Hello from Dewey Beach, Delaware! I’ve been here for a few days, but have not had internet! The people at my old beach house on the B-Team were nice enough to let me come over and steal some internet from them. The past weekend has been absolutely amazing.

Friday Highlights:

USA vs SLN soccer game at a friends house. He made us a great breakfast of scrambled eggs, sausage, and coffee. As soon as the game was over, Kev and I left for the beach. First stop was The Lighthouse for an orange crush cocktail. These are super delicious and super potent. I had one and stopped after that.

For dinner we went to Rehoboth Beach for Blue. It was just OK. My appetizer was this plate of crab balls!

The entree was more crab. Crab cakes. These were delicious because I haven’t had any decent crab in a long long time, but I was a liiitle disappointed because they had a lot of bread filler in them. Later that night we hit the Starboard. Man, I’ve missed this place. :)

Saturday Highlights:

Run on the beach and then walked around Rehoboth’s boardwalk with a few friends from home.

HUGE breakfast! Eggs, bacon, blueberries, toast, and of course, coffee.

Each year my sister and I celebrate our Airport Days. This is the day that we arrived when we were adopted. Soon Ei’s AD happens to be on my parents’ anniversary as well, PLUS it was also on Father’s Day! To celebrate, we all went out to a big seafood dinner and went to FunLand after for games! When we were little we used to play for hours at FunLand trying to win as many stuffed animals as possible.

For my appetizer I had Maryland Crab soup (different than the creamy style) and as my entree, I had carmelized salmon with parmesan cheese and my sides were sweet potato mashers and broccoli. MMMMM.

The lighting was incredibly low and my soup would not take! I had to use a flash here otherwise you wouldn’t be able to see any color other than a redish/yellow color. Still have to learn more about the camera first!!!

Sunday Highlight:

Michelle makes us all breakfast! Blueberry pancakes, sausage, and watermelon!

These were made with a whole wheat mix! Quite tasty for being a wheat pancake! :)

To relax, we spent several hours shopping at the outlets, walking on the beach, and ‘sleeping’ on the beach. There is no better way to spend a lazy Sunday! After a huge deli sandwich lunch, I slept on the sofa for a few hours too. :D

My sister requested we pick crabs for dinner, so we did! We had a couple dozen fresh steamed crabs, corn on the cob, hush puppies, and steamed shrimp. I had it all but the shrimp.

These were absolutely wonderful. It’s been a good two summers now since I’ve had blue crabs! These were perfectly seasoned with an Old Bay seasoning. Nice sweet crabs. These guys were only mediums, but were still GREAT! A wonderful treat. FYI- Blue crabs are THE BEST crabs you can get. Dungeness, bleh. Stone, bleh. I am a sucker for the snow crab legs…but nothing can beat the blue crab!!!

Today!!! I’ve gone for a nice little run so far. I ran down the beach and then up to the boardwalk in Rehoboth, around Silver Lake and back home. I made some breakfast and headed here for the internet. My friend Shelly will be here in a few hours so I have to get the rest of my work done before she gets here. Love being here!!!

I had half of this sandwich and all the watermelon. YUMMMMMMMMMM.

Waking up at 4 am to go to the airport is never fun. It is especially difficult when you haven’t had any coffee!! After dropping Kevin off at the airport I had to made a drive all the way up to Greeley for work today. I almost fell asleep like 10 times driving there! So dangerous! As I was driving, I was searching for a small commercial area that would sell coffee. I knew I was addicted as I was slightly crazy driving around trying to spot signs of the a nice hot cup. Finally there was a Starbucks sign!! After searching for several miles (I was already late) I gave up and went into a gas station for a cup. Clearly a 14 oz hot coffee wasn’t going to be enough so I grabbed a cold Frapuccino Starbucks drink from the cold section and literally chugged the bottle!

Sick, I know. Also on the ride, I had a Special K protein bar, an apple, and a plum. Mid morning I had my first lunch of a PBJ on a sandwich thin. Yes, I was craving coffee already, but I held back.

My second lunch was a massive salad!

