Has work ever taken over your life!? I’ve been almost 100% consumed by work and the stress from work that I forgot to take care of me! Over the past week I’ve finally taken some control and got real life things done!
This month so far I’ve celebrated my birthday and celebrated my blog’s 1st birthday! My parents had this beautiful basket of goodies sent to my office:
The fruit totally saved me and the cookies and chocolate were GREAT! Over my birthday weekend, a bunch of friends and I went to ‘Frozen Dead Guy Days’. Kim was actually in a race and their group dressed up…GaGa style!
Lunch was delicious Back Country Pizza. I had slices of their garden veggie and bbq chicken. The veggie pizza was by far the best slice I’ve ever had. It was so fresh and so delicious, I wanted to eat a whole pie! Dessert was Left Hand’s Milk Stout. Yum!
The garden veggie pizza was covered with black olives, green peppers, red peppers, spinach, tomatoes, red onion, and mozzarella.
Lucky for Kev, I only made it half way through the bbq chicken piece!
Friday Fish Fry
Beer battered fish, kale, and steak fries. We made a beer batter out of the beer we made!! (A clone of Avery’s Old Jubilation), flour, paprika, garlic powder, salt, and black pepper. It was then rolled in panko bread crumbs and FRIED, yes FRIED in peanut oil. It was super flavorful and crispy! The fries were thick cut potatoes, skin on, and baked. The kale was cooked in a tiny tiny bit of oil, 1/4 a red onion, garlic, salt and pepper.
We actually had fish 3 times in one week. Here’s all the pics from the salmon night:
Garnet Yams- these guys were baked.
So I ended up making some basmati rice for the meal totally forgetting that I had the yams in the oven. It was a bit starchy/carb heavy, but the salad helped even things out a bit. I was so happy to be cooking in my own house that I also made an apple crispy out of the apples that were in the basket from my parents.
The base:
- 2 red delicious apples
- 2 granny smith apples
- tons of cinnamon
The topper:
- 1 T flour
- 1/4 cup oats
- 1 T butter
- more cinnamon
- 2 T brown sugar

LAVO’s risotto. The absolute best risotto I’ve ever had in my entire life. This had carrots, parsnips, and celery mixed in with the risotto and the whole thing was topped with braised short ribs. I have no idea what the shredded crispy things on top were. My guess is that they were made from a sweet potato. So delicious, it was so hard to not stuff myself silly. YUM. If you haven’t gotten the picture here, this was one of the top dinners I’ve ever had. Ever.
Bond Bar in the Cosmopolitan Casino- tequiiilllaaa! The picture won’t rotate, but this about sums up how I was seeing after this!
Is this not love? Roasted beet salad- golden beets, red beets, candy beets (the pink ones), candied walnuts, blue cheese, and topped with ….something delicious!
So what do you do after one of the most delicious meals? Hit the Chandelier Bar in the Cosmo! Cocktail time!
250 M crystals to make up this bar. Gorgeous! I could live here. There are multiple levels to this bar. Each floor has their specialty cocktails and beers even though they are all the same bar! I tried uploading a picture of one of the favorite drinks of the weekend, a lemon verbena cocktail. They provided you with the little flower bud to eat before. It makes your mouth numb and it tastes salty! (Not my fave, but definitely an experience to be had.)

I did have sips of all of them though.
Next stop was in the Monte Carlo….the Cupcakery! I had a Boston Creme that I ate before everyone else even opened up their boxes…and a pink vanilla cupcake.
The following Sunday was Superbowl. It was not one of my best eating days. Oh well. That night we flew back to Colorado and I drove straight to a coworker’s house to sleep there. We had an extremely early morning on Monday and had to drive to Trinidad, Colorado for a few days. From the Palazzo in Vegas to an Inn in Trinidad.
Greek yogurt with frozen berries on top. They were thawed in the microwave for about 30 seconds and then sweetened with about 1/4 tsp honey. That was all that was left! In the cup below is my new fave drink…an Americano.
When we got back, I had to drive back down to Simla, Colorado for another day trip. My car had a good 500 miles put on it in a few days. The very next day was a Friday and we were off to the mountains again. PHEW! One awesome thing about the weekend was that I went down a double black diamond! This time, I made it with only one slip up. Right after that run, I ended up having a really bad fall and think I got a concussion. Not fun. I got sick a few hours later and had to go home early during a dinner.
Thankfully I’ve been working locally this week and have had time to breathe. 2 more days till we go back to the mountains for a long weekend and a few more days out of town for work.
Weekend Dinners

