Halvsies for two meals

Sometimes life gets so hectic that there’s only time to eat half of your meals! Wednesday was like that for me. I ended up grabbing both breakfast and lunch out from the same local cafe next to my office. I had half a breakfast burrito that was stuffed with roasted potatoes, eggs, and chilis. Lunch was a veggie sandwich that is in the picture above. Half the Sammy was consumed Wed. and the other half on Thursday.
Thursday I had more time to enjoy lunch. The first half was actually eaten while I was running around the office trying to get things done! With the extra time I finally got to dig into the greens which had a wonderful fresh and bright basil vinaigrette on it.
Cherries were eaten throughout the afternoon…
Calzone for dinner!!! Mine was stuffed with a ton of spinach, onions, and fresh mozzarella! I ate the whole thing so no leftovers here for a second meal!
One of the most delicious dinners! The crust was pizza dough that was not the beat for me but I like to think the pound of baby spinach inside helps up the nutrient content.

A travel day for work!
April 6, 2011 at 10:09 am | Posted in Lunch | Leave a commentIf you haven’t noticed, I travel a lit for work. I travel locally and I travel across the state to small, medium, and large towns. This job has allowed me to explore the beautiful state of Colorado and has taught me of the very diverse terrain the state has to offer.
Today was a later start than normal so I was able to make a quick breakfast at home.
Chobani Greek yogurt (plain) with granola and honey. Coffee was picked up from Vic’s. Love the compostable cup!
Finally, my lunch that was eaten on site in a conference room that I’m working in. Couscous with cucumber, tomato, red pepper, red onion, feta, fresh lemon juice, olive oil, and salt/pepper. Fruit for snacks.

March 25, 2011 at 4:05 pm | Posted in Lunch | Leave a commentDoes stress make you want to eat or does it make you not hungry at all? Stress makes me want to eat around the clock! Usually taking a walk or taking a minute to reorganize helps, but not recently! Here is my lunch… And my second lunch. I need to find other quick stress relievers for the office.
The tuna salad was made of: 1 can tuna, 1 stalk of celery, a small hunk of onion, 1 T light mayo, and a handful of pomegranate craisins. The craisins idea was stolen from Whole Foods. So good! Had the tuna with blue corn chips. The salad was after, which was good bc I needed some veggies! I ate most of it minus the falafel.

January 9, 2011 at 9:15 pm | Posted in Lunch | Leave a commentOk, so not the prettiest food. This is basmati rice with a modified dal. Friday, I went out for a salad and bought a side of dal as my “soup”. It was just OK but I thought it would be better mixed with a few more things. We woke up to snow today and we took a short walk to the store to buy a few things to eat. In the grocery bag was: frozen spinach, plain Chobani Greek yogurt, grapefruits, bananas, crackers, 1 small can of pineapple, kale, and celery. I added 1 cup of the frozen spinach to about 10 oz of dal. This was poured over basmati rice and topped with a healthy tablespoon of Greek yogurt for some tang.
The rest of the day was spent watching the Ravens beat the KC Chiefs, shoveling the driveway, making gingersnap cookies, eating leftover soup X 2, and playing Scrabble!
We didn’t keep score and we let a few words go by that probably shouldn’t have, but that’s ok. I think I had about 5 meals today and I’m super stuffed. Pretty much we ate lots of vegetables, beans, and legumes. Hopefully tomorrow’s food will be a bit more interesting.
A Stacked Lunch

Good Morning! I woke up at 5 this morning because I just couldn’t sleep. Stupid flu. I figured since I have to go back to work today (uggghh), that I would pack the same salad I had last night. Romaine, tomatoes, white navy beans, carrots, pepperoncini peppers, and olives. I poured the vinaigrette on the veggies so hopefully they wont’ get too soft. All the tupperware decided to hide this morning so I had to improvise a bit. The only thing this need is a big piece of crusty baguette. The navy beans provide some protein for the salad, the veggies speak for themselves, and the olives and the olive oil in the dressing provide some good healthy fats.
For b-fast I made some cinnamon raisin toast with peanut butter and sliced up a pear. Again, I thought the protein/fats from the peanut butter and the fiber from the pear would help keep me full. It’s just barely 6 am and I have to make it till around noon for lunch! We’ll see how that goes.
I just had one slice of the toast and half the pears and my stomach said NO MORE! The rumor is that the stomach bug only lasted 4 days for the person who I think I caught it from…so I have half a day left of this! So much for worrying if this will keep me full!
Time to get ready for work and drink some Tummy Mint tea.
Merry Christmas Eve!