Honestly, I had a second bowl of this with dinner along with a ton of tuna salad and a bowl of carrot ginger soup. I was so starved I ate it all before taking any pics. You can blame Brooke for the insane hunger. She took me to a Bar Method class tonight. It was amazing! Extremely hard and it completely fatigued my muscles to the point of shaking. After you workout a muscle, you stretch it out. Lessons learned today: need to lift more or tone more and need to stretch more (and a lesson revisited- there is a thing as too much spandex!!)  We ran into whole foods, grabbed dinners, and raced home to inhale. :)

I’ve stuffed myself silly and about to start doing some more stinky work while sipping some tea. It’s a berry zinger by Celestial Seasonings. We still have tons of boxes.

Oh yea, I made a bowl of tabouleh again today. This was a new mix (pretty standard) and I added 1 large chopped tomato to it along w/ some olive oil. How can you resist eating something just after you’ve made it?! I certainly can’t. Um, my other confession is that I made an iced coffee this afternoon and had it with 3 squares of chocolate w/ almonds and sea salt. :D

A Healthy Start

Kodiak Cakes were on the menu for breakfast today! Yesterday, Joel found this box at the grocery store and I was soo excited to try them. I’ve heard many good things in the blog world about this mix so I had to make them right away! The mix is whole wheat, oat and honey. I had about 1/3 cup of the mix which made two pancakes at 130 cals, 4 grams fiber, and 7 grams of protein. I covered mine in Justin’s peanut butter and dipped them in blueberry syrup.

1 cup mix + 1 cup water + extra cinnamon!

Kevin’s had blueberry pancakes with blueberry syrup.

I would say 2/3 of these blueberries got added to the 2/3 of batter Kev got. He says that pancake batter is just a carrier for blueberries.

Lunch was leftover salad from last night with baby carrots added, an apple, a packet of Justin’s organic peanut butter, and when I got home a bowl of vanilla yogurt with granola and sliced almonds.

I’m about to get into some more work and have a cup of tea. Today’s tea choice is Celestial Seasoning’s Honey Lemon Ginseng Green Tea. Just read the box and found out their boxes are made with 100% recycled paper, the teas are 100% natural, and CS has been working to establish sustainable harvests and fair wages (for 30 years!!) soooooo I’m feeling extra good about my cup of tea this afternoon.

My legs and abs are burning today! The lunges, crunches, and plank really really tired me out! Early evening time, I went on a bike ride from my house all the way up to 9th St. which is really far! It was about an hour round trip. The hill was killer on the legs and the lungs. I need a bike of my own…borrowing one is great, but I need to get on that. Who lives in Boulder without a bike!?

Dinner was super boring- leftover spaghetti and garlic toast. During kickball I had a beerskie and maybe a mozz stick or two or three after…..  Um, so we won our game! We are officially the winners of the bottom half! Wooooo!!!!

A GWheat Day!

The beer brewing competition started at my house today at noon. It was team Adam + Kim vs Team Champions. Adam and Kim made a Belgium Wit and Kev and I made an American Wheat beer.

Yesterday we bought a brewing kit that included a million and a half things. We upgraded and got a huge 6.5 gallon carboy (glass container to ferment beer). This carboy is massive!

Our ingredients included:

  • 1.5 lbs wheat grain
  • 2- 3 lb bags of extract (sugars??)
  • 1 oz Hallertauer hops (4.7% acid)
  • English Ale Yeast (might have picked up the wrong one?!?!)
  • 1/2 oz dried orange peel

Cleaning and sanitation is extremely important when making beer. Everything that touches the beer must be washed and then sanitized. Kevin is filling up the carboy with bleachy water for it’s first cleaning.

The first step is to cook the grain in 1.5 gallons of 150 degree water for 45 minutes. To maintain temperatures, we wrapped them in towels. Next, we added the extract and hops and boiled them for 60 minutes.

Adam was crushing toasted coriander seeds for his Belgium Wit. At this stage the liquid is called wort.

The wort is quickly cooled to about 75 degrees. This is done by a copper coil that has cold water pumped through it. Cold water goes through one tube into the coils and then back out another tube as hot/warm water. Cold water must be run through till the water coming out has cooled. Stirring the pot helps move the hot liquids around to touch the cold coils.

