Oatmeal vs CornDogs

Go RAVENS! Still a Baltimore fan even though I have moved to Colorado. For the game today, Kevin’s housemate went on a shopping spree of mini doughnuts, frozen dumplings, mini corn dogs, bagel bites, and mozzarella sticks. THANKFULLY I had already started making oatmeal for Kevin, Ben, and I. After those little mini corn dogs came out of the oven, I couldn’t help myself and had 2.5 of them.

For 3 Bowls:

  • 1 1/3 cup oats
  • 1 T brown sugar
  • 1 t cinnamon
  • 2 2/3 cups water
  • 1 Jonagold apple chopped (from the Farmer’s Market!)

Toppings:

  • Natural peanut butter (the almond butter was too cold to get out of the container to stir!)
  • Trail Mix (dried blueberries, craisins, golden raisins, and mixed nuts) chopped smaller
  • Extra cinnamon

Forgetful Lunch

I totally forgot about the luncheon that I had at work today. Actually, all of us did. Oops. We all saved our lunches and headed to the lunch. I had pre-ordered my lunch and had a grilled chicken caesar salad. The salad was mostly iceberg lettuce, parmesan cheese, croutons, and a ton of chicken. I had about 1 cup of the salad and called it quits. Iceberg lettuce just doesn’t do it for me. I did eat the oatmeal raisin cookie though. By the time dinner rolled around, I was very ready to eat. Kickball was canceled because of a heavy thunder storm that rolled through. As you can see by the salad picture below, the sun came out. True Colorado weather. Rainy and thundering one minute, bright and sunny the next!

Salad- mixed greens, cucumber from a coworker’s garden, feta, blueberries, and chopped almonds. We probably have this style of salad more than any others. Nice, light, and salty/sweet. Best of all worlds if you ask me.

Kev made these pork chops in a little flour, garlic, soy sauce, and pepper. My rice was topped with more chopped almonds for some crunch. :) I might have had a second pork chop…. at least they were thin!!

Theeennn we went to Glacier for some ice cream! It’s just a 5 minute walk from Kevin’s house which is way too convenient! I had the mint stracciatela and Kev had Funky Donky. Pefectly creamy and delicious. They flaked the chocolate in mine which is EXACTLY how I like to have my chocolate in my ice cream.

Camping Weekend #2

Instead of boring pictures of popsicles, smoothies, ice, and more popsicles, I decided to skip this week of blogging. The strep kept me from work…and eating normal food for a good few days. Thankfully the pain is gone and my body is once again accepting real food!!!

We are once again camping. Not my ideal choice for just getting over strep (and still on antibiotics), however its what we are doing. To prep for the weekend, we made blueberry bars and breakfast burritos! The bars have an oat base and topping with tons of blueberries in the center. They only took about 30-40 min to make and bake! We will definitely have to make these again. Next time, healthier. More oats and maybe some flax and less butter and salt. Here is the smoothie we had while making the bars – frozen mango, peaches, cherries and Greek yogurt.

This is the crumbly oat mixture. It’s pressed into the bottom of a pan, the blueberries are added on top and then a little more crumbly mixture on top.

After 20 minutes of baking…they come out ooey and gooey and delicious. After cooled, they were cut into bars for the camping weekend.

The burritos were made incorrectly. I was so proud of myself for prepping all the veggies…

Eggs and sausage and then rolled up. But they weren’t supposed to go in the tortillas till AFTER the insides were cooked on the campfire!

This weekends adventure was oh a trail off of Idaho Springs again. Again, its about an hour or so from Boulder. We stopped to get Slurpees from 7-11 because it was 95 degrees out!!!! I had a light one of peach and mango topped w some Mountain Dew stuff. They sure are good, but loaded with tons of bad stuff (fake sugars and too many real sugars). Oh well, once in awhile I think its OK. This was after my iced coffee and tortilla w cheese and salsa. Way to start another weekend of healthy eating. Ugh!

Off roading is always a bumpy adventure. Thankfully in Kev’s Jeep (and not in my Scion… I ended up having to replace ALL my tires this week after my awful off roading in Cripple Creek for work!!! Gggrrrrr). We drove for about 5 hours until we finally found our campsite. We played games, toasted marshmallows, and cooked soup on the fire.

This morning we put the burritos on the hot coals and they burned to a crisp!  If you can imagine black coals, that’s what they looked like. I had a blueberry bar and an apple instead. So sad. Time to think about lunch now that we are home. I need some time to digest before soccer this afternoon!

