California!

Friday morning came around way too fast! After only 3.5 hours of sleep, I had to wake up and drive myself to the airport for an early flight. We took off at 7:25 am and I thankfully fell asleep for an hour or so. When I woke up I had an Einstein Bros. Breakfast on the plane- a wheat bagel w/ veggie cream cheese, an orange and a cup of hot organic green tea. My second breakfast happened an hour after that when I landed and my dad and I were waiting for our family friends to land from LA. I had a non-fat misto from the Bucks and a bite of my dad’s cranberry orange scone. Our day was spent walking around downtown San Francisco and enjoying the beautiful weather we were having. Our first stop was to the Ferry Pier Market. We tasted and then bought cheese from the Cowgirl creamery (a cave aged gruyere and Abbaye de Belloc, a sheep’s milk cheese, made with the same recipe monks used 300 years ago!!). One of the best shops sold ‘salted pig parts’ which I remember seeing on the Food Network awhile back!


Lunch was wonderful and very very filling. We ate outside by the water at a restaurant called The Slanted Door. We had appetizers of crispy spring rolls that we wrapped in lettuce leaves w fresh mint and rice noodles. The vegetarian roll was far far beter than the pork and shrimp roll. My entree was flank steak over rice noodles with roasted peanuts. Delish.

After several hours of strolling around downtown we headed to a grocery store called the Berekely Bowl West. Great produce and I really think they had every varietal of every fruit and vegetable known to man! A food lovers dream!

As if we hadn’t eaten enough at lunch, we made up a few plates of the goodies we bought at the market and grocery store- cheese, baguette, olives, sliced meats, and fresh California avocado.


Dinner was very special, we ate at Chez Panisse. My entree was a summer vegetable couscous. Dessert- coconut ice cream with fresh strawberries and lightly toasted coconut flakes. Fabulous food and even better company.

Breakfast the next morning- sustenance for wine country. As soon as I was finished, Ken handed me a piece of toast with a slice of tomato and a poached egg on top. :)

The last few days have gone by way too fast! I wish I had another week at home and at the beach!!!

Weekly Summary:

Last Monday, my friend and I ended up going to Dogfish Head Brewery in Rehoboth Beach for dinner. I had a bowl of the crab and corn chowder and I got their traditional plain pizza but it wasn’t the best and I had all of one bite.  I usually love strong cheeses, but these were a little much for me. Monday night was wild. Tuesday was spent napping and soaking in the sun on the beach until some family friends got into town! We had a tasty dinner at Cloud 9 in Rehoboth.

There was also a basket of calamari with a chili dipping sauce on the table. I don’t care for calamari so I left that picture out. I also had a crabcake to go along with my entree. Tooooo much food for sure!

Wed. morning I had a fruit smoothie and a cup of coffee. The weather was so hot and humid all the photos came out blurry! 95 degree weather + 10000% humidity is rough! The smoothie was made with tons of strawberries, blueberries, yogurt, ice and a bit of juice.

BLT sandwich minus the bacon. I had two of these… :) plus some more veggies. When there are good tomatoes around, nothing beats a good tomato sandwich!!

Wed. night my parents and family friends went out to dinner and my friend and I snacked on foods at North Beach. We tried to catch the sun setting but were a few min. late. Still, a beautiful view over the bay. Oh, I had a cheesy crab dip and Shell had sweet potato fries! Super healthy on this vacation!!! I was glad that I got in a few miles earlier in the day.

Thursday Shell and I went shopping! I bought lots of beachy things and lots of fun summer dresses. I went to lots of my favorite little shops and stocked up on things for the next year. I barely shop when in Colorado so I had to get it all in while at the beach. We pigged out on ice cream and pizza during our shopping spree.

Friday: The food below is creamed chipped beef. It’s a pretty disgusting mess, but on the shore, I had to have a plate. :) Later in the day, I had a HUGE Thanksgiving dinner style sub with turkey, cranberry sauce, and stuffing.

On this trip, I have had more ice cream cones than I have had in the past year, crab almost every single day at least once, tons of random bites of food here and there. I am really feelin’ the bulge now. :) We could not have picked a better week for the beach. We had great HOT and sunny weather! There were two massive thunder storms which helped cool things off, but it was still 85-90 out. We took tons of walks every day and I did squeeze in a few more runs along the beach. Can’t beat that.

