugars to make the beer carbonated and then let it sit till it’s actually fizzy like beer should be. Beer takes patience!! Hm, I need to work on that.

Camping Weekend #2

Instead of boring pictures of popsicles, smoothies, ice, and more popsicles, I decided to skip this week of blogging. The strep kept me from work…and eating normal food for a good few days. Thankfully the pain is gone and my body is once again accepting real food!!!

We are once again camping. Not my ideal choice for just getting over strep (and still on antibiotics), however its what we are doing. To prep for the weekend, we made blueberry bars and breakfast burritos! The bars have an oat base and topping with tons of blueberries in the center. They only took about 30-40 min to make and bake! We will definitely have to make these again. Next time, healthier. More oats and maybe some flax and less butter and salt. Here is the smoothie we had while making the bars – frozen mango, peaches, cherries and Greek yogurt.

This is the crumbly oat mixture. It’s pressed into the bottom of a pan, the blueberries are added on top and then a little more crumbly mixture on top.

After 20 minutes of baking…they come out ooey and gooey and delicious. After cooled, they were cut into bars for the camping weekend.

The burritos were made incorrectly. I was so proud of myself for prepping all the veggies…

Potatoes on the bottom, sliced onions and red peppers, cheddar/jack cheese…

Eggs and sausage and then rolled up. But they weren’t supposed to go in the tortillas till AFTER the insides were cooked on the campfire!

This weekends adventure was oh a trail off of Idaho Springs again. Again, its about an hour or so from Boulder. We stopped to get Slurpees from 7-11 because it was 95 degrees out!!!! I had a light one of peach and mango topped w some Mountain Dew stuff. They sure are good, but loaded with tons of bad stuff (fake sugars and too many real sugars). Oh well, once in awhile I think its OK. This was after my iced coffee and tortilla w cheese and salsa. Way to start another weekend of healthy eating. Ugh!

Off roading is always a bumpy adventure. Thankfully in Kev’s Jeep (and not in my Scion… I ended up having to replace ALL my tires this week after my awful off roading in Cripple Creek for work!!! Gggrrrrr). We drove for about 5 hours until we finally found our campsite. We played games, toasted marshmallows, and cooked soup on the fire.

This morning we put the burritos on the hot coals and they burned to a crisp!  If you can imagine black coals, that’s what they looked like. I had a blueberry bar and an apple instead. So sad. Time to think about lunch now that we are home. I need some time to digest before soccer this afternoon!

I have off today!!!  As much as furlough days (unpaid days @ work) stink, I actually kind of like the day off! :) I have a four day weekend ahead of me and couldn’t be happier about it. This morning, instead of waking up at 5:45 and going to work, I got to sleep in, have a smoothie and cereal with Kevin, go for a run with Bailey, and now I’m relaxing/reading magazines/catching up on blogs. It’s also in the 80′s already and absolutely beautiful out.

The smoothie consisted of 1 bag of frozen blackberries, 1 container peach yogurt, splash of cranberry juice, and a scoop of sorbet. If only I could remove all the seeds from the berries my smoothies wouldn’t be so crunch! Something to work on…..

Going back to yesterday, I started off with a beautiful cup of French press Dunkin Donuts coffee.

My coffee was made with two heaping scoops of coffee grinds and almost boiling water. After the coffee sits for a few minutes, I add organic raw sugar and a good bit of 1% milk. I’m still working on Safeway’s O Organics and still loving it. :)

Friends, meet the BREGGO!

I stopped at Curious Coffee in Denver for another iced coffee and a vegetable Breggo (potato, eggs, fake cheese, spinach, mushrooms, and red peppers). These are usually fantastic, but this one was just OK. They used some kind of processed cheese which was disgusting and kind of made me sick. Lunch was a salad, an apple, and iced tea (not photographed).

Last night, to celebrate my “Friday” Kev and I met a few friends at Walnut Brewery for dinner, hit Jax Fish House for a drink, and then went to Conor O’Neill’s for another! For dinner, I had a few chicken wings, a FREE BEER, and mahi mahi fish tacos. I had about 1.5 of these and most of the rice and beans.

It’s just about time to plant my veggies and herbs into planters outside! I might try and get that done today too!

Packed Weekend!

We started the weekend off right with a happy hour at Jax Fish House! The HH turned into dinner and a few more cocktails. I met up with my housemates, Kevin, and a few other friends. Kevin ordered the crab cake sandwich for his dinner. We’ve had this before and it’s pretty delicious! Not as good as any crab cake from Maryland, but the best crab  we’ve had out here in Colorado.

