10 days of craziness!
June 7, 2011 at 4:29 pm | Posted in Uncategorized | Leave a commentWell, it’s really 10 days of working hard and playing hard.
Oatmeal with a sample size of Justin’s maple almond butter. Hands down, best nut butter ever!
The week turned not so healthy with lots of fun.
Euclid Hall’s delicious homemade pickles: spicy, hops, traditional bread and butter, and one I couldn’t figure out.
BolderBoulder 10K race!!
Film on the rocks @ Red Rocks amphitheater.
We also went go kart racing which was incredible. If it weren’t so hot in the racing suits, I would have pictures! Guf.
Invesco Field for a soccer game, Mexico vs New Zealand! awesome time!!!
This is Kevin’s little sister sampling Boulder Beer’s brews.
We also went off roading and I tried my hand at shooting clays. No animals, just sport.
And that’s my caramel apple I got in Estes Park when we couldn’t find an off roading path!! Delicious.
Now I’m back to normal eating and normal evening activities. Well, after a dinner and movie date with some girls tonight!
Home from the Mountains Part I
April 5, 2011 at 11:52 am | Posted in Uncategorized | Leave a commentI’m finally home from a week in Keystone, Colorado. My work hosted a conference at the beautiful Keystone Lodge and Spa/Conference Center. The theme for the conference was Nutrition Trends. For the first time ever, we also had a Bake Off competition for any participant to enter. Each entry had to be a healthy baked good. The conference went over extremely well and I’m already excited to start planning for next year. I even know what theme I want it to be!
For two nights we held optional activities for people to do. The first night was a movie night and we watched, “Two Angry Moms”. The discussion after was GREAT! If it weren’t so late, we could have stayed there for hours discussing the movie. The point of the movie was not to show our personal opinions, but to open up the floor for discussion. The other night, we went on a snowshoeing adventure through the Keystone Nordic Center.
1. Keystone used to be a HUGE mining town back in the day. The miners were searching for gold and silver. Many notorious miners came out of this town. They would gather up money and support from the town, build the front of a mine for show, and skip town with all the money! Those notorious miners are the names of the different runs on the mountain at the Keystone Resort! (Spring Dipper, The Frenchmen, Wild Irishman, etc.)
2. All pine needles come in bundles of 2-6 needles. The number will vary depending on the type of pine tree it is.
3 .There are lots of pine trees being killed by beetles here in Colorado. It’s actually not the beetle, but the holes in the trees will grow a fungus that will kill the trees.
4. Willow bushes have a similar chemical in them to aspirin. Back in the day, people used to chew on the branches as a natural pain killer.

Biking Adventure
March 24, 2011 at 6:48 am | Posted in Uncategorized | Leave a commentMy morning coffee yesterday was made at home French press style with none other than my fave, Dunkin Donuts original. My breakfast was lunch…. A pita stuffed with Swiss and ham and the carrots were eaten later. Thankfully I had an apple in the office too. Since I ate the sammy for breakfast I had to have lunch out. Grr. I need to stop doing that!
And an afternoon coffee from the bucks.
maybe I cut back on the coffee too.
After work….
First ride of the season! To get frozen yogurt of course. My roommate recommended this place and I love love love it! So my flavors of yogurt and tons if toppings, all self serve. Ripple is a must.
Day Off!
March 20, 2011 at 7:34 am | Posted in Uncategorized | Leave a commentI took Friday off to catch up with life. Things at work have been way too busy and stressful and I needed a day! I did do work all morning until lunch. keV and I went to BJ’s Pizza on Pearl st.
This lovely view was taken from Beaver Creek mountain! First time skier there and we had a great day! Def spring conditions which mean warmer temps and slushier snow, but still fun!
Last night was spent watching basketball and playing Wii. Now it's time to get changed and head back to the slopes!
Long Ski Weekend
February 22, 2011 at 6:56 am | Posted in Uncategorized | Leave a commentI’m at my ski haus for the holiday absolutely loving every minute. Our friend, Erica, was here celebrating her birthday weekend in the mountains and we skied our tails off!

Now I’m having lunch and unfortunately doing work. Not bad with the pretty view and hot fire.
Smiling Moose sammy- hippie chick! Wheat baguette, hummus, lettuce, tomato, avocado, red onion, a slice of cheddar, and cucumber.
Brewing a Winter Ale!
January 9, 2011 at 8:17 am | Posted in Uncategorized | Leave a commentYesterday we tried our luck at another home brewing beer. Kev and I made an Old Jubilation Ale clone recipe that our friend Tommy recommended to us while Adam and Kim made a porter. Ingredients were bought and then we started assembly around 3.
- 16 oz British Pale Ale malt
- 13 oz Special Roast malt
- 13 oz Victory malt
- 1.6 oz Crisp Chocolate malt
- 0.8 oz Black Patent malt
- 5 lb 2 oz light liquid malt extract
- 2 lb 14 oz light dried malt extract
- 3.2 oz turbinado sugar
- London ale yeast – one vial
- 2 oz Northern Brewers hops
- 2 tsp cinnamon
- 1/2 tsp yeast nutrient
Bring 2 gallons of water to a boil. In a separate pot, bring 1 gallon of water to 163 degrees and then steep all crushed grains for 45 minutes.
Add this “grain tea” to the boiling water. Squeeze out all the “tea” from the bag of grains to make sure you get all of the flavors out. Dissolve dried extract and turbinado sugar into the mixture. Boil for 60 minutes.
Add hops throughout and keep stirring! (@ 60 min, 30 min, and 0 min)
Do push ups on a bosu ball during the 60 min. boil. I just tried adding a picture of me doing a push up, but they were all super blurry. Guess I’m too fast at doing push ups! Ha, not so much.

15 minutes to go, add liquid extract and dissolve as completely as possible. Make sure that the extract doesn’t sit on the bottom of the pot because it will burn!
5 minutes till done, add cinnamon and yeast nutrient. Stir to make sure it is all incorporated.
Next, you have to cool down your almost beer and put it into the carboy which will be it’s home for the next few weeks. We use a copper wort chiller coil that sits in the pot and you run cold water through the coil to cool the mixture.
Check the optical gravity so you know how strong your beer is after it’s done.
Into the carboys…
Porter in the front and the winter ale in the back.
Who wants fresh produce??

Last week during the conference we went on a field trip from Fredericksburg, Va to Jessup, Md. We visited the produce market terminal. This is where most of the produce for the area is delivered to be sold and purchased is shipped from local areas in Maryland and Virginia to as far away as California, Washington state, and Florida. It is also where market prices are set. Our next stop was to a fresh cut facility. A person I met from Mississippi is going to send pictures from there to us. As soon as I get those pics I will share them!
Right now I am back in Colorado and just about to start unpacking from my trip.
Home Again!
September 26, 2010 at 1:55 pm | Posted in Uncategorized | Leave a commentI’m back at home again! Just had lunch and so glad I did! I just barely made it to the gate before I had to board. There was only enough time to grab some water and some wheat thin crackers. On the plane had a tomato juice and a bag of 100 cal Lorna Doone shortbread cookies. Not the balanced meal I was hoping for.
About to head out for a quick run around my favorite lake!!!!!

August 4, 2010 at 8:01 am | Posted in Uncategorized | Leave a commentI have been trying to fix the internet in my house for way too long! Our internet has been under 3 names in the past few weeks and each time it goes down! Super frustrating. There haven’t been posts this week due to the lack of internet and… I don’t have a way to upload pictures at work. Hope to have this problem fixed soon!