To bring a little beach home, I bought Fisher’s Popcorn for my family and Kevin’s family as well as some Salt Water Taffy for the office. 

Today is my last full day back east! I’m off to Northern Virginia/DC this afternoon to visit some of my very best friends! Here is my brunch-ish meal that I had this morning. Tomato soup and berries. Totally random, but when I’m eating solo, I like random foods. So jealous that Kev is up in NY for a wedding and still has several more days at home. I’ve gotta live up the last few hours I do have here! Pool time now!

Memorial Day Weekend- Part 1!

Taj has the best Indian food buffet for under $10. Hands down. Friday afternoon a group of us went to Taj for lunch. I’m not 100% sure what everything is, but it was all delicious!

My first plate:

Carrots and cucumbers with dressing, saag (spinach dish), lentils to the far right, white basmati rice in the middle and the fried pocket of love was filled with curry flavored potato.

My second plate:

Starting with the broccoli and going clockwise- steamed broccoli, saffron? basmati rice, fried onions and zucchini, vegetable curry, honey chicken, and curry chicken. I had this with one piece of naan (flat bread). I ate ALL of both plates. :) I like to eat.

My vegetables and herbs have become massive! It was time to transplant them into containers with some new soil. I stopped by Home Depot for the goods.

I have no idea if this is what I should have bought, but this is what I got. It says vegetables and containers so I figured it was OK. Plus it’s organic!??! I was a little worried when I read, ‘Must use gloves’ when handling soil. Does that mean there are harsh chemicals? It doesn’t smell great…. regardless, I bought a pretty pair of purple gloves.

There are multiple little plants for each type of vegetable/herb. I only used a few of the vegetables so far. This is actually a good thing (we had a huge hail storm yesterday which killed everything I’m about to show you).

We keep Christmas lights up year round. Yup.

Saturday (Yesterday) was the beginning of CREEK FEST! There are hundreds of stands all over down town boulder showcasing their art work, jewelery, services (massage, rolfing, etc.), vendors selling delicious food, anything you can think of.  Nicole, Max, Kevin, Brooke, Joel, Chad, and  a few others spent several hours walking around, literally eating our way through the festival. It was glorious.

As if we hadn’t consumed enough food, we made rice bowls for dinner. We left downtown at just the right time because it started raining, then HAILING! The hood of my car how has little dings all over it and the paint is chipping. Sad. Also, all the plants I had outside were killed by the hail. The hail pieces were close a centimeter in diameter.

To top it off, my house flooded again! The things I bought to replace the things messed up in the last flood were ruined again.

Back to dinner. We marinated and grilled chicken breasts, made pockets of mixed veggies, and cooked off some brown rice.

The chicken marinade- soy sauce, sweet soy sauce, sriracha, garlic, rice wine vinegar, aaaand maybe something else. The veggies were steam grilled in a similar marinade but with red wine vinegar and fresh basil. This was absolutely perfect. I desperately needed veggies after I pigged out all day on festival food.

Carrots, red bell peppers, orange bell peppers, broccoli, and mushrooms = delicousness.

Oh, we also picked up our race packets and some free goodies! The T-shirt this year for Bolder Boulder is 10000x better than last years. :)

Ok, time to go back to Creek Fest for some more good eats!

I have off today!!!  As much as furlough days (unpaid days @ work) stink, I actually kind of like the day off! :) I have a four day weekend ahead of me and couldn’t be happier about it. This morning, instead of waking up at 5:45 and going to work, I got to sleep in, have a smoothie and cereal with Kevin, go for a run with Bailey, and now I’m relaxing/reading magazines/catching up on blogs. It’s also in the 80′s already and absolutely beautiful out.

The smoothie consisted of 1 bag of frozen blackberries, 1 container peach yogurt, splash of cranberry juice, and a scoop of sorbet. If only I could remove all the seeds from the berries my smoothies wouldn’t be so crunch! Something to work on…..

Going back to yesterday, I started off with a beautiful cup of French press Dunkin Donuts coffee.