I’m writing from Maryland again. I’m so excited to be home and take a break from work! Coming home should be super relaxing, but I always try and fit way too much into my schedule.
Yesterday, I got in a great shopping sesh with one of my best friends from home and then a few of us went out for a bit at a local EC bar. We also decided to play some of our favorite high school ‘games’. Oh, the good ol’ days.
One of the traditions we have here in the Sweeney household is that my dad and I (and whoever else) go out for Korean food for lunch. This probably started by trying to find something to entertain me when I was a little kid. I never liked to sit still and got very bored, very fast.
Here is what we had:

My favorite…fried pork and vegetable dumplings! Yaki Mandu.
And my main course was a california roll.
We spend Christmas Eve with my dad’s side of the family and then Christmas day with my mom’s side of the family. My mom signed us up to make sauerkraut and fruit salad for both dinners.
Fruit salad pictures taken by my little brother Michael who was kind enough to teach me a little about my camera. Thank you Michael for going to film school and learning about cameras.
We had beautiful long stem strawberries. As soon as i cut into them, I realized they were WHITE in the center all the way through! So disappointing.
Ok, so it’s hard to see, but my aunt made these cute little reindeer desserts with my two little cousins (and her grandchildren). I will definitely be making these next year for something!
It’s hard to see, but they are marshmallows with white chocolate pieces for eyes, a red nose, and pretzel antlers. Covered in chocolate and/or used chocolate as the “glue”. Genius.
I ate way too much food and need to rest up for tomorrow. Honestly can’t wait to give my parents their present!!!!

Busy Weekend
December 7, 2010 at 9:28 am | Posted in Lunch, Microbrew, Snack, Workouts | Leave a commentThis was probably one of the busiest weekends I’ve had in a long time! Sunday night I could barely keep my eyes open sitting straight up! Here is the recap:
Friday- Avery brewing held a vertical tasting of their Mephistopheles beer. This stuff is strong strong strong! The Urness’, Kev and I tasted 2008, 2009, and their newly tapped 2010. This beer is a Russian Imperial Stout. Delicious beer. Trust me. After the tasting we somehow convinced Adam to play coed soccer with us. Loads of fun, got to run the beer off, and I scored a goal!
Saturday – The alarm goes off at 5:30 am. Roll over and say forget skiing??? Nope, up and at ‘em and out the door by 6. I drove, Kev slept. I got sleepy so we stopped at good old Starbucks. The one measly taco I had the night before at Avery didn’t hold me over very well. We each had a sausage, egg, and cheese sandwich. Sooo gross. Sausage was super fatty and we both felt Ill. Back to their oatmeal for me. Their misto was good though.

Lunch and snacks galore but they were consumed mid-ski lift so there are no photos. We had trail mix, granola bars, gummy snacks, and split a Chicago dog. Celery salt is my new fave ingredient… again.
We all went to Pepi’s for a beer after. Well, the boys had beers and I had a ‘snuggler’… hot chocolate with peppermint schnapps. ![]()

Sunday was a half day at Keystone. It’s hard to ski anywhere right after a day at Vail. Still a good time and we were able to get several runs in before noon. We rushed home and I went straight to an indoor soccer game. My legs haven’t been this sore in a long time! A good feeling though. Then it was straight out to get our Christmas tree! Picking out a tree can be a long process. It’s critical to find the right type of tree, the right size tree, and one that is nice and full. We ended up with a small 6 foot Noble tree. He’s cute.
The Turkey Farm

I don’t know about you, but I am not a huge fan of flying. The take off was super bumpy and had my heart rate so high, I didn’t sleep a wink on the flight! So happy to be on the ground, safe and sound.
Breakfast was a muffin on the plane plus a few bags of snacks…..but they weren’t eaten.
My dad was waiting at the airport and we took off for the farm. The Maple Lawn farm in western Howard county. Gobble gobble, moo moo!
Sorry Mr. Cow, you were lunch. Pit beef sandwich with onions and BBQ sauce! Totally what I needed!
All out of energy, it’s time for a quick nap and then getting ready for tomorrow’s big meal! My dad did all of the shopping last week so there are only a few things left to buy.