Usually, I try not to eat crab outside a 50 mile radius of the Chesapeake Bay, but I’ll make an exception for Jax.

I ordered a special type of trout- it was pink, just like salmon. It was GREAT! Below the fish is cavatapi pasta, asparagus, and morels (which I asked for them to take out..but a few got in…), all in an asiago broth. Oh, and it was topped with a spring pea pure.

Saturday was busy busy busy! We hit up a bagel spot for breakfast. I had attempted a smoothie at home, but it was disgusting! I could not get the consistency right, so I put it in the freezer and forgot about it. So, I had a marbled rye bagel (on a rye kick!) with vegetable cream cheese (had spring onions and radishes) with tomato and cucumber. MMM.

Kev and I went to a BBQ to celebrate our friend’s graduation! She had amazing food- guacamole, strawberries, black berries, a salad with roasted beets and goat cheese, and BURGERS! These were so so so good! Her fiance made them with ketchup, Worcestershire sauce, salt and pepper, and onions. Juciest burger ever! After, we ended up hanging out with some other friends and watched 4 movies till 4:30 am! Apollo 13, Slumdog Millionaire, Parnormal Activity (I hid through this movie and tried to sleep), and hmmm… one more, but I fell asleep on the floor for it. :)

4 great things for today:

1. I left my car on Pearl St. at 6 PM on Friday for the Jax HH…and NO tickets!  WEEEEE!

2. Scored a goal at indoor soccer today. Played 1 outdoor, 1 indoor plus 3/4 a second indoor game. Phew!

3. Renewed/signed up for my ski pass for next year, it’s going to be “Epic”!

4. Got to talk to my mom for Mother’s Day! :)

I ended up having 2 lunches today. The first was before the indoor soccer games and the second was right after. The first feeding was a tomato with the citrus balsamic, 3/4 an avocado w/ lime juice and cayenne, grilled asparagus, and corn chips to dip into the avoacodo.

(Olive oil, salt and pepper- grilled for about 8 min)

OK, I am officially beat. I have to finish up some laundry and get ready for my trip to Telluride tomorrow. This is my first time down to Telluride…I’ve heard nothing but good things so I’m excited to check it out!

Crazy Times

Ok, so the flood has finally stopped! A few days ago I was so excited to have rain to fall asleep to. I’ve changed my mind. :) After hours of sweeping out water, trying to dry things out (fans going nonstop for 30 hours- not looking forward to the energy bill next month), and cleaning up, I am exhausted!

Here’s a peak into the disaster area:

As soon as the water started to go down in the sump pump, I headed out on a hike! We stopped at Rush and grabbed a acai smoothie and another bowl. SO GOOD!  The bowls are the equivalent of a meal. The thick smoothies are topped with hemp granola and a bit of honey. The only thing in the smoothies are fruit juices and fruit. You can buy some with other things like soy or dairy, but I wanted one with mostly fruit. I love that everything they use is all natural or organic. I was absolutely starved and these hit the spot and gave me enough energy to hike up Mt. Sanitas.

Today I had an outdoor soccer game at 11 (went on an empty stomach).  By the time I got home, I was so hungry, anything would have tasted amazing. I decided on a pizza! A week or so ago I bought an herb crust from the store and it def needed to be used.

Step 1- Add pizza sauce to the crust (I just used a marinara sauce I had on hand)

Step 2- layer on chopped spinach (this is from the local farmer’s market and is the best spinach ever!)

Step 3- Add slices of fresh mozzarella and thinly sliced yellow bell peppers

Step 4- Top with a sprinkling of garlic and Italian herbs (oregano and basil type herbs)

Step 5- Bake at 425 for about 10 min until ooey and gooey

Step 6- Pray that this stays down in soccer game #2 that starts at 3!  :)

I had this with a cup of tea that my dad sent me in a care package a few months ago.

CHECK OUT THE PLANTS! THEY ARE GETTING SOOO BIG!

The only ones that haven’t grown yet are the peppers. Maybe those are harder to grow or take longer to start coming up. Ah well. I love that these are getting bigger every day! It’s fun to come home and check in on them.

Ok, time to get ready for the second game! Thankfully this one is indoor and is only 45 min total.

