Goodbye to a wonderful ski season and to our beautiful ski haus! I’m happy to report that I skied 20 times for a total of 340,000 vertical feet!

Where many dinners were cooked and devoured after a day on the slopes. I will admit, there was a good amount of pizza consumed. ;) Jersey Boys Pizzeria was our savior!

Now it’s time to bring in spring! Last nights dinner was crab dip, French bread, and a spring salad.

This was a bowl of mixed greens, feta cheese, sliced almonds, and each had half a pear. The vinaigrette was my standard balsamic vinaigrette. Simple and delicious.

Oats on oats

Morning! It’s a bit chilly here and I needed something to warm me up this morning so I decided on a hot bowl of oatmeal.

1/2 cup oats, water, and skim milk
Cinnamon
1T applesauce
Brown sugar (bad mistake this was too sweet)
And topped w crunchy PB and granola (more oats!!)
A large banana sliced in the side

I honestly think that peanut butter or other nut butters are the absolute best on oatmeal. Super delicious and it helps jeep me full.

Off to drive for a few hours now. I don’t know what, when, and where lunch will be today. ;)

Bacon infused bourbon

It’s now Sunday around lunch time and I have an indoor soccer fame soon. U had cereal and tea for breakfast and I’m starved but have to play soccer soon. About an hour ago I made coffee and then broke unto the Kashi crackers with Adams organic peanut butter.

Time to go play! Then it’s BBQ time! My body needs a rest after thus though! Yesterday I went running, did walking lunges, kicked the soccer ball around, shirt bike rude, then three the dodgeball around!

Potato Pancake Love

German inspired eating!

Potato pancakes made from my housemate’s recipe box, pork, sauerkraut, and applesauce.

The best part…the potato pankcakes:

1. Grate 3 potatoes and 1 medium onion. Let the mixture sit over a colander to drain. Squeeeeze liquid out!

2. Separate 3 eggs. Use 2 egg yolks for the first part. Add salt, pepper, and 3 T mazo meal flour to a bowl. Add potato and onion mixture to combine.
4. Whip the 3 egg whites till shiny with stiff peaks. Gently fold whites into the potato mixture.


These are amazing!!!! You must try these! The best ever! Except for some I had at a lithuanian festival a few years back……



Is that not love??

The pork…it was pretty good. It has a dry spice blend from Savory spice shop. Cooked stove tip till medium well. Thank goodness for good spice blends!

Sauerkraut was made w onion, an apple, and veggie stock. The usual chicken stock was definitely missed. Veggie stock just doesn’t have the depth of flavor like the chicken. So honestly, we could have really used something green with this meal, but it was so so so good!


Yum, I already want to make more potato pancakes! You MUST try this recipe!

A travel day for work!

If you haven’t noticed, I travel a lit for work. I travel locally and I travel across the state to small, medium, and large towns. This job has allowed me to explore the beautiful state of Colorado and has taught me of the very diverse terrain the state has to offer.

Today was a later start than normal so I was able to make a quick breakfast at home.

Chobani Greek yogurt (plain) with granola and honey. Coffee was picked up from Vic’s. Love the compostable cup!

Finally, my lunch that was eaten on site in a conference room that I’m working in. Couscous with cucumber, tomato, red pepper, red onion, feta, fresh lemon juice, olive oil, and salt/pepper. Fruit for snacks.

This is breakfast?!?

Let’s be honest. Some mornings do not go as smoothly as we’d all like. I packed my breakfast of a cup of yogurt, a bag of granola, and some fruit. After being at the office for an hour or so (after missing the bus!!!!!) I was ready to eat. It wasn’t until then that I noticed that the yogurt had expired and I had taken someones from home. Oops! I was soo hungry and the only option I had was to use the little milk I had in the office refrigerator. Pitiful breakfast!

The fruit was delicious though! Nice and ripe and juicy. My lunch was far less than par and my camera wouldn’t photograph something so gross so you’ll have to use your imagination. A bean burrito covered in cheese, iceberg, and plasticy tomatoes. They forgot salsa and guac. I hope dinner is better!

Home from the mountains: Part II

There are only a few weeks left before the ski resorts start closing down! We had to get in at least one more weekend of snow before the end. it seems like yesterday that we were going to the Warren Miller film to get psyched for the skiing and now it’s almost over!

To help bring this season to a close, a very good friend of ours came for his second visit with his cousin.

This weekend had two firsts for me. I went to the very peak of the mountain off the Imperial chair at Breckenridge and I went up a T bar chair lift!

I think I’ve made some good steps this year improving my ski skills. 20 days on the mountain! Plus 3 snowshoeing adventures and a tubing day! ;)

Home from the Mountains Part I

I’m finally home from a week in Keystone, Colorado. My work hosted a conference at the beautiful Keystone Lodge and Spa/Conference Center. The theme for the conference was Nutrition Trends. For the first time ever, we also had a Bake Off competition for any participant to enter. Each entry had to be a healthy baked good. The conference went over extremely well and I’m already excited to start planning for next year. I even know what theme I want it to be!

For two nights we held optional activities for people to do. The first night was a movie night and we watched, “Two Angry Moms”. The discussion after was GREAT! If it weren’t so late, we could have stayed there for hours discussing the movie. The point of the movie was not to show our personal opinions, but to open up the floor for discussion. The other night, we went on a snowshoeing adventure through the Keystone Nordic Center.



Things I learned:

1. Keystone used to be a HUGE mining town back in the day. The miners were searching for gold and silver. Many notorious miners came out of this town. They would gather up money and support from the town, build the front of a mine for show, and skip town with all the money! Those notorious miners are the names of the different runs on the mountain at the Keystone Resort! (Spring Dipper, The Frenchmen, Wild Irishman, etc.)

2. All pine needles come in bundles of 2-6 needles. The number will vary depending on the type of pine tree it is.

3 .There are lots of pine trees being killed by beetles here in Colorado. It’s actually not the beetle, but the holes in the trees will grow a fungus that will kill the trees.

4. Willow bushes have a similar chemical in them to aspirin. Back in the day, people used to chew on the branches as a natural pain killer.

I was stressing over what to do. For breakfast this morning because I didn’t think I had anything to eat. I got in my car and drove to Ozo coffee and found two pieces of fruit in my car! The banana was eaten before I got out of the car and the apple was made into oatmeal!

In the bowl: oats, cinnamon, cinnamon, H2O, and a small apple.

Does stress make you want to eat or does it make you not hungry at all? Stress makes me want to eat around the clock! Usually taking a walk or taking a minute to reorganize helps, but not recently! Here is my lunch… And my second lunch. I need to find other quick stress relievers for the office.

The tuna salad was made of: 1 can tuna, 1 stalk of celery, a small hunk of onion, 1 T light mayo, and a handful of pomegranate craisins. The craisins idea was stolen from Whole Foods. So good! Had the tuna with blue corn chips. The salad was after, which was good bc I needed some veggies! I ate most of it minus the falafel.
