Good Morning!

My breakfast  took first priority this morning. I had greek yogurt (Fage 0%)drizzled in honey and topped with granola (Bear Naked)! I’ve been craving this for the past week, but just didn’t have granola!

This is special honey from my trip to San Francisco a few weeks ago. We did a honey tasting and this was by far my favorite.

My lunch was half packed at Kevin’s, so the turkey and cheese sandwich did not get a photo. These are the two pieces of fruit I grabbed to go along with the sandwich for the day.

I took the later bus this morning just so I could upload my photos. Hope the boss doesn’t get too upset!

A Healthy Start

Kodiak Cakes were on the menu for breakfast today! Yesterday, Joel found this box at the grocery store and I was soo excited to try them. I’ve heard many good things in the blog world about this mix so I had to make them right away! The mix is whole wheat, oat and honey. I had about 1/3 cup of the mix which made two pancakes at 130 cals, 4 grams fiber, and 7 grams of protein. I covered mine in Justin’s peanut butter and dipped them in blueberry syrup.

1 cup mix + 1 cup water + extra cinnamon!

Kevin’s had blueberry pancakes with blueberry syrup.

I would say 2/3 of these blueberries got added to the 2/3 of batter Kev got. He says that pancake batter is just a carrier for blueberries.

Lunch was leftover salad from last night with baby carrots added, an apple, a packet of Justin’s organic peanut butter, and when I got home a bowl of vanilla yogurt with granola and sliced almonds.

I’m about to get into some more work and have a cup of tea. Today’s tea choice is Celestial Seasoning’s Honey Lemon Ginseng Green Tea. Just read the box and found out their boxes are made with 100% recycled paper, the teas are 100% natural, and CS has been working to establish sustainable harvests and fair wages (for 30 years!!) soooooo I’m feeling extra good about my cup of tea this afternoon.

My legs and abs are burning today! The lunges, crunches, and plank really really tired me out! Early evening time, I went on a bike ride from my house all the way up to 9th St. which is really far! It was about an hour round trip. The hill was killer on the legs and the lungs. I need a bike of my own…borrowing one is great, but I need to get on that. Who lives in Boulder without a bike!?

Dinner was super boring- leftover spaghetti and garlic toast. During kickball I had a beerskie and maybe a mozz stick or two or three after…..  Um, so we won our game! We are officially the winners of the bottom half! Wooooo!!!!

Angel Wings!

Here is my beautiful geode! It has angel wings!

Dinner last night was: coconut crusted tilapia; salad with ‘ants’ (blackberries), almonds, and feta cheese; wild rice; and corn on the cob. This was at Kevin’s house so there was the vegetable, the starch, and the meat. Always a ‘complete’ meal.

Lunch was a soup, nectarine, grapefruit, and a kiwi. Add a bowl of granola with milk for breakfast to my lunch and a mini coconut cream Lara Bar. Those things are sooo high in calories for such a tiny bar! 12o cals for a bar about 1.5 inches. It was good though…prob my favorite flavor so far. Oh, and there was a Breggo tasting at Curious, so we stopped by and I grabbed one of those as well. UGH, once again, no self control.

Din Din tonight: roasted yams; salad with hearts of palm, roasted red peppers, olives, avocado, and tomato; and pasta with vodka sauce. Oh, and I pigged out on cheese and crackers before… The cheddar is soooo good, I couldn’t help myself!

I was only able to digest for an hour or two before soccer and having such a huge meal was not the best of ideas. I ran my butt off and it HURT!!!  A good workout though!

Destination Wedding?!

Hello!

I’ve made it to Canon City and back already! I had work down in Canon City today which happens to be where my great grandparents had their destination wedding back in the early 1900′s.  They lived in Neola, Iowa and took a train into town with their wedding party to get married! I wish I had more time to look around for the church where they had their ceremony.

To fuel up for the long drive, I had a big bowl of granola this morning.

To this box (FREE FROM THE MARATHON RELAY!) I added a bit of the honey almond granola I had. I also had this with 1% milk (O Organics by Safeway…pretty good!).

I stopped on the way down at Vic’s Coffee and got a regular drip coffee.

Now that I’m home, I am roasting a bunch of veggies for an early dinner. Kevin and I are heading to a Rockies game again tonight! Last night he roasted a whole chicken and potatoes so maybe we can combine both of these for dinner.

Crazy Times

Ok, so the flood has finally stopped! A few days ago I was so excited to have rain to fall asleep to. I’ve changed my mind. :) After hours of sweeping out water, trying to dry things out (fans going nonstop for 30 hours- not looking forward to the energy bill next month), and cleaning up, I am exhausted!

Here’s a peak into the disaster area:

As soon as the water started to go down in the sump pump, I headed out on a hike! We stopped at Rush and grabbed a acai smoothie and another bowl. SO GOOD!  The bowls are the equivalent of a meal. The thick smoothies are topped with hemp granola and a bit of honey. The only thing in the smoothies are fruit juices and fruit. You can buy some with other things like soy or dairy, but I wanted one with mostly fruit. I love that everything they use is all natural or organic. I was absolutely starved and these hit the spot and gave me enough energy to hike up Mt. Sanitas.