I made a pit stop at Whole Foods to get some chicken soup! It blows my mind to think about how busy a WF can be on a FRIDAY night! The whole store was buzzing as if there was a huge party there later. Weird.
The soup was super thick so I had to water it down with a bit of broth. There was a ton of chicken in the soup and I ate everything but a bit of the chicken. Yum.
Saturday, I attempted a half day of skiing but ended up only making it a few hours before almost falling asleep on the lifts. Oh well, I tried. We left really early Sunday morning to head home. Kev made the next two dinners. Tacos and steak!
These were stuffed with seasoned beef, avocado, lettuce, tomato, tomato sauce, and cheddar cheese! I had two.
I got flowers!!! Thanks Kev! Definitely brightened up my day. This was the WRONG day to forget a scarf and gloves. My car was covered in ice this morning and it was snowing! AND I got to come home to have this for dinner! Spinach- one of my fave veggies. This was made with lots and lots of garlic and golden raisins. So so so good!
Steaks marinated and then grilled…wild rice…spinach. Perfect dinner. Made it through all the spinach and rice and saved half the steak for later.

I think I have the World’s Worst Immune System right now. Somehow I ended up sick AGAIN! Being out of town and being sick is definitely not a good time. This is my ‘get better soon’ dinner.
Chicken noodle soup, saltines, Shepherd’s Salad, and orange slices.
So happy to be home! Watching a movie and going to sleep early!

Kale was the star of tonight’s dinner. This bunch was steamed with onion salt and black pepper to match our pork chops. Just trim the thick stems off the kale, wash, and throw into the steamer. Kev had pre-made croissant roll dough in his fridge and brought that over to have with dinner. We decided to make 2 special dessert ones with brown sugar and cinnamon. Wonderful treat.
The pork chops were seasoned (inspired by the Clean Eating magazine again) with thyme, onion salt, and black pepper. These were supposed to have apples with cinnamon, honey, and pecans on the side. A worm decided he liked my apple too and so there was no apple.
Off to Fountain Fort Carson for the week.
Have my lunch packed with tuna, leftover croissant, an orange, and a trail mix (sliced almonds, whole roasted almonds, plain raisins, and yogurt covered raisins).
Magazine Meal
January 24, 2011 at 12:01 pm | Posted in Dessert, Dinner | Leave a commentMy Aunt Cass gave me a subscription to Clean Eating magazine for Christmas. This is the first dish I’ve tried from the magazine. Sorry for the poor quality photos, I was without my beautiful camera for a few days.
The summer squash were simply sauteed in a little bit of olive oil with red onion, salt, and pepper. Nothing more, nothing less.
This sirloin steak here was rubbed with chili powder, garlic, salt and pepper. After the steak has cooked on a sautee pan, remove the steaks. Into the pan to de-glaze…balsamic vinegar, water, Worcestershire sauce, 1 chopped tomato, red pepper flakes, salt, and black pepper. Bring the sauce to a boil and reduce. After slicing the sirloins, spoon the tomato sauce on over.
Um, my mouth was on FIRE! This is one hot dish. To cool things off, I had another bowl of candy cane ice cream and tons (I mean tons on the bottom too) of hot chocolate fudge. Thank you Edy’s Slow Churn for delicious (low fat) ice cream. Now only if I could exercise portion control….
Two Weeks

I had 3 presentations to give and was running around like a crazy woman! Last weekend, my little scion didn’t make it home from the mountains. The snow was coming down so fast and furious that by the time it was time to drive back, a 4 wheel drive car (with a massive lift) barely made it from Vail to Dillon. I ended up having to rent a car for a few days to drive myself around from presentation to presentation. Kev was super great and drove me to work one day, and made several dinners for me.
Kevin’s sandwich- buffalo chicken sandwiches, Bolder chips, and lots of celery.
To keep the energy up in the mornings, I made oatmeal several times. This mix is oats, water, chopped apple, sliced almonds, peanut butter, cinnamon, and brown sugar. MMMMMM.

