Flat Out 5K

It’s been rainy here which is odd for Colorado. There was a break in the rain for a few hours so I took Bailey for a walk. Isn’t she cute?
Yesterday, as a last minute decision, we decided to join Adam and Kim for a quick 5k run. The Flat Out 5k, a qualifier race for the BolderBoulder. The boys were trying to beat 20 minutes and my goal was to just finish under 30! I put in the ear phones and jogged comfortably while the rest if them took off!
At the end they served us beer and French fries! What a great way to start the day!
2 weeks till BolderBoulder!
Up the Mountain and Back Country

Look familiar? It’s the flatirons! This is how I spent my Sunday afternoon this past weekend. After my indoor soccer game, I rushed home to change into hiking clothes. A few friends from the Ski Haus and I decided on the Royal Arch hike on the flatirons.
The total trip is only about 3.25 miles but it took us nearly 2 hours round trip. It was honestly like walking up 18 inch stairs for over an hour. My legs were KILLING because I did tons of lunges on Saturday after my run and I literally just finished my soccer game. The views were totally worth it though.
This was our path. At this stopping point, someone pointed out a sign that made me think I was in Jurassic Park!

It was super windy and getting very cold! On the way down just a minute after this picture was taken it started to flurry! We have seen snow come down in EVERY month here in Colorado. Crazy. We hurried down not only because it was cold, but we had plans to hit the Back Country Pizzeria.
Raspberry and Asparagus Salad

LARGE pizza (half meaty and half veggie)
My side, the veggie side, was loaded with tomatoes, olives, green peppers, onions, red peppers, and there was supposed to be spinach! The last time we had this pizza was in Nederland (their sister restaurant is here) for Frozen Dead Guy Days. The slice there was literally loaded with toppings. This was still OK but lacking in the spinach department.
Nonetheless, it was deliciously fantastic!
Home from the mountains: Part II

We had to get in at least one more weekend of snow before the end. it seems like yesterday that we were going to the Warren Miller film to get psyched for the skiing and now it’s almost over!
To help bring this season to a close, a very good friend of ours came for his second visit with his cousin.
This weekend had two firsts for me. I went to the very peak of the mountain off the Imperial chair at Breckenridge and I went up a T bar chair lift!
I think I’ve made some good steps this year improving my ski skills. 20 days on the mountain! Plus 3 snowshoeing adventures and a tubing day!
Powder Days
January 24, 2011 at 12:09 pm | Posted in Workouts | Leave a commentI learned a new term, Pow Pow Days. The past two weekends, we had some GREAT powder days on the mountains. This is a picture from Breckenridge last weekend.
Last weekend, I realized I have more in common with my little 7 year old cousin than I do with most adults. We read the same books (Harry Potter), like the same pillows (Big fluffy ones that double as stuffed animals), and ride on the same slopes. Kid zones are the absolute BEST!
Above is the Kid’s Adventure zone in Breckenridge. Below is the castle we found at Keystone. There was an ice throne, a slide, and a rope ladder to climb. So much fun!

Snowshoeing Adventure in the Winter Park area with Michelle. There was probably a good foot and a half of fresh powder down. We had to make our own tracks until we found some XC skier tracks to follow around a beaver dam. Snowshoeing is a great workout! I could definitely feel my legs the next day. I wish you could see my new snowshoes and boots! They were a Christmas present and are awesome!
Snow Tubing!!! We had the best day ever! I know my outfit is ridiculous, I didn’t have any of my snow clothes because we drove straight from Boulder to Winter Park without stopping in Dillon to get out stuff. We had to make do with what we had and that means a super fun hat, Cheshire cat style.
Busy Weekend
December 7, 2010 at 9:28 am | Posted in Lunch, Microbrew, Snack, Workouts | Leave a commentThis was probably one of the busiest weekends I’ve had in a long time! Sunday night I could barely keep my eyes open sitting straight up! Here is the recap:
Friday- Avery brewing held a vertical tasting of their Mephistopheles beer. This stuff is strong strong strong! The Urness’, Kev and I tasted 2008, 2009, and their newly tapped 2010. This beer is a Russian Imperial Stout. Delicious beer. Trust me. After the tasting we somehow convinced Adam to play coed soccer with us. Loads of fun, got to run the beer off, and I scored a goal!
Saturday – The alarm goes off at 5:30 am. Roll over and say forget skiing??? Nope, up and at ‘em and out the door by 6. I drove, Kev slept. I got sleepy so we stopped at good old Starbucks. The one measly taco I had the night before at Avery didn’t hold me over very well. We each had a sausage, egg, and cheese sandwich. Sooo gross. Sausage was super fatty and we both felt Ill. Back to their oatmeal for me. Their misto was good though.

