I stole a piece of Kevin’s blueberry banana bread.
Of course with my cup of coffee. My stomach wasn’t feeling too hot this morning so I didn’t want to eat anything too big. This was absolutely perfect. Delicious and not too much to weigh me down.
I got to eat breakfast while waiting for my ride this morning. One of my coworkers was nice enough to pick me up on her way up north. It was a nice and relaxing way to start my week! Happy Monday!

Look what I found at the store this morning! The cup that I have wanted, and it was on mega sale! Weeeee!
Inside is a delicious misto from Starbucks. For those who don’t know, a misto is Starbuck’s version of a cafe au lait (half coffee and half steamed milk). Check out the frothy goodness on top! It was even higher in the cup, but I might have slipped a little in the snow coming up the stairs this morning.
For breakfast we made blueberry pancakes! I made a normal batch for Kevin and an oatmeal-blueberry version for myself.
The mix + cinnamon + vanilla extract + blueberries.
I added extra milk to this because the oats will soak up some of the liquid. I let the batter sit for about 15 minutes to soften the oats before cooking.
Ok, so not the most beautiful pancakes, but Kevin said they tasted OK, especially covered in blueberry syrup!
While I made these pancakes, Kev made blueberry banana bread. He is definitely a better baker than myself. Baking is something that I have always struggled with, but I hope to improve in this area. We have made this bread a bunch of times and it always comes out perfectly. Thank you Mrs. G for the recipe!
