A Stacked Lunch

Good Morning! I woke up at 5 this morning because I just couldn’t sleep. Stupid flu. I figured since I have to go back to work today (uggghh), that I would pack the same salad I had last night. Romaine, tomatoes, white navy beans, carrots, pepperoncini peppers, and olives. I poured the vinaigrette on the veggies so hopefully they wont’ get too soft. All the tupperware decided to hide this morning so I had to improvise a bit. The only thing this need is a big piece of crusty baguette. The navy beans provide some protein for the salad, the veggies speak for themselves, and the olives and the olive oil in the dressing provide some good healthy fats.

For b-fast I made some cinnamon raisin toast with peanut butter and sliced up a pear. Again, I thought the protein/fats from the peanut butter and the fiber from the pear would help keep me full. It’s just barely 6 am and I have to make it till around noon for lunch! We’ll see how that goes.

I just had one slice of the toast and half the pears and my stomach said NO MORE! The rumor is that the stomach bug only lasted 4 days for the person who I think I caught it from…so I have half a day left of this! So much for worrying if this will keep me full!

Time to get ready for work and drink some Tummy Mint tea.

My stomach has finally decided to play nice and I decided to eat today. I had ginger ale on the plane ride, and decided it was time for food when I got back to my home in Co.

For my dinner, I tried to replicate a salad I had over break. Salads are never as good when you have to make them yourself. Salad and coffee are always tastier when someone else makes them!

Dinner for Two

This week I traveled down to Colorado Springs for work. I accidentally ended up with Kevin’s camera so as soon as I get the pictures off his camera I’ll be able to share the last few days.

I will actually be traveling again, starting tomorrow, however this time it will be close by.  As soon as we finish our meeting tomorrow, I’m off to the mountains again! The only thing fresh I had left was a HUGE bag of broccoli, so on my way home from work I stopped at Whole Foods to pick up a salad to have as well.

  • Mixed greens + extra baby spinach
  • Shredded beets
  • Shredded carrots
  • Yellow pepper strips
  • Cold peas
  • Sliced almonds
  • Sunflower seeds
  • Craisins
  • Feta cheese
  • Balsamic vinaigrette made by yours truly

  • 1/2 lb pasta
  • 3 cups chopped broccoli
  • 2 cloves garlic, minced
  • 1 lb chicken tenderloins cut into small bites
  • 1/4 cup white wine
  • Olive oil, salt, pepper
  • Asiago cheese
  1. Cook pasta till almost finished.
  2. While the pasta is cooking, season chicken with salt and pepper (and any other fun spices)
  3. As soon as the chicken is done cooking, pull it out of the sautee pan.
  4. Add 1 T olive oil to the bottom and add chopped garlic.
  5. Deglaze pan with wine.
  6. Add back the chicken to heat through.
  7. 1 minute before pasta is done, add in broccoli to quickly cook.
  8. Combine chicken in sauce, pasta, and broccoli.
  9. Grate cheese on top right before serving. :)

 

 

Real Simple Flatbread (Dinner #11)

If you ever want to try something different, this is it. Kev and I have made many many pizzas in the past two years and this is not like any other we’ve ever had. The yams we used were nice and sweet and went extremely well with the shallots which almost carmelized in the oven. I could have done without so much thyme and honestly, without the brie cheese. Now, don’t get me wrong. I love brie cheese. Just not on this flatbread.

