There’s something fantastic about cereal. Nice crunchy flakes and sweet cold milk. mmmmm. I rarely have a bowl of cereal in the morning because I’m usually running out the door and it’s not portable at all. Today, I decided to take a later bus to work (spent 2 hours on the bus coming home from work last night) and have breakfast at home today.
Special K and my to-go cup from Soon Ei filled with the usual Dunkin’ Donuts French press coffee.

Two Days Worth

Yesterday was a super busy day! I woke up and started getting ready for work as per usual, but decided to do a few sets of crunches, squats, calf raises and girl push ups. Maaaybe I will try regular push ups later this summer. So glad I got a bit in before work! Speaking of work, it was insane!! I had something due and we sent out the notification/announcement emails and I was slammed with lots of disappointed people.
so sad and hard to deal with especially when I have no control over who is awarded grant money.
Anyways…I started the day off right with a cup of coffee DD stye from my French Press. Mmmmmm. I knew I had one more cup of instant oats at the office but wanted to supplement it with extra plain oats. Instant oatmeal that’s flavored is often too sweet for me. I bought a big bag of organic oats a few weeks back and keep them in the old Quaker oats container for easy access. The instant oats are 220 cals + about 75 from the plain oats…I don’t really count calories anymore but I was just thinking about it yesterday.
For lunch I packed a veggie sushi I bought from Whole Foods on Monday as well as some cherries! Sooo goood! For snacks I had the leftover pita chips, snap peas w vinaigrette, and an orange. Yup, cherries in a cherry bowl.
Due to the emotionally/mentally exhausting day, all I wanted to do was relax-ish. Kev and I hit Sprouts for the weekly groceries. In my bags: mango, nectarines, yams, cereal, a new kind of organic wheat bread, peanuts for next Tuesday’s baseball game, a 100% all natural pork tenderloin, yellow bell peppers, whole wheat linguini, two sauces, and strawberries.

I was starved by the time we left. As my “appetizer” I had a glass of champagne at Kevin’s house and we headed to Bombay Bistro in downtown Boulder. As a starter they bring you garlic naan with a tablespoon or so of chickpeas and onion relishy type of concoction and a pureed spinach sauce. The bread desperately needed a sprinkle of salt, but I LOVE salt on everything.
My entrees were a vegetable curry with basmati rice as well as saag with chickpeas and more basmati rice. Kev had a hot curry sea bass that was delicious!!
So, it’s not the prettiest, but it’s delicious and spicy and fantastic.
The saag and basmati rice was taken to be my lunch the nest day.
I don’t know what changed, but I loce love love curries now. Before I thought they were gross and smelled like b.o. Hehehe.

As much as I would like to have a nice calm morning, it never seems to turn out that way. I ended up putting cereal into a bag and called it breakfast! UGH. I had my usual cup of coffee and the bag of cereal at the office around 8-9 this morning. Work has been extremely stressful so I took an early lunch and had my leftovers, an orange, and a cup of chicken noodle soup.
My soccer game tonight was at 7:40 so I had to have an earlier dinner so I would have time to digest. I had a nectarine, a few carrot sticks, a bowl of soup, and a bit of pasta.
I had one slice of this orange and gave the rest to Kev.
This is the whole wheat orzo that I bought from the farmers market a few weeks back. It turned out so-so. I’m not sure I would even call it good. It was jut edible. We had a mixture of olive oil, herbs and spices on the orzo. I think the pasta needed to be cooked in more water (it was a little gummy) and cooked longer? Ah well. I’ll try again.
Now this bar of chocolate was GREAT! They put a love poem in each one!
If the picture came out just a bit more clear I could have shared it with you. I had a few of these squares right before soccer. We got our butts kicked at soccer tonight. As we usually do. This team honestly doesn’t belong at the level we are playing at, but for some reason they let us stay! Play up to play better!
In need of chocolate~

So I actually didn’t end up ever having contact with a computer until this evening. In work, we are currently under an intense review that has taken up all my time! For lunch, I had packed a few snacks (cherry tomatoes, strawberries, pretzel sticks, and the rest of the hummus). In addition to the packed snacks, I had a huge Greek salad. The salad was loaded with fresh parsley, mixed greens, cucumbers, tomatoes, tons of feta cheese, olives, and a delicious lemony vinaigrette. We had a semi-working lunch and it was not the best time to whip out the camera.
Dinner was completely random last night and I had a HOT DOG and a sausage and cheese plate. Probably one of the un-healthiest dinners I could have had, but oh so good and oh so perfect for the warm weather we are having.

