Halvsies for two meals

Sometimes life gets so hectic that there’s only time to eat half of your meals! Wednesday was like that for me. I ended up grabbing both breakfast and lunch out from the same local cafe next to my office. I had half a breakfast burrito that was stuffed with roasted potatoes, eggs, and chilis. Lunch was a veggie sandwich that is in the picture above. Half the Sammy was consumed Wed. and the other half on Thursday.

Thursday I had more time to enjoy lunch. The first half was actually eaten while I was running around the office trying to get things done! With the extra time I finally got to dig into the greens which had a wonderful fresh and bright basil vinaigrette on it.

Calzone for dinner!!! Mine was stuffed with a ton of spinach, onions, and fresh mozzarella! I ate the whole thing so no leftovers here for a second meal!

One of the most delicious dinners! The crust was pizza dough that was not the beat for me but I like to think the pound of baby spinach inside helps up the nutrient content. :)

Vegas Baby! All the casinos were decked out in their Chinese New Year decorations. The year of the rabbit.


LAVO’s risotto. The absolute best risotto I’ve ever had in my entire life. This had carrots, parsnips, and celery mixed in with the risotto and the whole thing was topped with braised short ribs. I have no idea what the shredded crispy things on top were. My guess is that they were made from a sweet potato. So delicious, it was so hard to not stuff myself silly. YUM. If you haven’t gotten the picture here, this was one of the top dinners I’ve ever had. Ever.

Bond Bar in the Cosmopolitan Casino- tequiiilllaaa!  The picture won’t rotate, but this about sums up how I was seeing after this!

Is this not love? Roasted beet salad- golden beets, red beets, candy beets (the pink ones), candied walnuts, blue cheese, and topped with ….something delicious!

So what do you do after one of the most delicious meals? Hit the Chandelier Bar in the Cosmo! Cocktail time!

250 M crystals to make up this bar. Gorgeous! I could live here. There are multiple levels to this bar. Each floor has their specialty cocktails and beers even though they are all the same bar! I tried uploading a picture of one of the favorite drinks of the weekend, a lemon verbena cocktail. They provided you with the little flower bud to eat before. It makes your mouth numb and it tastes salty! (Not my fave, but definitely an experience to be had.)

Cocktails! My drink is on the far right. A double water on the rocks. :) I did have sips of all of them though.

Next stop was in the Monte Carlo….the Cupcakery! I had a Boston Creme that I ate before everyone else even opened up their boxes…and a pink vanilla cupcake.

The following Sunday was Superbowl. It was not one of my best eating days. Oh well. That night we flew back to Colorado and I drove straight to a coworker’s house to sleep there. We had an extremely early morning on Monday and had to drive to Trinidad, Colorado for a few days. From the Palazzo in Vegas to an Inn in Trinidad. :)

Greek yogurt with frozen berries on top. They were thawed in the microwave for about 30 seconds and then sweetened with about 1/4 tsp honey. That was all that was left! In the cup below is my new fave drink…an Americano.

When we got back, I had to drive back down to Simla, Colorado for another day trip. My car had a good 500 miles put on it in a few days. The very next day was a Friday and we were off to the mountains again. PHEW! One awesome thing about the weekend was that I went down a double black diamond! This time, I made it with only one slip up. Right after that run, I ended up having a really bad fall and think I got a concussion. Not fun. I got sick a few hours later and had to go home early during a dinner. :(  Thankfully I’ve been working locally this week and have had time to breathe. 2 more days till we go back to the mountains for a long weekend and a few more days out of town for work.

 

The Turkey Farm

I’m finally at home home after a very long morning. A 3 AM wake up call is never fun. I don’t know about you, but I am not a huge fan of flying. The take off was super bumpy and had my heart rate so high, I didn’t sleep a wink on the flight! So happy to be on the ground, safe and sound.

Breakfast was a muffin on the plane plus a few bags of snacks…..but they weren’t eaten.

My dad was waiting at the airport and we took off for the farm. The Maple Lawn farm in western Howard county. Gobble gobble, moo moo!

Sorry Mr. Cow, you were lunch. Pit beef sandwich with onions and BBQ sauce! Totally what I needed!

All out of energy, it’s time for a quick nap and then getting ready for tomorrow’s big meal! My dad did all of the shopping last week so there are only a few things left to buy.

Schedule for today:

5:33 am- wake up call at the hotel
7:15 am- board the bus for the conference
7:30 am -5:30 pm- conference stuff
5:45 pm – attempt to drive home
6:00 pm- get a flat tire on 95!!!!!!
7:15 pm- was supposed to arrive at home for dinner with friends and family
8:30 pm- finally get home after having the car towed, buying a new tire from ????? And having your drivers license taken till you can find an ATM for cash in the middle of nowhere Virginia……splinter from running through a ?field of tall grass????