Real Simple Sweet Potato and Brie Flatbread

Ingredients

  • 1 pound frozen pizza dough, thawed
  • cornmeal, for the baking sheet (we used polenta…haha, couldn’t find the cornmeal)
  • 1 medium sweet potato, peeled, halved, and thinly sliced (we used a yam…basically the same??)
  • 2 shallots, thinly sliced
  • 8 sprigs fresh thyme (dried because there was NO fresh thyme at the store!)
  • 4 tablespoons olive oil
  • kosher salt and black pepper
  • 4 ounces Brie, sliced
  • 2 teaspoons red wine vinegar
  • 4 cups mixed greens (about 3 ounces)

Directions

  1. Heat oven to 425° F. Shape the dough into a large oval and place on a cornmeal-dusted baking sheet.
  2. In a medium bowl, toss the sweet potato, shallots, thyme, 3 tablespoons of the oil, ½ teaspoon salt, and ¼ teaspoon pepper.
  3. Scatter the potato mixture over the dough and top with the Brie. Bake until golden brown and crisp, 20 to 25 minutes.
  4. Meanwhile, in a bowl, whisk together the vinegar, remaining tablespoon of oil, and ¼ teaspoon each salt and pepper.
  5. Toss the dressing with the greens. Serve with the flat bread.

Side salad

Mixed Greens- just a regular ol’ mesclun mix

Gala Apple- half sliced over two small salads

Vinaigrette -red wine vinegar, apricot preserves, olive oil, Italian seasonings, garlic, salt, pepper, whole grain mustard

In addition to this lovely meal, we also made pizza rolls. We had some extra pizza dough crusts so we stuffed them with pepperoni and mozzarella cheese. Delish.

Someone on one of my soccer teams convinced me to go to a sports class with her at the gym. Every exercise was based on a different sport. The first half hour was all core work. I was worried that my abs wouldn’t be sore, but I have never been so wrong in my life! My arms and abs are killing me today! To loosen up a bit, I took Bailey on a 30 minute walk before my soccer game to see if that would help. Not so much. I’m off to bed….have to get a good night’s rest. Tomorrow is my first “book club” book discussion. Night!

Real Simple Dinner #10

This weekend, we checked into our new ski house! Kev and I drove up to the mountains and after taking a tour of the house, we had a lunch I had a packed. We split a leftover Snarf’s sub and had Boulder potato chips and grapes. Snarf’s is probably one of the BEST sub shops ever! If you ever come to Boulder, you need to hit up Snarfs.

Our dinner was another Real Simple magazine dinner: Salmon with potato salad.

The dressing for the potato salad started with chopped scallions added to the horseradish, white wine vinegar, olive oil, salt and pepper.

 

Small side salad: mixed greens, sliced almonds, more scallions, and a balsamic vinaigrette.

This meal was intense in flavor! The vinaigrette was very tangy and the horseradish and white wine vinegar from the potatoes was almost too much for me. It was still pretty tasty, but I would definitely make a few minor modifications for next time. I just can’t eat my salmon without a fresh lemon squeezed on top. It’s just one of those fresh flavor combos that can’t be beat.  Next time. :)

Salmon with Potato Salad

Ingredients

  • 1 pound new potatoes (about 10)
  • kosher salt and black pepper
  • 4 tablespoons olive oil
  • 4 6-ounce skinless salmon fillets
  • 2 tablespoons prepared horseradish
  • 1 tablespoon white wine vinegar
  • 2 scallions, sliced
  • 1/2 small bunch watercress (we could not find any so we used parsley and added a salad)

Directions

  1. Place the potatoes in a medium saucepan. Add enough cold water to cover and bring to a boil.
  2. Add 1 teaspoon salt, reduce heat, and simmer until tender, 15 to 18 minutes. Drain and run under cold water to cool. Cut into quarters.
  3. Meanwhile, heat 1 tablespoon of the oil in a large nonstick skillet over medium-high heat.
  4. Season the salmon with ½ teaspoon salt and ¼ teaspoon pepper. Cook until opaque throughout, 4 to 5 minutes per side.
  5. In a large bowl, combine the horseradish, vinegar, scallions, remaining 3 tablespoons oil, ¼ teaspoon salt, and ¼ teaspoon pepper.
  6. Add the potatoes and watercress to the dressing and toss to combine. Serve the salad with the salmon.

