Good Morning!
My breakfast took first priority this morning. I had greek yogurt (Fage 0%)drizzled in honey and topped with granola (Bear Naked)! I’ve been craving this for the past week, but just didn’t have granola!
This is special honey from my trip to San Francisco a few weeks ago. We did a honey tasting and this was by far my favorite.
My lunch was half packed at Kevin’s, so the turkey and cheese sandwich did not get a photo. These are the two pieces of fruit I grabbed to go along with the sandwich for the day.

I took the later bus this morning just so I could upload my photos. Hope the boss doesn’t get too upset!
Telluride!

Greetings from Telluride, Colorado! Today was spent driving down to Telluride and preparing for a nutrition education training we are doing tomorrow. I had a super productive morning- made French press coffee, folded laundry, and packed for my trip.
For the trip, I packed an apple and a baggie of sugar snap peas. I had to drive down to the Denver Tech Center first to get a coworker (had the apple on the way down), but we stopped to get breakfast burritos by her house for the road. Mine was a HUGE veggie burrito with a squash medley, fresh tomato salsa, scrambled eggs, breakfast potatoes, and tons of cheddar. This thing probably weighted a good 2 lbs! I made a healthy dent in it.
Sorry for the 1/2 eaten burrito, but it was the only way to see in to the goods! Due to the size of these burritos, we weren’t really hungry for lunch so we stopped at a grocery store 4 hours or so into the trip to get coffee and some snacks. I picked up a KIND bar (almond cashew), a Greek yogurt, an orange, and a cheese stick. I had 1/2 the cheese stick and the KIND bar.
On the drive we listed to Harry Potter and the Chamber of Secrets. I love HP!!!! This helped pass the time in the car. At least it was a pretty drive! There was one area where we def want to stop by on the way home to get some pictures if possible.
7 hours later, we finally arrived in Telluride! We took a quick walk through town and headed to dinner.
Dinner was at Excelsior, an Italian restaurant.
We had tomato pesto olives and cornichon to start. It came on a platter with popovers and bread with whole cloves of garlic baked in! Unfortunately, we devoured these a little too quickly for a photo.
My entree was Chicken Carbonara with asparagus in a sage cream sauce. The chicken was “all natural” as per the menu which made me happy. It actually looks quite small in the photo, but it was a big bowl of pasta and extremely filling! Oh, and I had a glass of zinfandel.
Sorry for the blurry photos, there was very poor lighting in the restaurant!!! Hope you can still see how delicious these were! We took this homemade Tiramisu to go! We split ‘em while we finished up our work tonight. Ok, time to try and get some sleep.

Smoothie as promised! This baby was made with a ton of fresh strawberries, frozen blueberries, a huge scoop of Greek yogurt, some local honey, blueberrry pom juice, and ice. Totally hit the spot. I felt 100 x better after having this guy.
Look what has come up in our front yard!!
Brooke and I set out on a mini-Saturday adventure. Our first stop was the market. I bought a huge bag of spinach and we each got a bowl of dumplings. It started to rain a bit and we decided to get manicures and pedicures. The place we went just got new chairs and they were FANTASTIC! I could have stayed in one of the chairs for hours!
Our next stop was the 29th Street Mall. We went into the Apple store- A-M-A-Z-I-N-G! My new purple nano is sweeeet!
So, the Yankee Candle store happens to be going out of business. They had a 75% off everything in the store sale! I kind of went a little crazy. They gave me a crate to carry my candles home in!
Tonight we went to Jianken Sushi Bar. Ben, the guy who made sushi for my birthday used to work there. This place was the best ever and I can’t wait to go back! Thank you again, Ben!

Rice with toasted sesame seeds and miso soup with seaweed and the silkiest tofu ever!
Poke trio platter
Starting at the left- salmon with lemon, garlic oil, FRIED CAPERS!!!!, and red onion
Center- octopus and other stuff. There were suction cups on those and not going in.
Right- tuna with hot chili oil, lemon, red onion, green onions, and I’m sure lots more ingredients I do not recognize.
Avocado roll and asparagus roll.
Pickled radish with Japanese mint and a veggie roll (asparagus, cucumber, daikon radish, daikon radish sprouts, avocado, and some kind of tofu omelet thing)
On the top- surf and surf (shrimp tempura and avocado topped with strips of seared tuna and more avocado). This is probably my favorite roll ever! I don’t even like shrimp and this was delicious! I had the ones topped mainly with avocado.
On the bottom- Spicy Tuna Diablo (spicy tuna and avocado topped with more tuna, jalapeno, sriracha sauce, and a tiny bit of avocado). YUM YUM YUM
and all together now…
Not photographed- Korean bbq style ribs with an asian slaw and shredded apple on top. These were so so so delicious! The most tender ribs I’ve had in a long time!
Ginger and wasabi! This stuff was stronger than the average wasabi! Phew!!
Nightingale- Absolute Pear and lychee juice and ??? Lime-sugared rim. This was my mini taster! The real one came in a martini glass. We all had sips of that. (Look at the newly painted nails!)
Veggie prep. I could have watched these guys prepare sushi all night. Their plates were gorgeous and everything tasted fresh and so delicious. Can’t wait to go back!
As if this wasn’t enough food, Kev and I made ‘Grasshoppers’. These were supposed to be green, but oh well. Peppermint, Kahlua, Vodka, and vanilla ice cream all blended together. This sucker is strong!

