Soccer really wore me out today! I can already feel my legs getting a little sore. I’m def still thinking about making a spin class tomorrow night, so hopefully my legs will be OK. After my second game, I got lots of household things done before leaving for Kevin’s to make dinner. We are trying to use up the lasts of our produce/leftovers.
Pictured below is our salad and dinner plates. In the salad: mixed greens, sunflower seeds, feta cheese, and blueberries. I had roasted cauliflower, kabocha squash and chicken fingers! I felt like a kid eating these guys. I even dipped a few bites in ketchup.
If you have never had roasted cauliflower, I strongly recommend that you try it. I tossed the florets in olive oil, salt, and pepper and roasted in a 450 degree oven for about 20 minutes. The roasting brings out a totally different flavor– nutty goodness.
Time for bed! I’m exhausted!

Dinner was very quick and very random. I heated up some grits, added some cheese, and reheated leftover kabocha squash. On the side was a massive orange.

Wooo! My soccer team won today! I scored and had an assist!
On the way home, I made a stop at Sprouts to pick up the produce for the week.
Red peppers, cauliflower, tomatoes, blueberries, pineapple, potatoes, and a red onion.
Fruit bowl for the week!
In the bowl: oranges, honey tangerines, pears, avocados, lime (and leftover apple and kiwi).
Snack for the afternoon was a bowl of fruit. Here is the pineapple prep.
Snack time~
Dinner will be interesting. I’m making my kobocha squash and chicken tenders with apricot/mustard sauce.
I cut him in half and scooped out the seeds like how you do when you carve a pumpkin.
Sliced and then coated with olive oil and a little salt. Baked in the oven for ~30 min @ 400. It turned out great! It’s like a sweet and creamy butternut squash.

Best Monday ever! I had today off and got to spend my morning skiing a third day at Breck. We have been so lucky to have great weather this past weekend. The fresh snow from yesterday/last night was very nice to ski down this morning. Soft and fluffy.
Some of the best things happened in our half day of skiing. The Riperoo Children’s park opened- a trail through the trees with fun things to go over and through-a house, bridges, and tunnels.
All mini-kid sized. We also hit the terrain park today. I wussed out on the half-pipe, but did do a jump! From the top it looked like a jump onto a level surface. Boy was I wrong. This was a jump to a very short level surface and then straight down! Don’t know how I made it off of that in once piece.
I thought I had made peace with the trees, but once again, the trees won. This time I had two people crash into and over me in the woods! Thank you again, crash helmet, and super fluffy fresh snow for the cushy fall.
I’m not 100% sure where or how, but I have quite a few black and blue bruises! Maybe the snow isn’t as soft as I had thought…
Totally worth it though!
On the way home, we stopped at Clint’s bakery in downtown Breckenridge. A super cute coffee shop and cafe type place. A coworker used to work there back in the day and said we should check it out. Surprise surprise, I had a cup of coffee and a red velvet cupcake.
Regular eating to resume tomorrow!
Sprouts grocery store produced a few great purchases- kabocha squash and almond butter top the list.
~kabocha squash to the left, Chobani 0%, dried blueberries, peanut butter, almond butter, asian pears, apples, kiwis, grapefruits, rigatoni pasta, and an English cucumber. I also hit up Safeway for bagels and cream cheese. The bagel this weekend brought on a huge craving!
