Weekend Wrap-Up

Green Food-Pearled couscous with basil and roasted brussels sprouts. These were the only things left at my house so I had a makeshift dinner. Not bad at all though!

To send summer off in the best of ways, I made a blueberry pie. I also made an apple pie with a crisp top to bring in the fall. I’m not sure what happened, but one day at work I got this baking idea and sure enough two pies (and a small apple crisp) came out that night. Served a la mode, clearly.

Apple Pie

  • 6 granny smith apples- peeled and sliced
  • 1/4 cup brown sugar
  • 1.5 T lemon juice
  • 2 tsp cinnamon
  • dash of nutmeg if you have it and like it
  • 1 pre-made crust (I need to learn how to  bake crust)
  • Crisp Topping- soft butter, brown sugar, cinnamon, oats

Bake at 350 for about 40 minutes or until bubbly and golden brown.

Dinner last night was also a tribute to summer- a BLT. So so so good!

This weekend I had a work conference and we spent an hour or so at the vendor booths for the food show. I love love love food shows! If you haven’t been to one, I highly recommend finding a job that sends you to them. There were 120 booths set up around a huge room and they have samples of all their products to try and take home. My loot bag was kindly donated to the Kevin household. :) One of the samples was a big mason jar of hot sauce. I requested roasted chicken wings with hot sauce for dinner. After running around in the heat for an outdoor soccer game, dinner was consumed way before it could be photographed. Trust me , the wings were good. Time to watch some more football!