Lunch and snacks galore but they were consumed mid-ski lift so there are no photos. We had trail mix, granola bars, gummy snacks, and split a Chicago dog. Celery salt is my new fave ingredient… again.
We all went to Pepi’s for a beer after. Well, the boys had beers and I had a ‘snuggler’… hot chocolate with peppermint schnapps. ![]()

Sunday was a half day at Keystone. It’s hard to ski anywhere right after a day at Vail. Still a good time and we were able to get several runs in before noon. We rushed home and I went straight to an indoor soccer game. My legs haven’t been this sore in a long time! A good feeling though. Then it was straight out to get our Christmas tree! Picking out a tree can be a long process. It’s critical to find the right type of tree, the right size tree, and one that is nice and full. We ended up with a small 6 foot Noble tree. He’s cute.
Real Simple Flatbread (Dinner #11)

If you ever want to try something different, this is it. Kev and I have made many many pizzas in the past two years and this is not like any other we’ve ever had. The yams we used were nice and sweet and went extremely well with the shallots which almost carmelized in the oven. I could have done without so much thyme and honestly, without the brie cheese. Now, don’t get me wrong. I love brie cheese. Just not on this flatbread.
Real Simple Sweet Potato and Brie Flatbread
Ingredients
- 1 pound frozen pizza dough, thawed
- cornmeal, for the baking sheet (we used polenta…haha, couldn’t find the cornmeal)
- 1 medium sweet potato, peeled, halved, and thinly sliced (we used a yam…basically the same??)
- 2 shallots, thinly sliced
- 8 sprigs fresh thyme (dried because there was NO fresh thyme at the store!)
- 4 tablespoons olive oil
- kosher salt and black pepper
- 4 ounces Brie, sliced
- 2 teaspoons red wine vinegar
- 4 cups mixed greens (about 3 ounces)
Directions
- Heat oven to 425° F. Shape the dough into a large oval and place on a cornmeal-dusted baking sheet.
- In a medium bowl, toss the sweet potato, shallots, thyme, 3 tablespoons of the oil, ½ teaspoon salt, and ¼ teaspoon pepper.
- Scatter the potato mixture over the dough and top with the Brie. Bake until golden brown and crisp, 20 to 25 minutes.
- Meanwhile, in a bowl, whisk together the vinegar, remaining tablespoon of oil, and ¼ teaspoon each salt and pepper.
- Toss the dressing with the greens. Serve with the flat bread.
Side salad
Mixed Greens- just a regular ol’ mesclun mix
Gala Apple- half sliced over two small salads
Vinaigrette -red wine vinegar, apricot preserves, olive oil, Italian seasonings, garlic, salt, pepper, whole grain mustard
In addition to this lovely meal, we also made pizza rolls. We had some extra pizza dough crusts so we stuffed them with pepperoni and mozzarella cheese. Delish.
Someone on one of my soccer teams convinced me to go to a sports class with her at the gym. Every exercise was based on a different sport. The first half hour was all core work. I was worried that my abs wouldn’t be sore, but I have never been so wrong in my life! My arms and abs are killing me today! To loosen up a bit, I took Bailey on a 30 minute walk before my soccer game to see if that would help. Not so much. I’m off to bed….have to get a good night’s rest. Tomorrow is my first “book club” book discussion. Night!