I am finally back from Fort Collins! My department was hosting it’s annual workshop there this year. It’s a pretty intense workshop. We wake up at 6 and go straight up until dinner time. The few days we were there were exhausting! I was soo excited for workshop to be over on Wednesday because Kevin’ flew back to Colorado earlier in the day. He got to stay back in Maryland a few extra days. He had time to go to the store and pick up a few things to make dinner.

Chicken Salad and kettle cooked chips. Super summery meal. Then he made a massive massive ice cream sundae!!! From here on out, I am not eating ice cream for a LONG time! I’ve had way too much ice cream!!

Chicken Salad w/ Grapes

  • 4 chicken breasts
  • red grapes
  • celery
  • red onion
  • mayo
  • salt and pepper

Poach the chicken breasts and then shred to bite size pieces. Add halved grapes, chopped celery, and chopped onion. Stir in mayo to taste and add salt and freshly ground black pepper. Chill until nice and cold!

A few years ago, I went to a restaurant in Rehoboth beach and had a grilled caesar salad. Last night I was trying to think of something to go with the pasta Kev had at his house. I thought this would be a fun way to have our caesar salad.

To make: cut one head of romaine lettuce in half. Spoon on caesar dressing (I used a low fat yogurt based dressing) and then sprinkle with tons of parmesan cheese.

(The restaurant grilled the romaine half very briefly and then spooned on the dressing and cheese. It was warm and delicious! I’m not sure how to use Kevin’s grill so we had ours cold.)

The garlic bread was super easy as well. I cut a loaf of French bread in half, drizzled olive oil on top, and sprinkled tons of garlic powder and a bit of salt. One side also got parmesan cheese. Baked for a few minutes at 375, then broiled on high for 1 min.

This morning’s pancakes were more blueberry pancakes! I’ve also had pancakes a million times in the past few weeks. I had 1 regular pancake and 3 smaller ones with a bit of peanut butter. Right before eating I had a little lite syrup poured on top.

So, the past month or two have been a little rough on the eating well. This afternoon after work I hope to get a good workout in and hit the grocery store. While at home (on the beach) I had the opportunity to read my Cooking Light magazine so hopefully I can use some of their good ideas. The workouts need to be increased and the poor eating needs to be decreased. I’m leaving for California in 1 month so hopefully I can do better before the trip.

The last few days have gone by way too fast! I wish I had another week at home and at the beach!!!

Weekly Summary:

Last Monday, my friend and I ended up going to Dogfish Head Brewery in Rehoboth Beach for dinner. I had a bowl of the crab and corn chowder and I got their traditional plain pizza but it wasn’t the best and I had all of one bite.  I usually love strong cheeses, but these were a little much for me. Monday night was wild. Tuesday was spent napping and soaking in the sun on the beach until some family friends got into town! We had a tasty dinner at Cloud 9 in Rehoboth.

There was also a basket of calamari with a chili dipping sauce on the table. I don’t care for calamari so I left that picture out. I also had a crabcake to go along with my entree. Tooooo much food for sure!

Wed. morning I had a fruit smoothie and a cup of coffee. The weather was so hot and humid all the photos came out blurry! 95 degree weather + 10000% humidity is rough! The smoothie was made with tons of strawberries, blueberries, yogurt, ice and a bit of juice.

BLT sandwich minus the bacon. I had two of these… :) plus some more veggies. When there are good tomatoes around, nothing beats a good tomato sandwich!!

Wed. night my parents and family friends went out to dinner and my friend and I snacked on foods at North Beach. We tried to catch the sun setting but were a few min. late. Still, a beautiful view over the bay. Oh, I had a cheesy crab dip and Shell had sweet potato fries! Super healthy on this vacation!!! I was glad that I got in a few miles earlier in the day.

Thursday Shell and I went shopping! I bought lots of beachy things and lots of fun summer dresses. I went to lots of my favorite little shops and stocked up on things for the next year. I barely shop when in Colorado so I had to get it all in while at the beach. We pigged out on ice cream and pizza during our shopping spree.

Friday: The food below is creamed chipped beef. It’s a pretty disgusting mess, but on the shore, I had to have a plate. :) Later in the day, I had a HUGE Thanksgiving dinner style sub with turkey, cranberry sauce, and stuffing.

On this trip, I have had more ice cream cones than I have had in the past year, crab almost every single day at least once, tons of random bites of food here and there. I am really feelin’ the bulge now. :) We could not have picked a better week for the beach. We had great HOT and sunny weather! There were two massive thunder storms which helped cool things off, but it was still 85-90 out. We took tons of walks every day and I did squeeze in a few more runs along the beach. Can’t beat that.

