Cousin Brunch

Good Morning everyone! Well, really good afternoon. Happy New Year!

This post is way late, but very much  needed. A few days ago we hosted a brunch for my cousins. It’s rare that we are all in town at the same time so it’s nice to get together for at least a little bit. Everyone contributes somethings so it’s not too much work. My dad set the table for us while I made my morning cup of coffee.

This mug is from England. :) We have family friends who live over in the UK and many years ago, they sent this mug to us amongst a few others. My mom loves them for tea.

Anyways… I was assigned to make quiche for the cousins. I made 2 different pies. The first was sauteed onions, broccoli, cheddar cheese, and ham.

The second was sauteed scallions, spinach, and swiss.

After the veggies were cooked for a few minutes, they are added to the bottoms of pre-made pie crusts. (I had to take a little help here…)

Next,COVER with cheese!

Pour in eggs that are thoroughly whisked together with milk, salt, and pepper.

We convection baked our quiches at 350 degrees for about 40 minutes.

YUM.

(My iPad will not let me upload any other photos for some reason and my mom’s computer will not let me upload any pictures! I must be doing something wrong because these are all Apple/Mac products and all new within the past few months. I need to learn how to use these machines a bit better. For some reason WordPress will not stay open on my iPad either.Hopefully more soon.)

Merry Christmas!

As per usual, I was up bright and early ready to start the Christmas festivities. I always make breakfast for everyone, and this year I had to wait…and wait…and wait….for my sister and boyfriend to arrive. They had to drive a good ways from just north of DC to good ol’ Ellicott City. We finally sat down to eat around 11 am. I fixed bacon, sausage, scrambled eggs, fruit salad, croissants, and hot biscuits. Soon Ei’s boyfriend made a brave run to Starbucks and we had our morning coffee as well.

After breakfast and opening up presents, we headed over to my Aunt Mary Lou’s house for dinner.

She had a wonderful spread of food. I had one of my aunt’s delicious roast beef, sweet potato mash with pecans and mandarin oranges, fruit salad, a white and wild rice salad my mom makes, a meat ball, and a small scoop of potato salad. I had another small plate of the sweet potatoes, sauerkraut, and more roast beef a little later in the evening. Delicious delicious food! My two mini-cousins sang us a few songs, my aunt played Christmas carols on the piano and we all sang along, and I got to meet the newest addition to the family, Taylor. He could only stay for a few minutes, but it was great to meet the little guy.

“Friday” Rush

Today is my Friday! Only ONE more day of work then I get to go home for Christmas all the way through the New Year. J I’m definitely ready for a break again. Last night I had a dream about work stuff and was riding on a skateboard to get somewhere for work. Mind you, I have never been on a skateboard in my life before. Maybe I should try… This dream occurred during the time in which I should have been getting ready for work. I ended up sprinting around the house trying to get out the door and onto the bus!

This means, breakfast at work.

Coffee with tons of milk and one packet of sugar in the raw, Special K fruit crisps (blueberry flavor), and two clementines.

Powder Day!

Last weekend was a glorious snow filled weekend. We experienced the BEST powder day on Saturday at Vail. I’ve never actually skied in this much powder! (Thankfully we made it up to the mountains when we did. Route 70 was closed down for a few hours Friday night which really slowed us down. Around 9 PM it opened up again and we made it to the ski house. )

Kim woke up at 5:45 and made us all homemade bran muffins! Isn’t he beautiful?! I had two.

After a long long fantastic day of skiing, we drove to Steamboat Springs for another ski day. We were absolutely starved because we didn’t end up having lunch at Vail. The lunch stand on the mountain was out of HOT food so we were stuck eating trail mix and granola bars. Dinner was at Mahogany’s, a brewery.  I had a flight of several beers + a root beer taster and a huge huge burger! Sorry for the lack of pictures…. I’ll get them soon.

Steamboat Springs- a FOGGY day but a good skiing day!

Skiing through the trees was actually 10000X easier to do than down an open run. Our goggles were getting coated and we were pretty much blinded by the snow coming down.