My coffee was made with two heaping scoops of coffee grinds and almost boiling water. After the coffee sits for a few minutes, I add organic raw sugar and a good bit of 1% milk. I’m still working on Safeway’s O Organics and still loving it. :)

Friends, meet the BREGGO!

I stopped at Curious Coffee in Denver for another iced coffee and a vegetable Breggo (potato, eggs, fake cheese, spinach, mushrooms, and red peppers). These are usually fantastic, but this one was just OK. They used some kind of processed cheese which was disgusting and kind of made me sick. Lunch was a salad, an apple, and iced tea (not photographed).

Last night, to celebrate my “Friday” Kev and I met a few friends at Walnut Brewery for dinner, hit Jax Fish House for a drink, and then went to Conor O’Neill’s for another! For dinner, I had a few chicken wings, a FREE BEER, and mahi mahi fish tacos. I had about 1.5 of these and most of the rice and beans.

It’s just about time to plant my veggies and herbs into planters outside! I might try and get that done today too!

The Rockies game last night was a lot of fun! Kev and I split a blueberry push pop from Sprouts and had a huge container of watermellon on the drive down. We also packed a massive bag of peanuts to snack on as well. We each had a few beers and waaaayyy too many peanuts. He said you can never have too many…I beg to differ. ;)

What a busy day! I had to do a follow up review in the Denver area today and  had to book it to actually make it this morning! I was sooooo sleepy when I got up and was planning on making coffee but realized my to-go cup was still in my personal car (at a park-n-ride) and I still had the state boat. Impalas are huge!!! Sooo after my review and before the office I picked up an iced coffee with two pumps of SF vanilla and milk. And a breakfast sandwhich. Both were literally inhaled in the car!!! I was starved!

Yesterday I made some roasted veggies which weren’t eaten for dinner and were for my lunch but someone ate them!!!! They were missing when I opened the fridge this morning! Gggrrrrrrr!!!!!

I had no lunch food that was ready to go and since I was already late, I had to eat lunch out as well. I finally decided on Tokyo Joes- brown rice bowl with tons of veggies and yakitori sauce. The veggie mix included carrots, red peppers, snow peas, bean sprouts, bok choy, zucchini, and broccoli. Sooo good, but not nearly as filling as I had hoped. I ate a few slices of fresh mozzarella and roasted tomatoes with a vinaigrette, but an hour later, my stomach is already growling!


Dinner!!!!!

We marinated the pork in olive oil, honey, fresh lime juice, tons of garlic, salt and pepper. The tenderloins were browned in a pan and then finished in the oven. We served the pork over the rice pilaf that we mixed with sliced almonds, topped it with mango salsa, and fresh cilantro.

Kevin’s housemate planted flowers!!!

This evening, we had a car cleaning ‘party’ and I feel so much better now that it’s done! 30 min till I have to go to my indoor soccer game! These late games are hard! aaand there’s a tornado watch. The sun was shining 1.5 hrs ago when I took these photos…and now it’s cloudy and looks like death outside! Crazy Colorado weather.

Two Days Worth

Yesterday was a super busy day! I woke up and started getting ready for work as per usual, but decided to do a few sets of crunches, squats, calf raises and girl push ups. Maaaybe I will try regular push ups later this summer. So glad I got a bit in before work! Speaking of work, it was insane!! I had something due and we sent out the notification/announcement emails and I was slammed with lots of disappointed people. :( so sad and hard to deal with especially when I have no control over who is awarded grant money.

Anyways…I started the day off right with a cup of coffee DD stye from my French Press. Mmmmmm. I knew I had one more cup of instant oats at the office but wanted to supplement it with extra plain oats. Instant oatmeal that’s flavored is often too sweet for me. I bought a big bag of organic oats a few weeks back and keep them in the old Quaker oats container for easy access. The instant oats are 220 cals + about 75 from the plain oats…I don’t really count calories anymore but I was just thinking about it yesterday.