To bring a little beach home, I bought Fisher’s Popcorn for my family and Kevin’s family as well as some Salt Water Taffy for the office. 

Today is my last full day back east! I’m off to Northern Virginia/DC this afternoon to visit some of my very best friends! Here is my brunch-ish meal that I had this morning. Tomato soup and berries. Totally random, but when I’m eating solo, I like random foods. So jealous that Kev is up in NY for a wedding and still has several more days at home. I’ve gotta live up the last few hours I do have here! Pool time now!

A Healthy Start

Kodiak Cakes were on the menu for breakfast today! Yesterday, Joel found this box at the grocery store and I was soo excited to try them. I’ve heard many good things in the blog world about this mix so I had to make them right away! The mix is whole wheat, oat and honey. I had about 1/3 cup of the mix which made two pancakes at 130 cals, 4 grams fiber, and 7 grams of protein. I covered mine in Justin’s peanut butter and dipped them in blueberry syrup.

1 cup mix + 1 cup water + extra cinnamon!

Kevin’s had blueberry pancakes with blueberry syrup.

I would say 2/3 of these blueberries got added to the 2/3 of batter Kev got. He says that pancake batter is just a carrier for blueberries.

Lunch was leftover salad from last night with baby carrots added, an apple, a packet of Justin’s organic peanut butter, and when I got home a bowl of vanilla yogurt with granola and sliced almonds.

I’m about to get into some more work and have a cup of tea. Today’s tea choice is Celestial Seasoning’s Honey Lemon Ginseng Green Tea. Just read the box and found out their boxes are made with 100% recycled paper, the teas are 100% natural, and CS has been working to establish sustainable harvests and fair wages (for 30 years!!) soooooo I’m feeling extra good about my cup of tea this afternoon.

My legs and abs are burning today! The lunges, crunches, and plank really really tired me out! Early evening time, I went on a bike ride from my house all the way up to 9th St. which is really far! It was about an hour round trip. The hill was killer on the legs and the lungs. I need a bike of my own…borrowing one is great, but I need to get on that. Who lives in Boulder without a bike!?

Dinner was super boring- leftover spaghetti and garlic toast. During kickball I had a beerskie and maybe a mozz stick or two or three after…..  Um, so we won our game! We are officially the winners of the bottom half! Wooooo!!!!

First 10′er

This week starts the beginning of the 4- 10 hour day weeks! That means, I get every Friday off for two months! My new hours at work are going to be 7:45-6:15. Unfortunately, this cuts into kickball and soccer time a few times, but having an extra full day off per week will be well worth it. Today, I made myself a cup of FP DD and a bowl of cereal for breakfast. After the first bowl, I had a bit more to use up the extra milk.

Lunch was leftover margarita pizza, Horizon’s vanilla yogurt w/ blueberries and strawberries, and a nectarine. For snacks I packed a ton of little things. This will be for the next week and a half or so. I made sure I had these snacks because I’ll be working longer hours and going straight to the gym which will keep me out of the house until a little after 8 PM.

I have not been to the gym in what seems like forever! It’s just been so nice out, I would rather enjoy the sun and run outside! Tonight, I did a pretty intense elliptical workout. I varied it up a lot and had the resistance high and the track low and I also did the track super high and the intensity pretty high.  The muscles that are worked when the track is super high are different than when it’s fairly level to the ground so it made it much easier for me to up the resistance when it was high.

This morning I read a Runner’s World magazine article on figuring out how fit you are. Two tests stood out in particular to me.

Test 1: Run ¼ mile (400 M on the track).

<60 seconds= Great

60-70 seconds = Good

>71 seconds = Fair

Test 2: Run for 30 minutes

>4.9 miles = Great

= Good

3.9miles?? = Fair

This is super super fast! I’m only fair in these categories for sure! Kev and I also did the other tests last night which included joint mobility, flexibility, and balance. We did pretty well in those which made me feel a little bit better. A friend from home and I might do the running bits the day I go home! Speaking of, 9 more days till I get to see the family!!!

Back to dinner! Kev grilled up some steaks, steamed green beans, and made some sundried tomato and basil rice. We were starved and ate the steak and beans before the rice was done. This was def the best steak I’ve had in a long time!! I ate the majority of this big honking piece. I left the rest because I’ve def. had more than my fair share of red meat in the past two days.

Blueberry Pie!