My Big Fat Greek Breakfast

Today is going to be a BEAUTIFUL day! We are expecting highs in the 60′s! Instead of having something hot for breakfast, I decided on having my Chobani 0% Greek Yogurt. I topped it with blueberry preserves and Udi’s Granola. I’m a little worried that this won’t be enough to hold me over till lunch. I have a meeting all morning so I hope it does!
I packed up my lunch while I made breakfast. Kev bought me a chicken noodle soup bowl so I brought that, leftover roasted cauliflower, an orange, and a bag of popcorn to pop at work!
Off to work now!

Best Monday ever! I had today off and got to spend my morning skiing a third day at Breck. We have been so lucky to have great weather this past weekend. The fresh snow from yesterday/last night was very nice to ski down this morning. Soft and fluffy.
Some of the best things happened in our half day of skiing. The Riperoo Children’s park opened- a trail through the trees with fun things to go over and through-a house, bridges, and tunnels.
All mini-kid sized. We also hit the terrain park today. I wussed out on the half-pipe, but did do a jump! From the top it looked like a jump onto a level surface. Boy was I wrong. This was a jump to a very short level surface and then straight down! Don’t know how I made it off of that in once piece.
I thought I had made peace with the trees, but once again, the trees won. This time I had two people crash into and over me in the woods! Thank you again, crash helmet, and super fluffy fresh snow for the cushy fall.
I’m not 100% sure where or how, but I have quite a few black and blue bruises! Maybe the snow isn’t as soft as I had thought…
Totally worth it though!
On the way home, we stopped at Clint’s bakery in downtown Breckenridge. A super cute coffee shop and cafe type place. A coworker used to work there back in the day and said we should check it out. Surprise surprise, I had a cup of coffee and a red velvet cupcake.
Regular eating to resume tomorrow!
Sprouts grocery store produced a few great purchases- kabocha squash and almond butter top the list.
~kabocha squash to the left, Chobani 0%, dried blueberries, peanut butter, almond butter, asian pears, apples, kiwis, grapefruits, rigatoni pasta, and an English cucumber. I also hit up Safeway for bagels and cream cheese. The bagel this weekend brought on a huge craving!

Wow, what a day! There just aren’t enough hours in the day sometimes. My breakfast was super small and super quick. Once again, my stomach wasn’t quite feeling great so toast and coffee it was.
This is one of my favorite mugs! I bought this one from the big art museum in Philadelphia. There was a huge Dali exhibit a few years ago and I LOVE Dali. In the mug is Dazbog coffee with lots of milk.
I packed up my lunch…leftover taboule with 1/2 sliced avocado, last big of my Chobani yogurt with blueberry preserves, baggie of granola, and a kiwi!
I had a huge bowl of miso soup with this. It was super spicy with a few vegetables and tofu. The tofu from this restaurant is too tough so I always pick it out
Ate too fast!

I was very surprised to wake up without being sore! The spin class was still very challenging and different, but I guess I should try and work it a little harder next time. I was afraid I wasn’t going to be able to walk today! My morning was fairly rushed as I had to drive all the way to Ft. Collins. I gulped my yogurt down and had my coffee to-go today. Note to self, better planning for tomorrow…

Soccer was awesome. We won!
A few hours after my game ended, I started to get really hungry. I ended up making a bowl of my new Chobani yogurt. Chobani yogurt is one of many brands that make Greek style yogurts. Today while I was making this, my housemate asked me what is the deal with Greek yogurt, why eat it? I explained to her that it has a fresh tangy taste to it, it’s super thick even if it’s a fat free version, and it is loaded with protein. 6 oz of this yogurt has 18 grams of protein! It was topped with blueberry preserves and Udi’s granola. Half way through the bowl, I added about 1 tsp honey. This snack held me over for several hours- dinner at Kevin’s was a late one.

Dinner at Kevin’s House
Menu: Swiss Chicken Casserole over egg noodles and steamed brussels sprouts/carrot coins
This is a great crock pot dish if you ever do make one. It has cream of mushroom soup, stuffing, and swiss cheese layered over chicken breasts. The chicken came out so tender, you didn’t even need a knife to cut it. Written on the recipe is a message stating how good it is. I fully agree.
and guess who brought home dessert?!?! This is chocolate cheesecake with a chocolate graham crust, drizzed with more chocolate!! I was soo excited when he showed me this!
Day trips this week for work. Tomorrow I’ll be headed up to the Ft. Collins area and back down in time for a spin class! I haven’t been to one in years, so it’ll be interesting.

What a delicious way to start my day. It doesn’t get much better than waking up to a hot bowl of oats and a cup of coffee.
The mix for this was:
*1/3 cup oats
*2/3 cup water
*1/2 chopped apple
*cinnamon
*1 tsp peanut butter
Ok, I went to the grocery store AGAIN this morning. This was my third grocery store visit in the past week or so. I neeeed to stop going so often, but I just can’t help myself. Sprouts just opened a few months ago and Kevin needed to stop by for some ingredients for tonight’s dinner. So, I HAD to go. Here are the good finds from Sprouts:
Two heads of spinach, bosc pears, an avocado, a tomato, an onion, eggies, Chobani 0% Greek style yogurt, and two Bob’s Red Mill products (golden flax seeds and vegi soup mix). Not pictured–salmon and jalapeno cheddar.
Off to play soccer!