For lunch I packed a veggie sushi I bought from Whole Foods on Monday as well as some cherries! Sooo goood! For snacks I had the leftover pita chips, snap peas w vinaigrette, and an orange. Yup, cherries in a cherry bowl. :)

Due to the emotionally/mentally exhausting day, all I wanted to do was relax-ish. Kev and I hit Sprouts for the weekly groceries. In my bags: mango, nectarines, yams, cereal, a new kind of organic wheat bread, peanuts for next Tuesday’s baseball game, a 100% all natural pork tenderloin, yellow bell peppers, whole wheat linguini, two sauces, and strawberries. :)


I was starved by the time we left. As my “appetizer” I had a glass of champagne at Kevin’s house and we headed to Bombay Bistro in downtown Boulder. As a starter they bring you garlic naan with a tablespoon or so of chickpeas and onion relishy type of concoction and a pureed spinach sauce. The bread desperately needed a sprinkle of salt, but I LOVE salt on everything.

My entrees were a vegetable curry with basmati rice as well as saag with chickpeas and more basmati rice. Kev had a hot curry sea bass that was delicious!!

So, it’s not the prettiest, but it’s delicious and spicy and fantastic.

The saag and basmati rice was taken to be my lunch the nest day. :) I don’t know what changed, but I loce love love curries now. Before I thought they were gross and smelled like b.o. Hehehe.

As much as I would like to have a nice calm morning, it never seems to turn out that way. I ended up putting cereal into a bag and called it breakfast! UGH. I had my usual cup of coffee and the bag of cereal at the office around 8-9 this morning. Work has been extremely stressful so I took an early lunch and had my leftovers, an orange, and a cup of chicken noodle soup.

My soccer game tonight was at 7:40 so I had to have an earlier dinner so I would have time to digest. I had a nectarine, a few carrot sticks, a bowl of soup, and a bit of pasta.

I had one slice of this orange and gave the rest to Kev.

This is the whole wheat orzo that I bought from the farmers market a few weeks back. It turned out so-so. I’m not sure I would even call it good. It was jut edible. We had a mixture of olive oil, herbs and spices on the orzo. I think the pasta needed to be cooked in more water (it was a little gummy) and cooked longer? Ah well. I’ll try again.

Now this bar of chocolate was GREAT! They put a love poem in each one! ;) If the picture came out just a bit more clear I could have shared it with you. I had a few of these squares right before soccer. We got our butts kicked at soccer tonight. As we usually do. This team honestly doesn’t belong at the level we are playing at, but for some reason they let us stay! Play up to play better!

Race Day

Blueberry Pie!

The night before Kevin’s big exam, I made a blueberry pie for him.  It’s his absolute favorite so I decided to make it for him.  I used his family recipe and tried my best to make it as close to how he’s used to having it. I def made a few mistakes along the way, but it was a good first solo attempt.

Pie crust with 4 cups of blueberries covered in flour, sugar, and lemon juice. All baked for about 45-55 minutes.

That night for dinner, Kev made chicken with salsa, a Spanish rice, and brussels sprouts.

I had maybe half the chicken, extra rice, and extra brussels. :)

A pretty pitiful office breakfast. The oatmeal was just OK. I’m used to having the homemade kind and this doesn’t even come close!! In a pinch, it’ll do though. This was an insane week of work.  After being away for 3 days, coming back and having only 1.5 days in the office is waaay too much! There was a huge luncheon on Thursday so that took up half the working day. The night before, I did work till close to 10 PM so I made up for the lost time…

Weekend time!!

Saturday, we went to Reuben in Boulder. It’s a burger place we’ve been wanting to try. It’s pretty good! The fries were fantastic. We had garlic aioli sauce and curry ketchup with our fries. My burger was the ‘Mountain Biker’ a 100% all natural beef patty with arugula, swiss, and sliced avocado. On the side, a small caesar salad.

While downtown, we went to Savory. This is my favorite spice shop! They let you sample all the spices which is wonderful! I went in for a curry powder and ended up with a Himalyan pink salt, a medium curry powder, and graham masala spice. Hopefully I’ll get to play around with those this week!

Kev bought a steak rub, so naturally, we had steaks for dinner! As if we hadn’t had enough red meat and potatoes….

This blend is FANTASTIC! I strongly recommend you go and try this spice and or others at the store. I promise they will be great. Promise.