The night before Kevin’s big exam, I made a blueberry pie for him.  It’s his absolute favorite so I decided to make it for him.  I used his family recipe and tried my best to make it as close to how he’s used to having it. I def made a few mistakes along the way, but it was a good first solo attempt.

Pie crust with 4 cups of blueberries covered in flour, sugar, and lemon juice. All baked for about 45-55 minutes.

That night for dinner, Kev made chicken with salsa, a Spanish rice, and brussels sprouts.

I had maybe half the chicken, extra rice, and extra brussels. :)

A pretty pitiful office breakfast. The oatmeal was just OK. I’m used to having the homemade kind and this doesn’t even come close!! In a pinch, it’ll do though. This was an insane week of work.  After being away for 3 days, coming back and having only 1.5 days in the office is waaay too much! There was a huge luncheon on Thursday so that took up half the working day. The night before, I did work till close to 10 PM so I made up for the lost time…

Weekend time!!

Saturday, we went to Reuben in Boulder. It’s a burger place we’ve been wanting to try. It’s pretty good! The fries were fantastic. We had garlic aioli sauce and curry ketchup with our fries. My burger was the ‘Mountain Biker’ a 100% all natural beef patty with arugula, swiss, and sliced avocado. On the side, a small caesar salad.

While downtown, we went to Savory. This is my favorite spice shop! They let you sample all the spices which is wonderful! I went in for a curry powder and ended up with a Himalyan pink salt, a medium curry powder, and graham masala spice. Hopefully I’ll get to play around with those this week!

Kev bought a steak rub, so naturally, we had steaks for dinner! As if we hadn’t had enough red meat and potatoes….

This blend is FANTASTIC! I strongly recommend you go and try this spice and or others at the store. I promise they will be great. Promise.

After dinner on Sat night, we headed down to Denver to pick up our race packets and then all the way up to Ft. Collins for Kevin’s cousin’s boyfriend’s graduation party. They are moving to Texas so we had to say goodbye and congratulations!!! :)

This morning was an early early morning! We ran the Colfax Marathon Relay! My coworker Sadie was nice enough to start up a team and got 2 others from my office to join in! Kevin volunteered (kind of) to do the last leg. I had the third leg, 7.4 miles! The first 4 miles were all uphill and were KILLER! I have never ever ever been so glad to go back down hill EVER! I handed off to Kev who ran close to 5 miles. He killed it! He ran 7:30 splits! So impressed!

We all got a delicious BBQ lunch at the race finish line, walked around and got lots of free products to try, and had a free beer! What a beautiful day today was! It was sunny and 65 degrees. We could not have asked for more perfect weather! So glad we got to run this race. Looks like I was the only one to lose her bibb….mine was purple :)

I just had my aunt, uncle, second cousin, first cousin and his family with two kiddies over for a BBQ dinner. Hope they can send me the pics and I’ll post them soon. What a great family filled weekend!!

Salad & Spaghetti Sunday

This here is one fine salad. Mixed greens, sliced strawberries, dried blueberries, pecans, and gorgonzola. Talk about antioxidant party. :) I used my citrus balsamic again and a little olive oil to dress the salad.

The spaghetti sauce was made with 1/2 white onion, 2 cloves of garlic, 1-14 oz can of tomatoes, and lots of herbs. We also added a bit of ground beef.

Unfortunately, it’s work time. I’ll have to pack for Telluride tomorrow morning.  Just didn’t get around to getting that done…. Night!

Lins and I found a coffee shop in Salida called the Simmering Cup. This is the CUTEST coffee shop ever! It has a shabby chic look to it and the coffee was fantastic. After drinking hotel coffee, this tasted like pure love.

I got an iced coffee and it is creamed up with the milk behind it!

Each sitting area had different furniture and sitting arrangements. The table right in front was a table with a chess board on it!

and… finally HOME again from my trip to Center, Colorado. Traveling always makes me happy to be back in Boulder. My plants are starting to sprout! I’m a little worried that they have a white fuzz on them, but hopefully that goes away. One of the mesclun greens has sprouted a leaf! Woo! Oh, and the tomatoes and parsley look happy and healthy. :) As soon as more start to sprout, I’ll share some more growing pics.

I knew I wanted a smoothie so I made two delicious frozen berry smoothies. These guys are in my birthday cups from last year from Pier 1.

Into the smoothies:

  • 1.5 cups frozen strawberries, raspberries, blackberries, and blueberries
  • 1/2 banana
  • 8 oz Cascade Farms blueberry yogurt
  • handful of ice
  • 4 oz grapefruit juice