Once the liquid has cooled, it is transferred into the carboy. Kevin and Adam had to sanitize the insides, so they had a shake-off!

The yeast is added to the carboy and swirled around to mix. The orange peel was added for the last 15 minutes of the 60 minute boil. This is the remaining 1/2 oz.

Above is Adam and Kim’s beer. Theirs is a lot lighter than the wheat we made. Water is added to the mixture (is this still the wort?) and now you have the beginnings of beer!!!!

The carboys are wrapped in towels to keep light out and will rest in my basement for the next two weeks. My job tonight is to check the airlock to make sure CO2 is coming out and no oxygen is going in. Supposedly the little tube thing makes bubble noises.

The liquid in the airlock is sanitizing solution. :) Hopefully this turns out well! When we get back in a few weeks we will filter the beer, do a second fermentation, and then bottle the beers. The 2nd weekend in July we will have the tasting and judging. This was Team Champions first try at beer making. There is definitely tons of room for learning and improvement. What a fun project!!!!

To work off my pizza lunch, I went for a jog at Bobolink path. The path was cut off by the flooding Boulder has been having so I took a detour past one of the rec centers and back around to the beginning of the path. There I did a ton of walking lunges till my hamstrings felt like they were on fire! At this point, it was raining pretty hard so I headed home to do crunches and planks.

Here’s dinner! Barilla Plus thin spaghetti (a great w.wheat pasta) with ground turkey meat sauce, wheat garlic bread, and a huge salad. We were both starved when making dinner so in each of our salad bowls, we had a head of romaine lettuce chopped, hearts of palm, roasted red peppers, yellow bell peppers, cucumbers, red onion, and Italian dressing. We each also had 1 glass of white wine. I had about half and gave the rest to Kev.

Even after this huge, filling, satisfying dinner, we made a trip out to get some gelato. I ordered chocolate coconut mousse and Kev had mint stracciatella and chocolate mousse gelato.

Kevin and I at the Rockies game!

On Wed I worked forever at work and then had an open house style meeting a my house to find a new roommate.  Finding a new roommate is a lot harder than expected!!! Nicole is just irreplaceable. I knew I would be eating late so I asked Kev to roast a whole chicken for us and we would have it around 9 ish. To go with the chicken, we steamed two bags of baby spinach and sauteed onions in olive oil.

We shared a big bowl of these berries for dessert.

The past few days have been CRAZY stressful at work. Yesterday, my work was invited to attend a culinary boot camp for the day and I was excited to go. Turns out they really don’t like my office and were very very open about that. I was addressed not by my name, but by the agency I work for. We did have a great lunch (cooked by us) that was pretty darn good. I’m still glad we were invited and I learned a few things throughout the day, so it was a valuable and worthwhile experience.

There were about 15 different items prepared yesterday. My group was in charge of making herbed chicken breasts and as well as turkey meat (ground w/ tons of spices and onions and celery).

My plate: salad w/ roasted cauliflower, snap peas, carrots; steamed veggies (sesame oil, garlic and fresh ginger); herbed chicken breast, and mac and cheese that was made with roasted butternut squash.

Today is my flex day! I am off of work (did check emails and voicemails…just can’t help myself!) However, I had a great morning so far and hit the gym. My workout was 60 minutes on the elliptical trainer while watching Food Network! Having the TVs available while you workout is GREAT! Each machine has their own screen which is just about perfect.

Before leaving, I grabbed an iced Americano coffee to go. Right now I’m having my coffee, catching up on emails and blogs, and then heading over to Kevin’s to watch some World Cup!! Started today if you were curious. :) I also hope to get to a camera shop today and get a new toy!!


First 10′er

This week starts the beginning of the 4- 10 hour day weeks! That means, I get every Friday off for two months! My new hours at work are going to be 7:45-6:15. Unfortunately, this cuts into kickball and soccer time a few times, but having an extra full day off per week will be well worth it. Today, I made myself a cup of FP DD and a bowl of cereal for breakfast. After the first bowl, I had a bit more to use up the extra milk.

Lunch was leftover margarita pizza, Horizon’s vanilla yogurt w/ blueberries and strawberries, and a nectarine. For snacks I packed a ton of little things. This will be for the next week and a half or so. I made sure I had these snacks because I’ll be working longer hours and going straight to the gym which will keep me out of the house until a little after 8 PM.