After dinner on Sat night, we headed down to Denver to pick up our race packets and then all the way up to Ft. Collins for Kevin’s cousin’s boyfriend’s graduation party. They are moving to Texas so we had to say goodbye and congratulations!!! :)

This morning was an early early morning! We ran the Colfax Marathon Relay! My coworker Sadie was nice enough to start up a team and got 2 others from my office to join in! Kevin volunteered (kind of) to do the last leg. I had the third leg, 7.4 miles! The first 4 miles were all uphill and were KILLER! I have never ever ever been so glad to go back down hill EVER! I handed off to Kev who ran close to 5 miles. He killed it! He ran 7:30 splits! So impressed!

We all got a delicious BBQ lunch at the race finish line, walked around and got lots of free products to try, and had a free beer! What a beautiful day today was! It was sunny and 65 degrees. We could not have asked for more perfect weather! So glad we got to run this race. Looks like I was the only one to lose her bibb….mine was purple :)

I just had my aunt, uncle, second cousin, first cousin and his family with two kiddies over for a BBQ dinner. Hope they can send me the pics and I’ll post them soon. What a great family filled weekend!!

Telluride!

Greetings from Telluride, Colorado! Today was spent driving down to Telluride and preparing for a nutrition education training we are doing tomorrow. I had a super productive morning- made French press coffee, folded laundry, and packed for my trip.

For the trip, I packed an apple and a baggie of sugar snap peas.  I had to drive down to the Denver Tech Center first to get a coworker (had the apple on the way down), but we stopped to get breakfast burritos by her house for the road. Mine was a HUGE veggie burrito with a squash medley, fresh tomato salsa, scrambled eggs, breakfast potatoes, and tons of cheddar. This thing probably weighted a good 2 lbs! I made a healthy dent in it. :)

Sorry for the 1/2 eaten burrito, but it was the only way to see in to the goods! Due to the size of these burritos, we weren’t really hungry for lunch so we stopped at a grocery store 4 hours or so into the trip to get coffee and some snacks. I picked up a KIND bar (almond cashew), a Greek yogurt, an orange, and a cheese stick. I had 1/2 the cheese stick and the KIND bar.

On the drive we listed to Harry Potter and the Chamber of Secrets. I love HP!!!! This helped pass the time in the car. At least it was a pretty drive! There was one area where we def want to stop by on the way home to get some pictures if possible.

7 hours later, we finally arrived in Telluride! We took a quick walk through town and headed to dinner.

Dinner was at Excelsior, an Italian restaurant.

We had tomato pesto olives and cornichon to start. It came on a platter with popovers and bread with whole cloves of garlic baked in! Unfortunately, we devoured these a little too quickly for a photo.

My entree was Chicken Carbonara with asparagus in a sage cream sauce. The chicken was “all natural” as per the menu which made me happy. It actually looks quite small in the photo, but it was a big bowl of pasta and extremely filling! Oh, and I had a glass of zinfandel. :)

Sorry for the blurry photos, there was very poor lighting in the restaurant!!! Hope you can still see how delicious these were! We took this homemade Tiramisu to go! We split ‘em while we finished up our work tonight. Ok, time to try and get some sleep.

Packed Weekend!

We started the weekend off right with a happy hour at Jax Fish House! The HH turned into dinner and a few more cocktails. I met up with my housemates, Kevin, and a few other friends. Kevin ordered the crab cake sandwich for his dinner. We’ve had this before and it’s pretty delicious! Not as good as any crab cake from Maryland, but the best crab  we’ve had out here in Colorado.

Usually, I try not to eat crab outside a 50 mile radius of the Chesapeake Bay, but I’ll make an exception for Jax.

I ordered a special type of trout- it was pink, just like salmon. It was GREAT! Below the fish is cavatapi pasta, asparagus, and morels (which I asked for them to take out..but a few got in…), all in an asiago broth. Oh, and it was topped with a spring pea pure.

Saturday was busy busy busy! We hit up a bagel spot for breakfast. I had attempted a smoothie at home, but it was disgusting! I could not get the consistency right, so I put it in the freezer and forgot about it. So, I had a marbled rye bagel (on a rye kick!) with vegetable cream cheese (had spring onions and radishes) with tomato and cucumber. MMM.