Today I had an outdoor soccer game at 11 (went on an empty stomach).  By the time I got home, I was so hungry, anything would have tasted amazing. I decided on a pizza! A week or so ago I bought an herb crust from the store and it def needed to be used.

Step 1- Add pizza sauce to the crust (I just used a marinara sauce I had on hand)

Step 2- layer on chopped spinach (this is from the local farmer’s market and is the best spinach ever!)

Step 3- Add slices of fresh mozzarella and thinly sliced yellow bell peppers

Step 4- Top with a sprinkling of garlic and Italian herbs (oregano and basil type herbs)

Step 5- Bake at 425 for about 10 min until ooey and gooey

Step 6- Pray that this stays down in soccer game #2 that starts at 3!  :)

I had this with a cup of tea that my dad sent me in a care package a few months ago.

CHECK OUT THE PLANTS! THEY ARE GETTING SOOO BIG!

The only ones that haven’t grown yet are the peppers. Maybe those are harder to grow or take longer to start coming up. Ah well. I love that these are getting bigger every day! It’s fun to come home and check in on them.

Ok, time to get ready for the second game! Thankfully this one is indoor and is only 45 min total.

Today is going to be a BEAUTIFUL day! We are expecting highs in the 60′s! Instead of having something hot for breakfast, I decided on having my Chobani 0% Greek Yogurt. I topped it with blueberry preserves and Udi’s Granola. I’m a little worried that this won’t be enough to hold me over till lunch. I have a meeting all morning so I hope it does!

I packed up my lunch while I made breakfast. Kev bought me a chicken noodle soup bowl so I brought that, leftover roasted cauliflower, an orange, and a bag of popcorn to pop at work!

Off to work now!

Sunday morning breakfast: Udi’s granola, milk, and coffee

Peak 10- Mustang to Elon

Around 11 am we had worked our way over to Peak 10. Peak 10 is full of intermediate and advanced runs. Someone, somehow convinced me to try a double black diamond. By the time I had made my way over to the top, there was no turning back. This was a super steep, mogul run. My goal was to make ONE successful turn over the moguls. Before succeeding, I fell MULTIPLE times and slid head first down the mountain. As soon as I get the photos from a friend, I’ll show you just how steep this run is!

Lunch: bagel with cream cheese, trail mix, and more coffee (the breakfast coffee was dumped down the drain by accident!!!)

I ended up eating some of the trail mix and the bagel. The granola bars were saved for snacking on the ski lifts.

I broke out the map during lunch to check out the double diamond we just did. :) Wooo! Glad I survived!

Our evening was spent chowing down on a hodgepodge of snacks and leftovers and soaking in the hot tub to help our muscles recover from Mustang.

Woooooooooooo!!!!!!!!  I’m just about all packed up for a weekend in Breckenridge. We are staying in a huge house with a bunch of people for the whole weekend and wont’ be back till Monday! Skiing all day Saturday and Sunday. Maybe even a 1/2 day on Monday. Guess who has off work on Monday?! :)

I’ve packed up some snacks for us just in case. Kevin is in charge of the fruit.

Snacks

This is seriously peanut and oat overload.  Peanuts, peanut butter granola bars, and granola.

I made up a leftovers dinner…tried to use up the rest of the veggies in the fridge so they don’t go to waste.

In the pot:

  • 1 red bell pepper
  • 1/4 onion
  • Leftover zucchini/onions
  • 1 bunch spinach
  • 2/3 box whole wheat pasta

To season:

  • crushed red pepper
  • oregano
  • basil
  • tons of garlic
  • salt and pepper
  • Parmesan cheese
  • Olive Oil

Dinner was solo. I’m taking Kev a container of pasta for after his soccer game and then we are off to Breckenridge.  I don’t think we’ll have internet access so the next time I post may be Monday!

Morning! The sun is trying to peak through the clouds.  Regardless, I have a TON of energy today.  It may be due to the stop I made at Starbucks this morning. Don’t judge, yes, I have 2 cups of coffee here. Breakfast consisted of more oats!

The combo:

1/3 cup oats

2/3 cup water

1/2 banana (I ate the other half)

1 tsp flax seeds

pinch of cinnamon

1 tsp brown sugar

1/2 T granola and flax on top

1 tsp Justin’s peanut butter

Nonfat Misto

Misto and Roadie Coffee

Peanut Butter Banana Oats

Breakast is served

Last day in Ft. Collins! Drive time!

I was very surprised to wake up without being sore!  The spin class was still very challenging and different, but I guess I should try and work it a little harder next time.  I was afraid I wasn’t going to be able to walk today! My morning was fairly rushed as I had to drive all the way to Ft. Collins. I gulped my yogurt down and had my coffee to-go today.  Note to self, better planning for tomorrow…