I Heart Cereal

There’s something fantastic about cereal. Nice crunchy flakes and sweet cold milk. mmmmm. I rarely have a bowl of cereal in the morning because I’m usually running out the door and it’s not portable at all. Today, I decided to take a later bus to work (spent 2 hours on the bus coming home from work last night) and have breakfast at home today.

Special K and my to-go cup from Soon Ei filled with the usual Dunkin’ Donuts French press coffee.

Nest Egg

Have you ever thought about making a certain dish almost obsessively? I have. That’s normal right? Today I’m flying back to Colorado and it’s raining! Ugh, rain in a plane! Not my idea of a good time. Soooo I made a super fun breakfast to keep my mind occupied.

Shredded potatoes make the “nest” and in the center a bit of scrambled egg and a cube of cheddar!

 

Turkey Day Breakfast

Good Morning!

Today is going to be a fabulous day for eating. This year my family and I have decided to spend Thanksgiving Day together without extended family (for a number of reason). Next year, we will go back to having our whole extended family over, which I love doing. Normally because we have 20+ people over for T-Day, we never have the time or the space for breakfast food. This year, we are going all out and having bacon, eggs, hash browns, toast, and fruit for breakfast.

My plate: 1 scoop scrambled eggs, 1 scoop hash browns, 1 slice bacon, 1/2 cup grapes, 1/2 slice cantaloupe, 1 slice wheat toast! Oh, and my pumpkin spice coffee.

I have volunteered to make both breakfast AND dinner this year. Our “dinner” is served at an untraditional 1 PM, but thats how we like it. It also allows me to have 2 turkey dinners! After my family’s meal, I’ll head down to the Gemp household and have a small dinner/dessert with them.

I’m finally at home home after a very long morning. A 3 AM wake up call is never fun. I don’t know about you, but I am not a huge fan of flying. The take off was super bumpy and had my heart rate so high, I didn’t sleep a wink on the flight! So happy to be on the ground, safe and sound.

Breakfast was a muffin on the plane plus a few bags of snacks…..but they weren’t eaten.

My dad was waiting at the airport and we took off for the farm. The Maple Lawn farm in western Howard county. Gobble gobble, moo moo!

Sorry Mr. Cow, you were lunch. Pit beef sandwich with onions and BBQ sauce! Totally what I needed!

All out of energy, it’s time for a quick nap and then getting ready for tomorrow’s big meal! My dad did all of the shopping last week so there are only a few things left to buy.

Good Morning!

Well, it wasn’t such a good morning about 30 minutes ago. Kev and I were supposed to head up to the ski house and get a few runs in today at Keystone. They only have 4 runs open but I still wanted to get out there! He decided to go fishing instead, leaving me here with a bag packed full of ski clothes with nowhere to ski!

I grumpily went home and decided on some coffee to cheer me up. While the French Press was “brewing” I ended up finding an extra apple I brought home and decided on apple cinnamon oatmeal! By the time I was done eating, things were much much better.

  • 1/3 cup oats
  • 2/3 cup water
  • 1/2 tsp cinnamon and sugar
  • 1/2 gala apple chopped
  • Peanut Butter!!!!

Off to a moving party! (There’s rumors of homemade lasagna!)

Oatmeal vs CornDogs

Go RAVENS! Still a Baltimore fan even though I have moved to Colorado. For the game today, Kevin’s housemate went on a shopping spree of mini doughnuts, frozen dumplings, mini corn dogs, bagel bites, and mozzarella sticks. THANKFULLY I had already started making oatmeal for Kevin, Ben, and I. After those little mini corn dogs came out of the oven, I couldn’t help myself and had 2.5 of them.

For 3 Bowls:

  • 1 1/3 cup oats
  • 1 T brown sugar
  • 1 t cinnamon
  • 2 2/3 cups water
  • 1 Jonagold apple chopped (from the Farmer’s Market!)

Toppings:

  • Natural peanut butter (the almond butter was too cold to get out of the container to stir!)
  • Trail Mix (dried blueberries, craisins, golden raisins, and mixed nuts) chopped smaller
  • Extra cinnamon

Back to the Ravens game now!