Kev and I went to a BBQ to celebrate our friend’s graduation! She had amazing food- guacamole, strawberries, black berries, a salad with roasted beets and goat cheese, and BURGERS! These were so so so good! Her fiance made them with ketchup, Worcestershire sauce, salt and pepper, and onions. Juciest burger ever! After, we ended up hanging out with some other friends and watched 4 movies till 4:30 am! Apollo 13, Slumdog Millionaire, Parnormal Activity (I hid through this movie and tried to sleep), and hmmm… one more, but I fell asleep on the floor for it. :)

4 great things for today:

1. I left my car on Pearl St. at 6 PM on Friday for the Jax HH…and NO tickets!  WEEEEE!

2. Scored a goal at indoor soccer today. Played 1 outdoor, 1 indoor plus 3/4 a second indoor game. Phew!

3. Renewed/signed up for my ski pass for next year, it’s going to be “Epic”!

4. Got to talk to my mom for Mother’s Day! :)

I ended up having 2 lunches today. The first was before the indoor soccer games and the second was right after. The first feeding was a tomato with the citrus balsamic, 3/4 an avocado w/ lime juice and cayenne, grilled asparagus, and corn chips to dip into the avoacodo.

(Olive oil, salt and pepper- grilled for about 8 min)

OK, I am officially beat. I have to finish up some laundry and get ready for my trip to Telluride tomorrow. This is my first time down to Telluride…I’ve heard nothing but good things so I’m excited to check it out!

Smoothie as promised! This baby was made with a ton of fresh strawberries, frozen blueberries, a huge scoop of Greek yogurt, some local honey, blueberrry pom juice, and ice. Totally hit the spot. I felt 100 x better after having this guy.

Look what has come up in our front yard!!

Brooke and I set out on a mini-Saturday adventure. Our first stop was the market. I bought a huge bag of spinach and we each got a bowl of dumplings. It started to rain a bit and we decided to get manicures and pedicures. The place we went just got new chairs and they were FANTASTIC! I could have stayed in one of the chairs for hours!

Our next stop was the 29th Street Mall. We went into the Apple store- A-M-A-Z-I-N-G! My new purple nano is sweeeet!

So, the Yankee Candle store happens to be going out of business.  They had a 75% off everything in the store sale! I kind of went a little crazy. They gave me a crate to carry my candles home in!

Tonight we went to Jianken Sushi Bar. Ben, the guy who made sushi for my birthday used to work there. This place was the best ever and I can’t wait to go back! Thank you again, Ben!

My green tea pot. I love love love these tea pots.

Rice with toasted sesame seeds and miso soup with seaweed and the silkiest tofu ever!

Poke trio platter

Starting at the left- salmon with lemon, garlic oil, FRIED CAPERS!!!!, and red onion

Center- octopus and other stuff. There were suction cups on those and not going in.

Right- tuna with hot chili oil, lemon, red onion, green onions, and I’m sure lots more ingredients I do not recognize.

Avocado roll and asparagus roll.

Pickled radish with Japanese mint and a veggie roll (asparagus, cucumber, daikon radish, daikon radish sprouts, avocado, and some kind of tofu omelet thing)

On the top- surf and surf (shrimp tempura and avocado topped with strips of seared tuna and more avocado). This is probably my favorite roll ever! I don’t even like shrimp and this was delicious! I had the ones topped mainly with avocado.

On the bottom- Spicy Tuna Diablo (spicy tuna and avocado topped with more tuna, jalapeno, sriracha sauce, and a tiny bit of avocado). YUM YUM YUM

and all together now…

Not photographed- Korean bbq style ribs with an asian slaw and shredded apple on top. These were so so so delicious! The most tender ribs I’ve had in a long time!

Ginger and wasabi! This stuff was stronger than the average wasabi! Phew!!

Nightingale- Absolute Pear and lychee juice and ???  Lime-sugared rim. This was my mini taster! The real one came in a martini glass. We all had sips of that. (Look at the newly painted nails!)

Veggie prep. I could have watched these guys prepare sushi all night. Their plates were gorgeous and everything tasted fresh and so delicious. Can’t wait to go back!

As if this wasn’t enough food, Kev and I made ‘Grasshoppers’. These were supposed to be green, but oh well. Peppermint, Kahlua, Vodka, and vanilla ice cream all blended together. This sucker is strong!