I have not been to the gym in what seems like forever! It’s just been so nice out, I would rather enjoy the sun and run outside! Tonight, I did a pretty intense elliptical workout. I varied it up a lot and had the resistance high and the track low and I also did the track super high and the intensity pretty high.  The muscles that are worked when the track is super high are different than when it’s fairly level to the ground so it made it much easier for me to up the resistance when it was high.

This morning I read a Runner’s World magazine article on figuring out how fit you are. Two tests stood out in particular to me.

Test 1: Run ¼ mile (400 M on the track).

<60 seconds= Great

60-70 seconds = Good

>71 seconds = Fair

Test 2: Run for 30 minutes

>4.9 miles = Great

= Good

3.9miles?? = Fair

This is super super fast! I’m only fair in these categories for sure! Kev and I also did the other tests last night which included joint mobility, flexibility, and balance. We did pretty well in those which made me feel a little bit better. A friend from home and I might do the running bits the day I go home! Speaking of, 9 more days till I get to see the family!!!

Back to dinner! Kev grilled up some steaks, steamed green beans, and made some sundried tomato and basil rice. We were starved and ate the steak and beans before the rice was done. This was def the best steak I’ve had in a long time!! I ate the majority of this big honking piece. I left the rest because I’ve def. had more than my fair share of red meat in the past two days.

Family Pizza Party!!

My planters are finally full! I went out and bought more soil and a few more planters today. They look pretty darn nice! The beans are being held up by posts now so they are a little more stable. There are actual little tomatoes growing and green beans growing! So fun to see them grow from seeds!

It was absolutely gorgeous out today and spent a lot of my afternoon reading magazines on the deck. It was glorious. Late this afternoon I had to go to indoor soccer. It was a million and a half degrees in the building!!! Great workout though! After, I hit up Sunflower Market to get food for the week plus ingredients for pizzas!

For a few greens, I had romaine lettuce, roasted red peppers, hearts of palm, and 1 chopped tomato. This was drizzled in Sunflower Market’s brand Italian dressing. It was really good!!

Margarita Pizza- wheat crust, sliced roma tomatoes, fresh mozzarella, basil, drizzled in olive oil, salt, and pepper. The next pizza was a crazy combo of ground beef, thinly sliced basil, caramelized onions, marinara sauce, fresh mozz, and fresh red pepper slices.

I had slices of each with crushed red pepper flakes and garlic. Brie also made burgers and I had one sans bun topped with everything humanly possible. Time to shower, read, and sleep!

I love making plans, such as what I’m going to do for dinner, what ill be doing on my vacations or a trip, whatever! Its just one of the horrible Type A characteristics I have! So, I had full plans to hit the gym tonight before having dinner w Kev, but ended up snacking at home, heading to his house, pigging out, and falling into a food coma! He tried to get me to go out w him (and other boys), but sleep was much more tempting. The past few nights have been sleepless so I was pretty exhausted! I need at least 6-7 hours every once in awhile 5 hrs several nights in a row just doesn’t cut it!!. All in all, plans for the gym and going out turned into eating extra and sleeping. Frustrating, but my body already thanks me.

You would think that getting a decent amount of sleep means no need for coffee, but, nope. I made a nice lil pot of French Press DD this morning!

All I had was a mini LaraBar. Work got crazy and thats what I had. :) This was Cashew Cookie.



Lunch was more of the same to be honest. Pasta w vodka sauce and another kiwi. The vodka sauce is delicious though! I also had most of a grilled cheese made w/ pepper jack. MMMMMM.

Bailey and I went for a quick jog this evening and the fruit above was my snack!

Tomorrow we might be doing a biking beer tour though Boulder which means lots of unnecessary calorie intake. I’m really really going to try and behave tonight so I can wake up tomorrow and hit the gym before the festivities start up.

13 days till home! And this time next week, I’ll be at the beach, Deweylicious style! Plans are already in the works- eating crabs, renting bikes, bay kayaking, shopping, running on the beach, hiting the boardwalk, good food (seafood to be exact), and real Dunkin Donuts coffee!!!