Finally unpacked from my week away. Just had my lunch. A marbled rye bagel with veggie cream cheese and slices of cucumbers. Love the marbled rye! Hopefully this will help me stay full through my games today. I packed up a banana, an apple, and a baggie of baby carrots for snacks after soccer. First up is indoor, then outdoor, (snacks), then driving down to Broomfield for kitten ball. Kitten ball is like softball with a bigger softer ball and no gloves are needed.

Good morning!
Last night was just what I needed. Time to clean, do laundry, read mail, and run! This run was the best run I’ve had in a long time! I was a little worried about how my HUGE dinner would sit, but it was ok. Evening runs are always a nice change.
My lunch was packed last night- PB&J on wheat, baby carrots with roasted red pepper hummus and a veeerrry ripe nectarine. I also prepped my oatmeal last night. I pre-measured out the oats, brown sugar, and cinnamon into a bowl and diced a small golden delicious apple to add in this morning. I love being prepared when I wake up!
Something odd about the oats I bought. They really really need to be stirred well to get any kind of creamy consistency. The Quaker oats I usually buy are not as finicky and I will definitely be switching back as soon as these run ou. You live, you learn.
So this bowl is:
- 1/3 cup organic oats
- 2/3 cup H2O (no milk sadly)
- 1 big tsp organic brown sugar
- 1 tsp flax seeds
- A few dashes of Savory cinnamon
- 2/3 small golden delicious apple diced
- 1 Tbsp Adams organic PB
- Tiny dash of Savory PINK salt
Took a shortcut and made Starbucks Via this morning too! Made with the last tablespoon of skim organic milk and a bit of raw organic sugar.
Time for work. Hope to hit Avery and or Twisted Pine for happy hour tonight!
Scrambled Legs

Schedule:
- 5:00 AM- Alarm goes off
- 6:00 AM- Meet and load cars to head to Big Daddy Bagels.
- 7:30 AM- Arrive at the bottom of Mt. Evans. Take 2nd car to top of Mt. Evans. Start hiking to Mt. Bierstadt.
- 11:00 AM- Mt. Bierstadt, DONE.
- 11:30 AM- Panic because we have to cross over Sawtooth to get to Mt. Evans.
- 2:30 PM- Mt. Evans, DONE.
- 3:30 PM- Tommy Knocker Brewery for a bite of food.
- 7:00 PM- HOME!!! Collapse and fall asleep a few hours later.
It’s about 50 degrees out so it’s quite chilly!
When we read about these hikes, it says to scramble. Not hike, but scramble. Scrambling is sort of like climbing/hanging onto rocks for dear life.
Yup, we scrambled over these.
A kid was holding the sign saying ‘My First 14′er Mt. Bierstadt’ and was nice enough to share.
At the summit, we had lunch. I had an apple and lots of trail mix. This Monkey Business mix was dried cranberries, peanuts, chocolate pieces, and banana chips. A spin off the traditional, GORP (Good ‘ol raisins and peanuts).
This is the traverse over Sawtooth. Probably the scariest thing I have EVER done. I don’t have pictures of this part because I was fearing for my life.
Do you see a trail? I sure don’t. There are cairns that you have to follow (I thought they were just little rock castles until I found out those were the trail markers! Kevin re-named them ‘Kevins’).
I might have added a top rock to multiple Kevins.
I need hiking boots STAT.

Playing defense, I usually don’t have many opportunities to shoot, so I was pretty psyched. To celebrate the win, Kev and I went to Boulder Beer Company. Each of us had a Kinda Blue “light refreshing blueberry” Wheat beer. It could have used a lot more blueberry flavor though.
I was craving a burger all day long so that’s what I got. Well, I ordered a veggie burger, but it was just as good. It was made from barley, beans, rice, mozzarella, etc. YUM.
The coleslaw was surprisingly good. There were actually a ton of chopped carrots towards the bottom which were a great addition. Ok, time to clean up the room and get to bed early. I’ll be in a meeting ALL day long tomorrow!