Dinner was picking crabs and having a delicious cocktail to wind down. Gotta love the Ellicott City Crab Shanty!

Conference Time

Hello from Fredericksburg, Virginia!

Before leaving I had lunch with my dad. I made us plates of sliced tomatoes from the local stand, organic baby carrots and a bowl of cottage cheese with fruit cocktail of some sort. :) for some reason there are two pictures that are the same and I’m not sure how to get rid of them! I’m on my new iPad toy and using the WordPress app and I have a lot to learn! I also do not know how to edit photos yet so Please bear with me here!

Dinner was at Firebirds, a steakhouse that had several Coloracdo named dishes! I chose the spinach salad and a loaded baked potato. I used some of each of the toppings- sour cream, cheddar, scallions, and bacon! YUM! The spinach salad came out a bit differently than I had expected. It was chopped with tomatoes, bacon, and sauteed mushrooms and tossed in balsamic vinaigrette with hard boiled egg slices on the side. A great salad! Aaannnddd it took a lot of me to say no to the bread basket, buuuuutttt somehow I managed.

The past week or so I’ve been struggling with trying to balance all of my work, team sports, maintaining my house ( my part at least), and working out….or lack there of. That’s probably one of the reasons I ended up getting sick! Too little sleep and exercise and too much of everything else!

To try and combat my lack of time management I made sure to get in a long walk around my favorite lake at home with a much needed social update with one of my best friends. Today I did lunges, squats, push ups and crunches as soon as I got to the hotel before the conference started and hit the gym for a bit of card after dinner. Hope the rest of the week goes as well.

Time to get some reading in. Night~

Vegas Baby!

Soooo last Friday around 2 PM tickets were booked for a trip to VEGAS! Our flight took off less than 24 hours later and we landed safely around lunch time. Last Labor Day we also took a trip to Vegas so we very excited at the opportunity to spend another long weekend there.

I’m going to share with you three most delicious breakfasts and the secret to doing it on the cheap.

1. Get your whole group together.
2. Everyone pull out a $20 bill.
3. Walk to the closest one zero roulette table.
4. Put all 20s on black.
5. Turn around and cross your fingers. (No peeking).
6. Check to see if you’ve won….
7. Give out high fives!!!
8. Enjoy the following:

Sunday at Hash House a Go Go.


Andy’s sage fried chicken benedict and Andy’s fried chicken with a maple reduction.

Everything is house made and delicious! The first is a masssssive plate of split buttermilk biscuits topped with griddle mashed potatoes, tender juicy freshly fried chicken, scrambled eggs, bacon, and for me, the chipotle cream sauce on the side. Worth the wait, trust me. Seriously, try their homemade strawberry preserves. It looks gross but tastes a-ma-zing.

Total bill on top of our winnings: 5 each!

Monday at Canaletto in the Venetian.

This was probably one of the most relaxing meals ever. After sleeping in super late we had our breakfast around lunch time. We ordered 3 plates to share. A cheese plate with a pear chutney to start.


Caprese salad (fabulous fresh mozzarella). Fresh bread and sesame buns with fruity olive oil and balsamic vinegar.

A thin crust pizza with smoked mozzarella, carmelized onions, roasted green peppers, sausage, and some type of ham. Out pizza was topped with tons of crushed red chilis. These bad boys packed a punch and were absolutely perfect on this pizza.


Total extra cost: $0!!!!

Tuesday at Bouchon.

Buttery croissant. THE best. If you don’t have time for a sit down breakfast stop at their bakery. It is worth it, trust me. Garlicy sauteed spinach, potatoes, scrambled eggs, toasted brioche, and fruit salad.

Ok so I’m not really trying to promote people to gamble for their breakfasts. We were extremely lucky! It was fun and we only did it twice. We paid in full for Bouchon (no time before…trust me, we ran to breakfast!).

Other great meals were had at Phil’s Italian Steak House in Treasure Island and the Buffet at the Wynn.

Happy Birthday Kevin!

Last night we celebrated Kevin’s birthday at the Boulder Chophouse and Tavern. We have been at least once before but it had been awhile so I decided to take him there. I decided not to blog on his birthday, so this is one day late ;)

We went all out and ordered an appetizer, salads, entrees, and dessert! First up, the crab cake appetizer. First let me tell you how much of a crab snob I can be. To be honest, I would NEVER ever have eaten any crab outside a certain mile radius of the beautiful Chesapeake Bay. Due to the fact that I have moved to the MIDDLE of the country and not even remotely close to any ocean, I decided to let that go and try to dabble in the world of long transport seafood. This crabcake was pretty good for being so far from the ocean. At first we were worried it wasn’t going to be blue crab, but sure enough it was. They served the breaded (hmmm) crab cake with a corn relish and some super spicey sauce. We usually have ours with spicy mustard or tartar sauce. Ah well.