Smoothie as promised! This baby was made with a ton of fresh strawberries, frozen blueberries, a huge scoop of Greek yogurt, some local honey, blueberrry pom juice, and ice. Totally hit the spot. I felt 100 x better after having this guy.

Look what has come up in our front yard!!

Brooke and I set out on a mini-Saturday adventure. Our first stop was the market. I bought a huge bag of spinach and we each got a bowl of dumplings. It started to rain a bit and we decided to get manicures and pedicures. The place we went just got new chairs and they were FANTASTIC! I could have stayed in one of the chairs for hours!

Our next stop was the 29th Street Mall. We went into the Apple store- A-M-A-Z-I-N-G! My new purple nano is sweeeet!

So, the Yankee Candle store happens to be going out of business.  They had a 75% off everything in the store sale! I kind of went a little crazy. They gave me a crate to carry my candles home in!

Tonight we went to Jianken Sushi Bar. Ben, the guy who made sushi for my birthday used to work there. This place was the best ever and I can’t wait to go back! Thank you again, Ben!

Starting at the left- salmon with lemon, garlic oil, FRIED CAPERS!!!!, and red onion

Center- octopus and other stuff. There were suction cups on those and not going in.

Right- tuna with hot chili oil, lemon, red onion, green onions, and I’m sure lots more ingredients I do not recognize.

Avocado roll and asparagus roll.

Pickled radish with Japanese mint and a veggie roll (asparagus, cucumber, daikon radish, daikon radish sprouts, avocado, and some kind of tofu omelet thing)

On the top- surf and surf (shrimp tempura and avocado topped with strips of seared tuna and more avocado). This is probably my favorite roll ever! I don’t even like shrimp and this was delicious! I had the ones topped mainly with avocado.

On the bottom- Spicy Tuna Diablo (spicy tuna and avocado topped with more tuna, jalapeno, sriracha sauce, and a tiny bit of avocado). YUM YUM YUM

and all together now…

Not photographed- Korean bbq style ribs with an asian slaw and shredded apple on top. These were so so so delicious! The most tender ribs I’ve had in a long time!

Ginger and wasabi! This stuff was stronger than the average wasabi! Phew!!

Nightingale- Absolute Pear and lychee juice and ???  Lime-sugared rim. This was my mini taster! The real one came in a martini glass. We all had sips of that. (Look at the newly painted nails!)

Veggie prep. I could have watched these guys prepare sushi all night. Their plates were gorgeous and everything tasted fresh and so delicious. Can’t wait to go back!

As if this wasn’t enough food, Kev and I made ‘Grasshoppers’. These were supposed to be green, but oh well. Peppermint, Kahlua, Vodka, and vanilla ice cream all blended together. This sucker is strong!

Lins and I found a coffee shop in Salida called the Simmering Cup. This is the CUTEST coffee shop ever! It has a shabby chic look to it and the coffee was fantastic. After drinking hotel coffee, this tasted like pure love.

I got an iced coffee and it is creamed up with the milk behind it!

Each sitting area had different furniture and sitting arrangements. The table right in front was a table with a chess board on it!

and… finally HOME again from my trip to Center, Colorado. Traveling always makes me happy to be back in Boulder. My plants are starting to sprout! I’m a little worried that they have a white fuzz on them, but hopefully that goes away. One of the mesclun greens has sprouted a leaf! Woo! Oh, and the tomatoes and parsley look happy and healthy. :) As soon as more start to sprout, I’ll share some more growing pics.

I knew I wanted a smoothie so I made two delicious frozen berry smoothies. These guys are in my birthday cups from last year from Pier 1.

Into the smoothies:

  • 1.5 cups frozen strawberries, raspberries, blackberries, and blueberries
  • 1/2 banana
  • 8 oz Cascade Farms blueberry yogurt
  • handful of ice
  • 4 oz grapefruit juice

Good Morning!

For some reason, I am just not 100% yet! The cold I got last week had turned into a monster and is still lingering around. To try and combat the cold/flu and to make sure my stomach wouldn’t hate me, I made smoothies for breakfast today.

Into the blender:

  • 1/2 large banana
  • 1/3 cup frozen blueberries
  • 1/4 cup raspberries
  • 3 large strawberries
  • 8 oz blueberry yogurt
  • 6 ice cubes
  • and…a handful of spinach! Nope, you can’t taste it :)

My stomach did not handle the coffee yesterday, so I might stick to tea. We’ll see. Cheers!
