Jake, meet Chataqua and the Farmer’s Market!

This little puppers name is Jake. Jake was a rock star today. He found this huge stick at the very beginning of the hike and did not put it down until we were back down the Flatirons. Everyone loved seeing Jake with his big stick. He had his picture taken several times by the puperazzi! He’s famous.

After our hike, we went straight to the Farmer’s Market to pick up a few things for dinner tonight. All the fall vegetables are now out….kale, apples, pumpkins, winter squash, and the late late season corn and tomatoes.

We had a taste test when we got home. The two tomatoes to the left are from the market and were 10000 X better than the plastic tomato on the right. The small red tomato in the center was by far the best of the group. Not as good as the tomatoes I had this summer in California, but still delcious.

This here is a massive massive loaf of bread from Udis. It was made with wheat flour, spelt flour and had whole flax seeds in the mix. We turned a few slices into dippers for olive oil.

You can see the flax seeds here…dipped in the olive oil (pepper, crushed red pepper flakes, oregano, garlic powder, onion salt, and olive oil).

Apples = Jonagold. One of the 15000 varieties available in the states! (Learned that last week.)

I was just checking out some of the other things on the table when I heard one of the workers describe how to cook delicata squash (pictured below). He said it’s good baked with cinnamon, cayenne, and a bit of butter. It sounded so good that I had to buy one!

Officially exhausted. Time to cheer on Michigan State’s football team!

Good Morning! I finally have a day with enough time for oatmeal! This is probably one of the best bowls of oatmeal I have ever made! This bowl was made with 1/3 cup organic oats, 1/3 cup water, 1/3 cup organic 1% milk, 1/3 fuji apple, 1/3 T flax seeds, 1/3 T brown sugar, 2/3 T Justin’s Organic Peanut Butter, and tons of Savory’s Cinnamon!

YUM!

Alongside another cup of Cranberry Apple Zinger by Celestial Seasonings.

This was right before the PB melted. :)

Last night my quads were a little tight so right before bed I stretched and stuff. I was kind of excited to wake up and actually be sore (I know, sick) but I’m not! Not sure if it was the stretching or maybe I still didn’t push myself hard enough at spin. Regardless, a great class! Have a Happy T.Tuesday!

Back to Normal!

I have off today! Time to get things cleaned up and organized. The past few days have been a little insane. Bailey got sick and is just getting back to normal herself. She’s back to running around the yard, sitting on her favorite table, and chasing Sir Feets. I’m also back to taking photos and blogging! Thank goodness! I felt like something was missing the past few days.

These are the flowers I got for B.

Last night, we made a great dinner. Broiled salmon, sauteed kale, whole artichokes, and whole wheat cous cous.

This is the organic kale I bought a week ago and finally got around to making! It was one of their ‘varietals’ and was not as curly as the kale I’m used to, but still very very good.

These guys were stuffed with parmesan cheese right after they were finished steaming.

We broiled the salmon with lemon pepper seasoning and dill. The whole wheat cous cous was made with a bit of Italian seasoning and seasoned salt. Our kale was sauteed in onions and garlic. I like think this was a very healthy dinner. Whole grains, healthy fats from the salmon, tons of vitamins and minerals from the kale and artichokes!

This dinner was accompanied by a “Dirty Ho”!! Half a cherry Lambic beer and half a Hoegaarden beer.

Nicole, Brie, Brooke, Kevin, Max and I had an Easter Egg Dying party last night! We had two different types of dyes- neon and original. :) Here are the beauties we made!!

I almost had a few of these eggs for breakfast, but decided since I was home and have the day free, I would take some time to make oatmeal! These were the creamiest sauciest oats I have had in a long time!

In the bowl this morning…

  • 1/2 cup oats
  • 1/2 cup water
  • 1/2 cup milk
  • 1.5 tsp brown sugar
  • 1.5 tsp ground flax seeds
  • 1/2 chopped apple
  • 1/2 tsp Savory’s Cinnamon

On top…

Time to take care of my car!! Oil change, new tires, new brakes… hope a few of these things can get done today! I’ll probably hit the gym later this afternoon too. Thanks for bearing with  me the past few days.

My goal for the rest of the week is to learn strategy for Othello.