Chicken caesar salads and swiss with pita chips. It was a super easy and quick dinner. To be totally honest, I had a bowl of candy cane ice cream topped with hot fudge sauce. They were eaten sooo fast that I didn’t get the chance to photo it.
To prevent myself from getting stuck in the mountains again, I drove home early. I’ve had the day to myself today and re-arranged my room, did laundry, made myself a massive salad, watched way too much Kardashian TV, and played a soccer game. Waiting on Kev to come back from the mountains so I can grab the pictures off his camera of some of the other good eats this past week and of the skiing we’ve done.
The past two weekends have included: many many moguls, lots of snow, skiing off a cliff!!!!, a kiddie castle, snow shoeing in Winter Park and snow tubing!!

My little brother bought me an awesome new camera lens. I’ve been playing around with it’s new capabilities and am loving it! Thank you x100 Michael!
Thursday night Kev and I found a great new Chinese food place. All the sauces are homemade and nothing is ever pre-made. Super tasty. We ordered the family dinners that came with soup and a plate of appetizers.
Wonton soup with the best best broth ever! Super rich and so good.
A crab and cream cheese filled fried pocket, veggie egg roll, and a chicken leg!
My entree was beef with broccoli and Kev ordered his usual, sesame chicken.
Friday Salad and Pizza
To be honest, Kev and I are still recovering from our colds and needed something quick and easy. We bought a frozen pizza and I made a salad. In the mix: spring mix, sliced almonds, pomegranate flavored crasins, and herbed goat cheese! This was dressed in a quick vinaigrette made with half red wine vinegar and half balsamic as the acid. Good, but I didn’t add enough olive oil.
So you’re probably wondering where the pizza is! I was taking so many pictures that my battery ran out and I had to charge it up! The pizza was loaded with the works; sausage, pepperoni, peppers, onions, and olives. Good thing we had a salad to balance out the super heavy pizza!
Breakfast Feast!
Maryland style potatoes, scrambled eggs, bacon!!, and hot tea. I’ve now gone a week without coffee. Kev really thinks there is something wrong with me. Ah well. It’s kind of nice waking up and not wondering where I’ll get my coffee from. Ha! Maybe I’ll break down and buy a good cup out somewhere this afternoon.
Now, we’re off to the beer store to buy ingredients to make a winter ale! Brew time!
4 Days and No Coffee!!
January 5, 2011 at 9:19 pm | Posted in Dinner | Leave a commentThis is an all time new high for me. I’ve gone 4 days now without coffee! Thanks to the stomach bug I had, I couldn’t drink coffee in fear of a more severe belly ache. I even tried to make myself have a cup this morning and I wasn’t interested at all. If you can believe it, we went to Starbucks today and I didn’t order a coffee drink! Kevin thinks there’s something seriously wrong with me! Ha!
We had a very squared dinner tonight. Pork chops, pearled cous cous and green beans. I’m also in the process of making chicken and bean soup but it’s going to take another 30 minutes.
The pork chops were sauteed with some sliced garlic, salt, pepper, and a Savory Spice Shop spice blend (Mt. Evans). The chops were then finished in the oven. I ate all the green beans, the cous cous and half a pork chop. The chops are super huge and way more than I wanted.
Time to drink more Tummy Tea and finish the soup. Night!
Sunny with a chance of…Spaghetti!

It’s National Spaghetti Day! That means I need to have spaghetti! We haven’t had whole grain pasta in a long time so it was time to bring that back into play. Also on tonight’s menu was a salad. Pretty much the same salad I had for lunch today as well as last night. (I’m completely burned out on this one for now).

- tomatoes
- carrot
- olives
- pepperoncini peppers
- feta cheese
- red wine vinaigrette
- deliciousness
As a side note, I’m so glad I woke up at 5 am this morning. It gave me lots of extra time to….scrape snow off my car this morning! It snowed while I was gone and I hadn’t taken the time to scrape the snow off. If you ever go out to scrape snow in the morning, give your self at least 10 minutes to defrost! AND wear snow boots! My heels this morning did not like the snow. I did however, enjoy the sunshine we had today.