 

 

 

 

 

Forgetful Lunch

I totally forgot about the luncheon that I had at work today. Actually, all of us did. Oops. We all saved our lunches and headed to the lunch. I had pre-ordered my lunch and had a grilled chicken caesar salad. The salad was mostly iceberg lettuce, parmesan cheese, croutons, and a ton of chicken. I had about 1 cup of the salad and called it quits. Iceberg lettuce just doesn’t do it for me. I did eat the oatmeal raisin cookie though. By the time dinner rolled around, I was very ready to eat. Kickball was canceled because of a heavy thunder storm that rolled through. As you can see by the salad picture below, the sun came out. True Colorado weather. Rainy and thundering one minute, bright and sunny the next!

Salad- mixed greens, cucumber from a coworker’s garden, feta, blueberries, and chopped almonds. We probably have this style of salad more than any others. Nice, light, and salty/sweet. Best of all worlds if you ask me.

Kev made these pork chops in a little flour, garlic, soy sauce, and pepper. My rice was topped with more chopped almonds for some crunch. :) I might have had a second pork chop…. at least they were thin!!

Theeennn we went to Glacier for some ice cream! It’s just a 5 minute walk from Kevin’s house which is way too convenient! I had the mint stracciatela and Kev had Funky Donky. Pefectly creamy and delicious. They flaked the chocolate in mine which is EXACTLY how I like to have my chocolate in my ice cream.

The few days before a weekend away can always be hard on eating. This is the 3rd weekend away and I had practically no food at my house and didn’t buy much either. During the week, I traveled to Monte Vista, Colorado. My dinner at Monte Vista was at Nino’s was a fajita salad. The bowl was a fried shell (they need to change their oil, it was rancid) and the lettuce and tomato part were 1/5the the size of the meat and cheese part. The chicken was great though and the guacamole was killer. The next two days, I had salads from Whole Foods with tons of vegetables and grain salads.

My garden is small, but doing OK as far as Colorado container growing goes.

Cooper, the new dog at our house knocked over the tomato plants….hope they make it with1/2 the dirt. Thursday morning, I made a pancake breakfast. I used the Kodiak pancake mix.

The past week has been horrible for working out and my body sure does feel it! When we were away for work Tuesday night, we ended up working till 10:30 at night! Yeserday on the drive home from Grand Junction, there was construction that held us up so I missed my soccer game. I had a hair appointment (cut my hair way short!!) And then had a popcorn and movie date a the boy’s house.

Today was my first day back in the office since before I left for vacation! Its been weeks! The majority of the day was spent organizing my work life and sitting in meetings. My plan is to focus really hard tomorrow and get a bunch of things off my to-do list. My new housemate has just moved in with a massive bernese mountain dog. Bailey is loving the new live in friend! :)

Breakfast was a small bowl of oameal and 8 oz of skim milk. Oh, and had a choco biscotti as well. Lunch was a super juicy peach and an Italian sub. The sub def did not help with the I’ve had too much food without exercise problem I’m experiencing.

Right after work I was able to squeeze a run in. The sun came out just in time and I had a great short run on the path. I headed straight to Kevin’s house because
He made us the taco salads I’ve been craving for dinner tonight.

Taco Salad

  • Romaine lettuce
  • Tomato
  • Avocado
  • Red pepper
  • Corn
  • Black beabs
  • Seasoned ground beer
  • Cheddar
  • Salsa

He also heated up taquitos! These things were one of the first things we had as a ‘meal’ together. :)

He too has a roommate who is leaving so we are hanging out with him tonight again.
I truly believe movies are better with popcorn )and we were OUT!) so we walked to the store to buy some more kernels. Much better.

4th of July Weekend!

Curried chicken salad! I bought Kev a small bottle of curry powder for his house so he (I) could make curried chicken salad with our leftovers! YUM! The spiciness from the curry went extremely well with the sweetness of the grapes.

I finally made tabouleh without any help! I used Bob’s Red Mill quick cooking cracked bulgar wheat. It’s a super easy grain to cook. It can either be soaked or cooked quickly for 15-20 min. To the bulgar, I added the juice from one lemon, fresh parsley that I grew!!!, a few tomatoes, 1/3 of a red onion, half an English cucumber, and a small amount of olive oil.  The recipe called for mint, but I left that out.