The snow is still coming down and to keep cozy, we made peppermint schnapps hot chocolate before dinner. Thank you Nicole for the great idea!

We melted several squares of dark chocolate and some chocolate straws in 1% milk.

Pizza was on the menu for tonight!

Sliced onions, red pepper, fresh mozzarella, and fresh basil.

Topped with dried oregano and basil.

New toys!!

Cannisters for my coffee and my ground flax :) I have 5 more empty jars…not sure what to put in them yet. I LOVE the mini jars!

Time to search for strategy guides. I will win.

Banana Fluff

Good Morning! I’m feeling 1000 X better this morning. So much better, that I decided to have a cup of coffee and a bowl of oatmeal.

In the bowl for two:

  • 1 cup oats
  • 3/4 cup water
  • 1/4 cup milk
  • 1/4 tsp cinnamon
  • 3/4 banana (way too much because it was a HUGE banana)
  • 1 tsp flax seeds (I really need to get a grinder!!)
  • 2 tsp brown sugar
  • Topped with almond butter and almond slivers and more cinnamon!!

I also made a big plate of fruit! YUMMY!

The oatmeal had a little too much banana flavor for me. I’ll have to cut back a little next time. The great thing about having bananas in oatmeal is that they make the oats fluffy! They almost melt into the oats and sweeten them naturally. I have two more nanners. I need to use them up before they get too mushy on me. OR I’ll have to make more blueberry banana bread….

1.5 hrs till soccer. I’m subbing for an indoor game today because my outdoor game is cancelled. There’s still too much snow down. Hope my body has recovered enough for me to play!

Pink Bubbles

After a brief bit of sunshine yesterday, the weather had turned cold and snowy/rainy. So, when I woke up this morning, we had a fine dusting of snow! To warm up, I made my usual bowl of oatmeal. (I had planned to use my almond butter finally, but someone forgot to put it in the refrigerator after opening it! I had to throw the jar away because I’m not sure when it was opened. :( Regardless, it was still delicious.

My oatmeal this morning was:

  • 1/3 cup regular oats
  • 2/3 cup water
  • 1/3 chopped apple
  • 1 Tsp brown sugar
  • A few Sprinkles of Savory’s Saigon Cinnamon
  • 1 tsp Bob’s Red Mill Golden Flax
  • 1.5 tsp Justin’s Peanut Butter

In the cup:

As soon as I got to the office, we made a big pot of fresh coffee. Here is my cup next to my cup of Immuni-C. I have a tickle in my throat and thought this might help. Check out those CRAZY BUBBLES!!! My mom always told me, “drink extra fluids” when I didn’t feel well. So…I had these two cups and then a bottle of water on top. The little guy’s name is Ralphie, but I call him CP. He’s a member of CU and Kev gave him to me when he started school. He sits in front of my monitor to keep me company. :)

Thankfully I had packed my lunch last night, again, there was barely enough time this morning to get everything done! This whole “spring forward” thing has throw me off! Ha! I had leftover pasta bake on top of the spinach, 1 sliced red bell pepper, yogurt (blueberries added at the office), and balsamic almonds! These babies came from Target and are SO good!

The sun finally came out this afternoon and my coworker and I decided to get some sunshine and walk to DazBog.  I got a medium ‘English Breakfast’ tea and added a bit of honey. Totally hit the spot and helped my throat.


Flax On

Mornings are definitely better when they start with oatmeal.  Today we broke out the flax seeds. This was my first time using flax directly on my oatmeal.  I liked it! The seeds add a crunchy/nutty flavor to the oats. I just feel healthier eating a few of these on my oatmeal.

Toppers of the day: lil brown sugar, cinnamon, and flax! :D

This cup does NOT have a lid to it.  Notice how FULL the cup is.  I’d say a good bit of that was spilled in my car and on my lap on the way to Ft. Collins today. Oopsies! The price we pay to drink coffee.

Lunch was at my site again today (lunch pics will resume tomorrow). :) Before heading home I made a pit stop at a secret location. My coworker and I picked up some things to bring back with us as surprises.  It will be a tasty treat for sure!

On the long drive home… as soon as I got a few miles away from my house, all I could think about was having a bit of the taboule I made last night.  Mmmmm!!!!