Angel Wings!

Here is my beautiful geode! It has angel wings!

Dinner last night was: coconut crusted tilapia; salad with ‘ants’ (blackberries), almonds, and feta cheese; wild rice; and corn on the cob. This was at Kevin’s house so there was the vegetable, the starch, and the meat. Always a ‘complete’ meal.

Lunch was a soup, nectarine, grapefruit, and a kiwi. Add a bowl of granola with milk for breakfast to my lunch and a mini coconut cream Lara Bar. Those things are sooo high in calories for such a tiny bar! 12o cals for a bar about 1.5 inches. It was good though…prob my favorite flavor so far. Oh, and there was a Breggo tasting at Curious, so we stopped by and I grabbed one of those as well. UGH, once again, no self control.

Din Din tonight: roasted yams; salad with hearts of palm, roasted red peppers, olives, avocado, and tomato; and pasta with vodka sauce. Oh, and I pigged out on cheese and crackers before… The cheddar is soooo good, I couldn’t help myself!

I was only able to digest for an hour or two before soccer and having such a huge meal was not the best of ideas. I ran my butt off and it HURT!!!  A good workout though!

Memorial Day Weekend Part 2

Can you think of any better way to start your day than having a giant turkey leg and a chicken gyro?! Nope, I didn’t think so! These beauties were consumed at Day 2 of the Boulder Creek Fest. Sunday, my housemates and I walked around the festival for several hours, checking out all the Boulder craziness, eating tons of food, and buying random things.

One of the random things I bought was a geode! This bad boy came all the way from a city in Mexico. I picked out the size I wanted and Nicole was kind enough to barter him down! The geode goes into a guillotine type of contraption to be cracked open.

The inside is AWESOME! I’ll take a picture soon and post it. It has a cloudy white quarts inside with angel wings!

As if the breakfast we had in the morning wasn’t enough, I bought cheesecake on a stick as my lunch! Believe me, this felt great in my stomach during my soccer game later that afternoon. ICK.

Monday was the Bolder Boulder 10K run! This is when the craziest of the crazies come out and put on a good show! There were runners dressed up as gorillas, runners painted completely in gold, tons of bands playing, baby pools set up, and my favorite, a slip ‘n slide! We all went through, but I had a BUCKET of water poured on top of me! My feet were squishing for at least 2 more hours!  People also give out food such as chips, fruit, cupcakes, bacon, marshmallows, and beer. I snagged a chocolate cupcake, a handful of bacon ran across the finish line with them for a post-race snack!  (The race for us was more of a fun event, rather than a competitive event. We all finished at the same tie at around 10 min/mile.)

After we walked through the expo at the end of the race, we headed to Mountain Sun on Pearl St. to see the professional runners go by, and have a FREE BEER!  The professional runners start later in the morning and they were sooo impressive. The first place woman hit 23 minutes at just around mile 5! Amazing!

My lunch was a BLT, a cup of tomato/corn soup, and a blackberry wheat beer. YUM!

To continue with the Memorial Day weekend festivities, we hit up the Creek Fest to see the duck race and of course eat delicious food. I bought 1 duck this year and really thought that he could beat out the 100s of other duckies he was racing against. We all sat by the creek and waited for them to swim by. Unfortunately, he lost, but he’s still a winner to me. :)

After having a cocktail on the roof top of K’s China, we headed home for a BBQ feast! The dinner menu consisted of: BBQ ribs, BBQ chicken, asparagus with tons of garlic, grilled/steamed veggies, and rice made with black beans and coconut milk.  The rice had so much heat from cayenne pepper and sriracha, I chopped up a mango to put on top. Sweet, savory, and spicy.  The veggie packages consisted of 1 zucchini, 1 yellow summer squash, 1/2 onion, 4 carrots, 3 orange bell peppers, all coated in tons of seasonings. These were wrapped up in foil packages and put on the grill for 5-8 minutes. If you haven’t done this before, I strongly suggest this method of cooking!

The photos of the food only represent a fraction of what I actually ate this weekend. If I actually showed you the amount of food consumed, you would never take me seriously as a dietitian. I’ll just say, I think I ate my weight in food. :)