Oh and there was fabulous jalapeno corn bread served with honey butter. This was fantastic. I need to make some cornbread thinking about it now….

Wine flowed. Entrees came out and they were HUGE! My steak was served Oscar style. Oscar style is with crab, asparagus, and béarnaise sauce. The crab was not the lump backfin you would be served on the east coast, but with a healthy portion of crab. The béarnaise was super thick and creamy and my steak was cooked perfectly! I’m not used to having steak cooked right! YUM!

My loaded baked potato was massive! I had all the toppings on the side- sour cream, butter, chives, and white cheddar.

Dessert was a freshly baked hot brownie topped with Guiness chocolate ice cream, Heath bars, chocolate sauce, and whipped cream. I had a few bites but at this point I could barely move! A great dessert to top the meal off. Happy Birthday!!!!

Breakfast this morning was a Fiber One blueberry muffin that Kev and I baked two days ago with a huge banana and lunch was leftovers from last night! Lastly, my fruit and peanut butter dinner tonight to compensate for the big dinner last night (didn’t even want anything else more).

Time for soccer and then a makeup kickball game! Go Wildcats and C.O!

Minnesota State Fair

I heard that the Minnesota State Fair is the 2nd largest state fair! Second only to Texas. Not too shabby! Adam and Kim had plans for the whole wedding party plus Ben and I to go to the state fair to take a few pre-wedding pictures. First stop was the MILK chugging station for the boys.

I can promise you this is the best deal of the fair. $1 will get you unlimited refills of milk. The dietitian in me asked what milk fat they had. They were serving 1% chocolate milk and 2% white milk. I ordered Kevin Chocolate. I might have had a few sips before he started!! Sssh!

Ok, the BEST building in the fair was the Miracle Birth Center. Is this little baby goat not the cutest thing ever!

Confession time. Here is the list of the things I had to eat. Popcorn chicken/chicken tenders split with Ben, a pickle on a stick, a thick slab of bacon on a stick drizzled with maple syrup, hot dish on a stick (meatballs alternating with tator tots dipped in corn dog batter and then you dip it in cream of mushroom soup), and a few sips of orange soda. Ohhh and beer on a stick!

Later in the evening we met up with Adam and Kim who were just about done taking wedding pictures. We found them sitting here on the Scrambler! A bunch of us got on the next time and then headed off to play games for a bit. We won a few stuffed animals that we ended up giving out to little kiddies we saw without any yet. :)

New State!

Hello from Minneapolis, Minnesota! We are here for Adam and Kim’s wedding this weekend. The rehearsal dinner is tonight so everyone can go to the state fair tomorrow. I can’t tell you how excited I am for a mid-west state fair. We changed our flight to take off a bit later in the morning. The past year I have taken more flights taking off at 6-7 am than I’d like to admit. It’s really rough having to wake up at 3 and 4 in the morning to drive to the airport.

This time we did it right and had a relaxing morning. Here is the breafkast.

In the bowl:

  • 1/3 cup organic oats
  • 1/3 cup organic skim milk
  • 1/3 cup water
  • 1 tsp organic brown sugar
  • 1/2 tsp Savory’s Cinnamon
  • 1 T Adam’s organic peanut butter

Coffee on the plane:

Flying is NOT my favorite thing to do. I get anxious and antsy whenever I have to fly. I would rather drive somewhere than have to take a plane to be honest. Over the past year, flying back and forth to Maryland and to go on vacations, I have earned a free flight with Southwest!  Wooo! With the free flight you also get drink coupons!  This morning, because we are on vacation, Kevin and I had Bloody Marys on the plane.

Instead of eating the peanut and pretzel snacks, we played poker with the guy next to us. I lost. Very quickly.

When we landed, we hit Old Chicago for lunch. I had a side salad a long with the Original 7 pizza. So excited to visit a new state!

Super healthy and definitely low cal. :)

Time to relax. Rehearsal dinner in a few hours!

Goaaaallllaaaaa!

I scored twice in my indoor soccer game! Wooooooooo! So excited! Playing defense, I usually don’t have many opportunities to shoot, so I was pretty psyched. To celebrate the win, Kev and I went to Boulder Beer Company. Each of us had a Kinda Blue “light refreshing blueberry” Wheat beer. It could have used a lot more blueberry flavor though.

I was craving a burger all day long so that’s what I got. Well, I ordered a veggie burger, but it was just as good. It was made from barley, beans, rice, mozzarella, etc. YUM.

The coleslaw was surprisingly good. There were actually a ton of chopped carrots towards the bottom which were a great addition. Ok, time to clean up the room and get to bed early. I’ll be in a meeting ALL day long tomorrow!