Food Scrabble

I actually sat on my bed for 2 hours playing multiple games while watching Harry Potter. It was some of the best spent hours ever. After helping a friend move (and a side trip to Celestial Seasonings!!!) I was wiped out so I felt as if I had earned some down time.
Lunch today was similar to a Scrabble game. Take what you have, some good and some bad, and make a meal out of it. My thoughts drifted from quiche to corn casserole to just staring into the freezer clueless. My eye caught a bag of mixed veggies and thought, wow the only thing that is good for is fried rice. Ding ding ding! That’s what I decided on.
Assemble your ingredients.
Sautee up the onion in some canola oil.
Crack 2 eggs into the pan and scramble away.
Add cooked rice and defrosted mixed veggies to the pan.
Toss in some soy sauce, black pepper, and crushed red pepper flakes for some heat. Then eat!!!
Ingredients:
- 1.5 cups white rice
- 3 cups water
- 1/3 red onion
- 1 t canola oil
- 1.5 cups frozen mixed vegetables
- 2 eggs
- soy sauce, black pepper and red pepper flakes to taste
Directions:
1. Cook rice for about 20 minutes until nice and fluffy.
2. Chop onion and sautee over medium heat in canola oil.
3. Crack 2 eggs on the side of the pan and scramble in the pan.
4. Add defrosted mixed vegetables.
5. When the rice is done cooking, add to the pan and season to taste.
6. Mix it all up and eat!
Real Simple Dinner #10

This weekend, we checked into our new ski house! Kev and I drove up to the mountains and after taking a tour of the house, we had a lunch I had a packed. We split a leftover Snarf’s sub and had Boulder potato chips and grapes. Snarf’s is probably one of the BEST sub shops ever! If you ever come to Boulder, you need to hit up Snarfs.
Our dinner was another Real Simple magazine dinner: Salmon with potato salad.
The dressing for the potato salad started with chopped scallions added to the horseradish, white wine vinegar, olive oil, salt and pepper.
Small side salad: mixed greens, sliced almonds, more scallions, and a balsamic vinaigrette.
This meal was intense in flavor! The vinaigrette was very tangy and the horseradish and white wine vinegar from the potatoes was almost too much for me. It was still pretty tasty, but I would definitely make a few minor modifications for next time. I just can’t eat my salmon without a fresh lemon squeezed on top. It’s just one of those fresh flavor combos that can’t be beat. Next time.
Ingredients
- 1 pound new potatoes (about 10)
- kosher salt and black pepper
- 4 tablespoons olive oil
- 4 6-ounce skinless salmon fillets
- 2 tablespoons prepared horseradish
- 1 tablespoon white wine vinegar
- 2 scallions, sliced
- 1/2 small bunch watercress (we could not find any so we used parsley and added a salad)
Directions
- Place the potatoes in a medium saucepan. Add enough cold water to cover and bring to a boil.
- Add 1 teaspoon salt, reduce heat, and simmer until tender, 15 to 18 minutes. Drain and run under cold water to cool. Cut into quarters.
- Meanwhile, heat 1 tablespoon of the oil in a large nonstick skillet over medium-high heat.
- Season the salmon with ½ teaspoon salt and ¼ teaspoon pepper. Cook until opaque throughout, 4 to 5 minutes per side.
- In a large bowl, combine the horseradish, vinegar, scallions, remaining 3 tablespoons oil, ¼ teaspoon salt, and ¼ teaspoon pepper.
- Add the potatoes and watercress to the dressing and toss to combine. Serve the salad with the salmon.