To go along with this AMAZING grain, we had tilapia. Kev took me through a legs weight lifting workout at the gym earlier in the day and this was the perfect dinner to have after.

Saturday, we hit the farmer’s market for a few things- onions, fresh tortilla chips, cilantro that was picked one hour prior, and cherries. We were grilling and planned to make fresh salsa to go with our fresh tortillas.

Saturday’s Menu:

  • Chicken Basil Sausage, Sweet Chicken Sausage, Hot Italian Sausage
  • Baby Back BBQ Ribs (grilled for several hours on low and basted every 20 min by Kev)
  • Corn on the Cob
  • Fresh Salsa (tomatoes, onion, cilantro, lime, olive oil, salt and pepper)
  • Watermelon and Cantaloupe
  • Cherries

The rest of the day was spent playing yard games (CAPS, two types of horseshoes, and Baggo).

Who doesn’t love waking up to French Toast?!!?

  • Turkey Burgers (ground turkey, egg, bread crumbs, Worcestershire sauce, hot sauce, garlic, onion)

  • Strawberries and Blueberries for Angel Food Cake!

I had off yesterday for the 4th of July holiday. We had tons of leftovers and then went off roading! As soon as I get the pics from Kev, they will be shared. Preview- dirt roads, huge rocks, and massive puddles of mud!!) I’m out of town again for work and will be back tomorrow night! Hopefully we will be having taco salads, sharing off roading pics, and bottling our beer!!

Back to Colorado Livin’

I am finally back from Fort Collins! My department was hosting it’s annual workshop there this year. It’s a pretty intense workshop. We wake up at 6 and go straight up until dinner time. The few days we were there were exhausting! I was soo excited for workshop to be over on Wednesday because Kevin’ flew back to Colorado earlier in the day. He got to stay back in Maryland a few extra days. He had time to go to the store and pick up a few things to make dinner.

Chicken Salad and kettle cooked chips. Super summery meal. Then he made a massive massive ice cream sundae!!! From here on out, I am not eating ice cream for a LONG time! I’ve had way too much ice cream!!

Chicken Salad w/ Grapes

  • 4 chicken breasts
  • red grapes
  • celery
  • red onion
  • mayo
  • salt and pepper

Poach the chicken breasts and then shred to bite size pieces. Add halved grapes, chopped celery, and chopped onion. Stir in mayo to taste and add salt and freshly ground black pepper. Chill until nice and cold!

A few years ago, I went to a restaurant in Rehoboth beach and had a grilled caesar salad. Last night I was trying to think of something to go with the pasta Kev had at his house. I thought this would be a fun way to have our caesar salad.

To make: cut one head of romaine lettuce in half. Spoon on caesar dressing (I used a low fat yogurt based dressing) and then sprinkle with tons of parmesan cheese.

(The restaurant grilled the romaine half very briefly and then spooned on the dressing and cheese. It was warm and delicious! I’m not sure how to use Kevin’s grill so we had ours cold.)

The garlic bread was super easy as well. I cut a loaf of French bread in half, drizzled olive oil on top, and sprinkled tons of garlic powder and a bit of salt. One side also got parmesan cheese. Baked for a few minutes at 375, then broiled on high for 1 min.

This morning’s pancakes were more blueberry pancakes! I’ve also had pancakes a million times in the past few weeks. I had 1 regular pancake and 3 smaller ones with a bit of peanut butter. Right before eating I had a little lite syrup poured on top.

So, the past month or two have been a little rough on the eating well. This afternoon after work I hope to get a good workout in and hit the grocery store. While at home (on the beach) I had the opportunity to read my Cooking Light magazine so hopefully I can use some of their good ideas. The workouts need to be increased and the poor eating needs to be decreased. I’m leaving for California in 1 month so hopefully I can do better before the trip.