Back to today- breakfast was a simple bowl of shredded wheat cereal with milk. I packed a Tupperware of beef stew, a banana, an apple, a bar of dark chocolate, and a cereal bar. Pretty much as soon as I got to the office, I turned into a gofer and two of us went on a Starbucks run for the office. :)
My cup—grande drip coffee with a Splenda and a little skim + a little half and half.
Between yesterday and today, all of the above food was consumed! There is NOTHING left at work for snacks! The cereal bar was eaten mid morning. I was starved around 10 am this morning. The entire bowl of cereal wasn’t consumed and was not enough to hold me over. The apple I had this afternoon. Around 2 I felt like I hit the wall and my brain wanted to shut off. Kev told me that apples are good for energy so I had the apple at 2 when the sleepies hit. (Maybe not enough sleep last night!?!?)
The chocolate bar was devoured within minutes this afternoon. We are all under a bit of stress and this was desperately needed! 1.5 days left of this review and then hopefully we are done!! I had three lil squares. Delicious goodness here + antioxidants, right!?
Streamlining

Good Morning! I have decided that there just aren’t enough hours in the day to get everything accomplished! Maybe a goal for me should be to organize myself on the weekends to have easier mornings. On the bus, I started to read my new Real Simple magazine. I love this magazine! It’s their 10th Anniversary and they are celebrating by “giving” people more time through their time saving techniques, products, and tips. This was the best timing for this magazine EVER! I can’t wait to finish reading the whole thing!
Back to this morning…
I made my coffee at home today (usually drink what’s at the office), and had a bowl of cereal. This is just like Frosted Mini-wheats, only a natural generic kind! It is pretty high in calories as far as cereals go, but that’s actually OK with me. Each bowl also has 5 grams of protein and 6 grams of fiber! That will definitely help keep me full till lunch.

Oh and last night I snacked on these jelly beans. My sister gave me a beautiful candy dish for my birthday. Behind is a picture of us right before I moved out to Boulder. We were at McCormick and Schmick’s seafood restaurant in Baltimore, Maryland. One of my favorite restaurants for sure. Each day they bring in fresh fish and write their menu accordingly. More restaurants should follow this method!
Case of the Mondays

It’s always so hard to get out of bed on Mondays! I had to convince myself that it was a good idea to get out of bed! Phew! I was happy to have a bowl of cereal this morning. It is a box I found at Sprouts this weekend. It honestly tastes just like Cinnamon Toast Crunch! YUMMMMM

These are the snacks I packed for lunch…
I should have packed more leftovers, but I decided I wanted to have a salad for lunch instead. I ordered the Chef Jam from Greens. I subbed out the portabella mushrooms and added bell peppers and fresh mozzarella. Also on the salad: romaine, roasted cauliflower, beets, candied pecans, carrots, and a green house dressing. Totally hit the spot.
A few hours later I got the urge to walk to Starbucks. Instead of coffee I ordered one of their Tazo teas….a grande passion tea.

I don’t have to be at work for a few hours so I got to sleep in and get a few ‘desk-job’ things done for work. It’s so nice to be able to do work while comfy! My work to-do list is about a mile long and I desperately need a few days in the office. Ah well.
On to breakfast. I’ve been craving cereal for a few days and finally had milk to have some, thank you Brooke! Along with the usual, Dunkin Donuts coffee.
AND THEN! I decided to make guacamole! The avocados seemed ripe until I cut them open, but thankfully, it turned out OK. I had to sample along the way to make sure it was seasoned properly.
(Only part of the onion was used, and salt was added.)

Snowy Morning

Woke up to a few inches of snow again. Gonna wear the snow boots to work again.
This might be my last day in the office for a good week or so, I need to get that to-do list DONE! I have to be back to watch a soccer game and hit up Mountain Sun for another creamy stout!
I had a normal boring breakfast this morning. Rasin Bran, Orange, and Coffee. Dunkin Donuts coffee, my fave. Wish they had actual stores here in Colorado! I only know of one in Colorado Springs….
Oh and packed up these bad boys for lunch! I decided I’m going to get soup from the restaurant next door today. It’ll be nice to have something hot on a snoooowy day. Ta Ta~
Surprisingly Full

I’m super surprised at how full my bowl of cereal has left me! This morning I had a pretty big bowl of Raisin Bran with skim milk. No photo, but trust me, it was a good sized bowl! For the road I took a banana and a to-go cup of french press coffee.
I didn’t actually get around to eat this guy, but maybe later! For lunch I had a big ol plate of leftovers plus a bowl of yellow cherry tomatoes. I made a homemade balsamic vinaigrette dressing and drizzled a bit on top with some salt and pepper.
These tomatoes were fabulous! Sweet and had a nice crisp taste to them. I’ll definitely have to buy more of these guys soon. Off to get some more work done!
